madrasi kadhi



cooking time : 15 minutes

ingredients :


prom-fret                     2

grated fresh coconut          2 tbsp
lemon juice                 4 atbsp
salt to taste
vinegar                 1 tbsp
chopped ginger  garlic 1 tbsp
chopped tomato            300 grams
turmeric powder           1 tsp
poppy seeds                     1 tbsp
mustard seed                 1 tsp
curry leafs            1 tsp
onion paste 1 cup
coriander powder    1 tsp

red chilly powder       2 tsp
oil                             1/2 cup



 method :


  •  marinate fish with salt vinegar and 3 tbsp  for 20 minutes . 

  • in a blender jar take chopped tomato , grated coconut , chopped ginger garlic , poppy seeds and blend well . 

  • heat oil in a pan add curry leaf , red chilly powder , coriander powder , mustard seed, turmeric and chopped garlic . along with blended mixture . 
  • add fish and mix well . 
  • now add a cup of water . and cover and cook for 10 minutes . 
  • remove in a platter serve with rice .

how to prepare poori / soft puri

cooking time : 20 minutes
 preparation time : 15 minutes

ingredients :

refined flour            1 cup 
wheat flour               1 cup 
salt                           1/2 tsp 
clarified butter         1 tbsp
oil                     to deep fry 
water as required




 method :


  • in a bowl take refined flour , wheat flour , salt and water make dough . 

  • cover with plastic wrap and set aside for 30 minutes . 

  • after that heat enough oil in a deep bottom pan to deep fry . 
  • again knead dough and make small balls out of the dough . roll it on on kitchen roller make chapati shape .





how to make chole puri / chole poori

cooking time : 20 minutes
preparation time : 15 minutes
serve:5


ingredients :

chick pick kabuli                (500 g ) 2 cup soaked in water for 3 hours
turmeric powder               1 tsp
salt to taste
green chilly                  3
onion                          1 sliced
oil          5 tbsp
tomato                     250 grams chopped
cumin seed                1 tbsp
fenugreek leaf (kasoori methi)     1 tbsp
crushed red pepper                      1 tsp

for tempering: 

butter                         4 tbsp
garlic clove              4



method :
  • boil chick peas with salt , and turmeric powder and baking soda .make sure chick peas fully get cooked . 
  • in a pan heat 4 tbsp oil add onion and saute for a second add tomato , fenugreek seed, green chilly , crushed red pepper , salt , and lemon juice . 
  • add boiled chick peas and cover and cook for 5 minutes . 
  • remove in a bowl .
for tempering :
  • in a tempering pan heat butter add garlic clove and stir for few second .pour this over the cooked chana/chick peas . serve with poori as delicious healthy breakfast .

how to prepare masala milk powder at home


cooking time : 5 minutes
 preparation time : 15 minutes 
 serve: as required 












ingredients : 

almonds              200 grams
pistachio             200 grams
cashew                    200 grams
cardamom powder(green)         1 tsp 
nutmeg powder             1/2 tsp
turmeric powder              1 tsp
saffron strands             1/2 tsp
sugar                              7 tbsp


 method :

  • in a pan dry roasted pistachio , almond , cashew on very slow flame .
  • in a spoon take saffron strands and place it over heat for few seconds then put it in coffee grinder, along with nutmeg,turmeric powder , roasted nuts , sugar , peppercorns, cardamom powder . and run it make fine powder .  
  • put it in a bottle and use it in milk at bed time . 
to prepare masala milk :
  • in pan take 2 cups of milk when it starts boiling add masala powder and cook it for 1 minutes . 
  • pour in a cup and enjoy it at bed time

green BBQ chicken stick

cooking time : 10-15 minutes 
preparation time : 15 minutes
serve: 5


















ingredients :

chicken breast                     chopped in cubes   1/2 kg 
salt to taste 
garlic paste                   1 tbsp
ginger paste                    1 tsp
lemon juice                   2 tbsp
fresh coriander paste             3 tbsp
fresh mint leaf paste             2 tbsp 
spinach paste                         1 tbsp
cream                                         3 tbsp
red chilly powder                   1 tbsp
garam masala powder          1 tsp
oil                                   to grill 3 tbsp

to serve with

mint chutney       1 cup
lemon slice        few



 method :

  • in a bowl take chicken pieces along with lemon juice , chilly powder , garlic and ginger paste ,spinach paste , mint paste and coriander paste , cream , garam masala powder and salt .mix well and marinate it for 2 hours in fridge . 
  • place the chicken pieces on BBQ rod and place it on charcoal . keep moving after some time . 
  • serve with mint chutney and lemon slice .

paratha chicken roll

cooking time : 20 minutes

ingredients :

to make paratha :

flour/ refined flour              1 cup 
oil                                      1/2 cup 
salt                               1/2 tsp 


to make chicken stuffing :

chicken mince                       1 cup 
butter                              2 tbsp 
garlic paste                      1 tbsp 
lemon juice                       2 tbsp
cumin powder                    1/2 tsp 
green chilly paste               1 tsp 
curd                                     4 tbsp
salt to taste 
turmeric powder               1/2 tsp 
chaat masala                       1 tsp

to serve with :

chilly garlic sauce                2 to 3 tbsp 
chopped sliced cucumber          few 
sliced onion rings                    1 
cheese grated                       optional (1/2 cup)
mint leafs                           few











 method :

to prepare paratha :


  • in a bowl take flour add salt and 1 tsp oil mix well . add water and make fine dough . cover the dough with plastic wrap and set aside for 20 minutes . 
  • after that remove plastic wrap and again knead . make small balls out of the dough and roll it on kitchen roller . 
  • place each over hot pan and flip occasionally . put some oil on both side . remove in a platter set aside . 




to prepare stuffing :

  • in a bowl take curd , garlic paste , salt , turmeric powder , cumin powder , chilly paste . mix well set aside for 20 minutes . 
  • heat some butter at pan and piut the marinated chicken over it . cover and cook for 10 minutes or until water dries and chicken get fully done . close the flame . 
  • add mint leaf , chaat masala , cheese(optional),lemon juice . give it a toss . 

assembling :
  • on paratha put prepared chicken and chilly garlic sauce followed by onions, cucumber and fold and make roll . cut it with sharp knife . 
  • serve immediately .

how to make grilled chicken in barbecue sauce

cooking time : 20 minutes

ingredients :

skin less chicken                1/2 kg 
lemon juice                        1 tbsp
garlic paste               1 tbsp
paprika powder          1 tsp
red chilly powder          1 tsp
oyster sauce               1 tbsp
mustard paste            1 tsp
soya sauce              1 tbsp
white vinegar          2 tbsp
baking powder        1 tsp
salt to taste 
oil            4 tbsp

to prepare BBQ sauce 

mayonnaise            1/2 cup 
chicken powder          1 tbsp
grated garlic                1 tsp
white vinegar            1 tbsp
pepper powder             1 tsp
mustard paste                1 tsp
caster sugar                 1 tsp
soya sauce                    1 tsp
onion                        1 chopped 





 method :

  • marinate chicken 30 minutes with lemon juice , salt , garlic paste , red chilly powder , paprika , soya sauce , oyester sauce , white vinegar , baking powder . 
  • grill chicken pieces with 3 tbsp oil . set aside .





    to prepare bbq sauce :

  • take mayonnaise, caster sugar  , chicken powder , garlic paste chopped onion , soya sauce , pepper powder , mustard paste and white vinegar in a bowl and mix well .  
  • pour this sauce over grilled chicken . and give  it a gentle toss . serve immediately.


    i prefer to toss chopped onion in little oil then add it to sauce .

how to make chicken lateef at home

cooking time : 20 minutes 
 preparation time : 15 minutes
 serve: 5





 ingredients : 


chicken skin removed 10 pieces                1 kg 
lemon juice                                     4 tbsp
yogurt                                     1 cup 
tomato                              2 sliced
green chilly chopped            4
onion                              2 sliced 
potato                       1 peeled sliced 
coriander leaf                4 tbsp chopped 
garlic paste                     1 tbsp
whiter cumin powder        1 tsp
salt to taste 
white pepper powder           1 tsp 
black pepper powder            1 tsp 
salt to taste 
oil                                        1/2 cup 






 method :


  • in a bowl marinade chicken pieces with 1 tbsp white cumin powder , 1 tsp pepper white , 1 tbsp garlic paste mix well .

  • heat oil in a pan add and fry the chicken pieces until it changes color (this may take 4 to 5 minutes ). remove in a platter set aside . 

  • now in the same pan with left over oil place a layer of sliced tomato followed by onion slices and and potato slice. 


  • place chicken and sprinkle , salt , lemon juice , green coriander, pour yogurt  , black pepper , chopped green chilies and tightly cover the pan and cook for 5 minutes then on slow flame for 15 minutes .



  • remove in a platter and serve with plan rice , or with roti ( fulka /chapati). 

how to make kulfa falooda at home

cooking time : 20 minutes 
 preparation time : 15 minutes 
 serve: 5

















ingredients : 

full cream milk                     1 liter 
bread slice                   3 
kewra water               1 tsp
khoya                          200 grams
sugar                      6 tbsp
almonds . cashew chopped           1/2 cup 
cream                        1 cup 
saffron                few strands ( optional)

falooda sev ( prepared )                 2 cup 
roh afza syrup                      1 tbsp ( optional)


i already thought you how to prepare falooda sev but  again i m writing recipe for you people(readers of my blog). 



ingredients for falooda sev :

corn flour            1 cup 
kewra water          1 tsp
water                        2 cup 
any edible food color   pinch ( here i took yellow)
chilled water                2 cup 






 method :

  • in a sauce pan boil milk along with sugar . for 5 minutes . 
  • add bread slices , khoya ,saffron strands (if you have ), almonds , cashew , and other dry nuts you have .
  • cook for 10 minutes . 

  • add khoya and cook another 15 minutes on slow flame . 
  • in the end close the flame and add cream . allow it to get on room temperature and pour 80% of it in any mold and place it in freezer for 8 hours at least . and rest 20 % place it in fridge . (no need to freeze)

  • after that make the slices of kulfi . and pour the rest 20 % over it . put falooda sev over it along with chopped dry nuts , and rooh afza syrup . 
  • serve chilled .

  • in a sauce pan take corn flour add food color , 1 tsp kewra water , and 2 cup water stir it till corn flour get dissolve in water . 

  • place it over the flame and stir continuously for 5 to 7 minutes . when mixture starts thickening remove it from the flame . immediately pour it in falooda mold . 


  • place chilled water bowl in the bottom of mold . 
  • press gently . 

  • do not touch immediately allow it to get rest for at-least 5 minutes . (shown in picture

sweet rice with orange (zarda)

cooking time : 20 minutes
 preparation time : 15 minutes

ingredients :


basmati rice                   2 cups ( soaked in water for 30 minutes )
orange juice                   1 cups
sugar                              100 grams
clarified butter                   1/2 cup
khoya                       200 grams
cinnamon                   2 sticks
green cardamom           2
cloves                2
sugar             1 cup
orange zest        1 tbsp
dry fruits            1 cup
tooty fruity           4 tbsp (as you like )
yellow food color      pinch 






 method :


  • heat butter in a pan cardamom , cloves and stick cinnamon cook for a while and add rice . stir for 2 minutes .

  • add water and and cook till it get boil .
  • in another pan prepare sugar syrup . take cup of water add sugar and cook till it get light brown color .
  • now pour the prepared sugar syrup and orange juice, khoya  in the half done rice. stir . cover and cook .
  • when it get done add dry nuts pinch of yellow food color  , tooty fruity and orange zest .
  • give it a gentle toss and remove in a platter .
  • garnish it with silver cover and spread left over khoya , and dry nuts .

method :  
  • in a mixture jar take banana peeled , apple seed removed , sugar , strawberry , curd  and pineapple and run it . 
  • add vanilla essence , milk and ice cubes again run it . 
  • remove in a serving glasses and garnish with mint leave . serve chilled.

ingredients :

pineapple                      2 cups chopped 
apple                     1 chopped in small cubes seed removed 
banana                 1 chopped 
mango                   1 cup chopped 
black grapes /grapes             1 cup
condense milk                 1/2 tin 
milk                                 1 cup
cream                         1 cup
pineapple jelly                    1 cup 
mango jelly                      1 cup
sugar                                  2 tbsp
corn flour                1 tbsp


                     


method :  

  • chopped all the fruits and set aside . 
  • in a sauce pan take milk , sugar and add corn flour .stir till corn flour dissolve . place this on flame and continue stir till it get thicken . remove from flame set aside to get on normal temperature . 

  • after that add condense milk , cream and mix well . now add all fruits and jelly . .place this in fridge to get chilled .

  • remove in a serving glass and serve chilled . 

you can use any fruits like pomegranate , green grapes banana , according to your taste and preference , similarly you can use any jelly you like . its up to you .

grapes cocktail

grapes                             200 grams ( washed)
ice-cream soda                      2 cup
icing sugar                   4 tbsp
sugar syrup or sugar               4 tbsp 
ice cubes                          2 cups

method :  

  • take icing sugar in a platter and put 100 grams grapes ( with stem ) and coat it in a such a way that color of grapes get coat fully . 
  • in a blender jar take sugar syrup ,  and ice cubes with grapes and run it . 
  • remove in a sering glass and add icecream soda . 
  • garnish it with icing sugar coated grapes . serve  chilled

how to prepare falooda sev at home / blueberry falooda recipe

ingredients :

corn flour              1 cup
water                  2 cups
chilled water           10 cups
sev machine                    1


method :
  • in a pan take 1 cup corn flour and 2 cups of water and m,ix well until corn flour fully dissolve in water then immediately place it on flame . and continuously stir the mixture till it get Cristal like dough . the dough will be be sticky no worry . rub some oil in palm and roll it and put all in the sev machine . 
  • fit the plates like the shape and size ( thickness )  of you want for your falooda sev . ( shown in the pic )
  • now  take a big ball with too chilled water in it . 
  • now when you start making sev please remember it should be on that chilled water . 
  • your falooda sev is ready . 
  • enjoy it in falooda . 



to prepare blue berry falooda :



chilled milk              1 liter full cream 
rooh afza/ red syrup       2 tbsp
sugar                              3 tbsp
ice cream (vanilla )         6 to 7 scoop 
crushed ice                         1  cup 
falooda sev                    2 cup . 
blueberry cane              1 



  • in a mixture jar blend blueberry sugar  and blend well . 
  • take serving glass put some crushed ice in each glass , then put falooda sev followed by milk rooh afza, blueberry mixture , ice cream and again falooda sev , and serve immediately .

mutton / beef steak            3 
soya sauce                                   1/2 cup 
white vinegar                                    1 tbsp
pepper powder                                  1/2 tsp

ginger garlic paste                       1 tsp

for sauce :

ketchup              1/2 cup
soya sauce                       3 tbsp 
water                        3 tbsp

to serve with :

fries                    1 cup 
stir fried  cucumber               1
stir fried carrot ,              1 cup
stir fried tomato                 1 cup . 


method :  


  • bang mutton or beef piece with kitchen hemmer .

  • now put all the mutton / beef piece in a bowl and a marinate with ginger garlic paste , soya sauce , white vinegar , and pepper . for 2 hour at-least .

  • place them over grill pan and cook on both side till steak get fully  done .
  • remove in a platter and pour prepared sauce over it .serve with roasted vegetable and fries.
