okra pickle (bhindi ka achaar /sabzi ka achar )

cooking time : 10 minutes 
 preparation time : 15 minutes
 serve: as required 














 ingredients :

okra                      200 grams  
white vinegar           1/3 cup 
lemon                                 2 chopped in cubes 
red chilly powder            1 tbsp
turmeric powder              1 tsp 
mustard seeds                  1 tbsp crushed 
Nigel seeds                     1 tbsp
cumin seeds                        2 tsp
fenugreek seeds                     2 tsp
lemon juice                         1 tbsp 
oil                                        1/2 cup 
asefetida                              pinch of 
salt                                   1 tsp 


 method :


  • wash okra nicely and place it on a clean kitchen towel  for 20 minutes when water dries cut the edges of okra . 
  • heat oil in a pan and deep fry okra for 2 to 3 minutes . close the flame . 
  • in a bowl take white vinegar salt , lemon juice , mustard seeds , fenugreek seeds , asefatida , cumin and Nigel seeds turmeric and red chilly powder mix well . 
  • add this into okra being fried . and mix well . 
  • place it over the flame and give it a gentle toss . cook until it get a boil . 
  • remove and allow it to cool down . place in jar and serve when ever required

vegetable pickle (sabzi ka achar )

cooking time : 2 minutes
preparation time : 20 minutes  
serve: 10 

ingredients :  

carrot              125 gram 
cauliflower         125 grams
French bean      125 grams
green peas         125 grams 
grated garlic        1 tsp
yellow  mustard seeds    2 tbsp
white cumin             1 tsp
coriander seeds           1 tsp crushed 
onion seeds                 1/4 tsp
fenugreek seeds       1/2 tsp
grated garlic              1 tsp

salt                           1 tsp
chilly flakes          3 tsp
oil                            4 cups 


method :
  • take cauliflower, French beans, and carrot , peel and cut it into small pieces . 
  • now blanch each vegetables separately , and drain the water . 
  • now place all the vegetable in a tray and allow all the water get totally evaporate . (i recommend you to place it below fan over night )
  • heat 1 cup mustard oil or any oil add onion seeds , white cumin , fenugreek seeds ,crushed garlic ,  crushed coriander seeds , chilly flakes and stir for a white . now close the flame . and add vegetables . mix well . 

  • put this in a airtight jar  and pour oil till all the vegetable get dip in oil . 
  • every day put this jar in sun light for 3 to 4 hours . then close it . next day again put it in sun light repeat it for 5 to 7 day . 
  • then use it . you can preserve  it in room temperature and can use it for 2 to 3 months .

fried spicy green chilly



preparation time :13 minutes
cooking time : 10 minutes







ingredients :

green chilly                                
whole coriander seeds                 2 tbsp
cumin seed                                   1 tbsp
mustard seed                                1 tsp
fennel seed                                    1 tsp
mango powder                               1/2 tsp
turmeric powder                            a pinch
salt 1 tsp ( to taste )
oil                                                2 tbsp






method :



  • make slit on green chilly length wise  and set aside remove stake .
  • now heat up pan and dry roast mustard seeds , coriander seeds, cumin seeds and fennel seed , remove in mixture jar .
  • add mango powder , salt , and grind and make fine powder .
  • now put this mixture into chilly (as shown in pic )
  • heat up 2 tbsp oil in a pan and fry this chilly .cover the pan and let it be cooked on very slow flame for 5 minutes .
  • remove in bowl . and use it when u have our Indian Daal chawal .
