Zafrani pulao

 preparation time : 5 minutes 
cooking time  : 30 minutes 


ingredients :


basmati rice                 2 cup ( soaked in water for 30 minutes)
bay leaves                     2
saffron                            20 strands
milk                                 1/4 cup warm milk
cinnamon stick                 1 inch
cumin seeds                    1 tsp
clove                                  3 to 4
black pepper corn             10
oil                                        1 tbsp
raisins                                  20 to 25
almonds                                10-12 roughly chopped 
cashew nuts                         10 -12 roughly chopped
ginger garlic paste               1 tsp
curd                                       1/2 cup
mint leafs                               1/4 cup chopped
onion                                         1 chopped & 1 fried
pomegranate                           1/2 cup
biryani masala                            1 tsp
salt to taste 




preparation :



  • take few strands of saffron in a small spoon . put the saffron spoon over flame for 30 seconds just to warm it . now put it into a small bowl and crush it with the back of spoon .  

  • now add warm milk into saffron bowl and mix well . it will give you nice yellow color and saffron will dissolve with milk . now its ready to use .
method :



  • heat up oil in a pan  add bay leafs , cumin seeds ,green cardamom , black cardamom  black pepper corns, clove , cinnamon stick and saute for 1 minute.

  • now add finely chopped onion , ginger garlic paste and saute, add raisins , almonds , cashew nuts , and saute till onion get nice light brown color .

  • add mint leafs and curd, biryani masala and saute for 1 minute add salt .

  • add 3 cups of water . when water start boiling add rice.and let it boil on high flame . stir gently for 1 time only .

  • when water and rice together start boiling add pomegranate ,saffron milk , few saffron strands,fried onion and ghee / butter on top .and cover the lid . and cook on slow flame for 10 minutes 

  • close the heat and do not open lid immediately let it be cool down for 5 minute .

  • open the lid and remove in a serving  bowl . this royal rice is ready to eat with any gravy veg , non veg .









 

chana chaat masala

preparation time :10
cooking time   :30 minutes 
































ingredients :

250 gm      kabli chane or chick pea ( boiled )
1 cup potato ( boiled and cut-ed in small cubes)
1 cup onion finely chopped
2 tsp lemon juice
3 green chilly finely chopped
1 teaspoon red chilly powder
1 tsp sugar
1 tsp cumin powder
1/2 cup tamarind sauce
green fresh coriander to garnish
salt to taste
chat masala  2 tsp
oil 3 tsp




preparation :

  • in a pan heat up oil  add onion cook it 2 to 3 minutes till it get fine orange color .
  • now add chana (chickpea) in it and sauté for 1 minute 
  • add all the spices ie cumin powder , coriander powder salt , sugar , tomato , red chilly powder , green chilly , and cook it to 10 minutes .
  • now switch off flame and add boiled potato , chat masala , tamarind sauce , and mix well .
  • take out this in the serving bowl and garnish  with green coriander .  and add 1 tsp butter on it ... its ready to serve with bread .

fried chaap (fried mutton ribs)


preparation time :15
cooking time   :20-30 minutes 


ingredients 

1 kg    chops (ribs part of cow or goat)
2 tsp ginger paste
2 tsp garlic paste
1 cup curd
1 tsp cumin powder (zeera powder)
salt to taste
2 to 3 tsp white vinegar
2 to 3 green chilly paste
oil to fry
1 egg
1 tsp red chilly powder



preparation

  • in a pressure cooker take chaap (mutton ribs pieces ) add curd ,ginger garlic paste , salt , cumin powder , white vinegar ,  green chilly paste , and pressure cook it till it get 4 to 5 whistle


  • in a different fry pan heat oil , and in a bowl take bred crumbs , in different bowl , take egg ,


  • take a pieces of chap dip in the egg and than again dip in the bread crumbs . and fry in oil till it get orange color .... do not fry it much  ...
  • fry all the pieces like that only
  • its ready to serve with green sauce


how to make green sauce :

  in a mixture jar take green chilly
green fresh coriander
2 to 3 pieces garlic clove
salt to taste
grind all these ingredient and make smooth fine paste ....its ready

grilled hara chicken

cooking time : 20 minutes

1 chicken  ( chopped )
1 cup coriander leafs
1 tsp cumin powder
2 tsp  gram flour
2 tsp ginger garlic paste
1 tsp green chilly paste
1 lemon juice
10 to 20 mint leaf
2 pinch  black pepper powder
salt  to taste



method:
  • in a mixer jar grind green coriander leaf , mint leaf , green chillies , ginger paste , garlic paste , pepper powder , cumin powder .. and make fine paste
  • apply this paste on chicken and marinade chicken pieces for two hours  in this mixture and pressure cook it..
  •  transfer the chicken pieces on greased grilling pan and cook until golden brown ...
  • garnish it with  fresh mint leaves and serve with green chutney .

chicken kababs

preparation time :5 minutes 

cooking time : 10 minutes 

















ingredients :

2         big piece of roughly chopped chicken breast
1 tsp    green chilly paste
1 tsp    ginger paste
1 tsp   garlic paste
1 slice bread    
1/2 cup  green onions
oil   for fry or grilled
salt      as per taste
butter  just for sprinkle
1/4 green spinach (its optional )
1 tsp  cumin powder



preparation :
  • in a mixer jar  grind chicken , green onion ginger garlic paste chilly paste , cumin powder , bread , salt .
  • . make a smooth paste , it has to be thick . font add water ( precaution).
  • now make small bowl of the mixture .flatten it with your palm  and deep fry it in oil on medium heat
  • sprinkle with butter green coriander ,and rounded chopped onion .
  • its ready to serve . with sauce or green chutney ..

shahi tukra

                                                                                                      preparation time :15 minutes

ingredients :



  ghee/ butter                          1 cup
boiled milk                               3 cup
 slices bread                              4
 sugar syrup                                1 cup  (made by using equal quantity of water and sugar )
rose essence                             (few drops)
nuts ( to garnish )              1 cup
yellow food color                    pinch 




for dressing :


1 and half cup of well boiled milk
extract of 1/2 vanilla pod ,
silver cover
4 to 5 tsp sugar
chopped nuts
3 egg yolks




preparation :



  • In a boiled warm milk add food color and rose essence... Mix well and keep aside .in different fry pan heat ghee and fry bread till it get crispy . now pour milk and sugar syrup on it cook it well till bread slices absorb all the sugar syrup .
  • To make cream 2 tsp of sugar in egg yolk and mix it till it get fluffy .
  • in a pan heat milk , add vanilla extract and sugar . remove pan from fire and mix continuously return pan to stove . to avoid curdling , you stir continuously . once it get thick remove that from fire



assembling: 

  • take shot fancy glass .
  • now in first layer take full spoon bread mixture
  • than on 2nd layer cream mixture
  • garnish it with nuts
  • set in the fridge for two hours


  • now its ready to serve

Aalamgiri korma

preparation time : 5 minutes
cooking time :35 minutes 











ingredients :



mutton (meet)          1 kg
ghee /butter                               500 gm
salt as per taste
onion                               4 to 5 medium size
garlic                                 20 flicks
coriander powder           2 big tsp
red chilly powder               3 tbsp ( according to taste )
garam masala powder      2 tsp
ginger                                       3 inches size
curd                                          500 gram






method :

marination :
now in a grinder jar take onion, salt, garlic, coriander powder, ginger red chilly and grind it and make a fine paste ...now add this paste in the meat bowl and mix well .... set a side for at least 1 hour








  • now take a pan and ass some ghee . as soon as ghee melt down add that marinated meet in that .
  • add 2 cup of water in that and let it cook ... cook it till meet get cooked properly add garam masala mix well . and when all the water evaporate and ghee comes out now add curd and mix it till ghee come out .


  • now korma is ready . garnish it with fresh green coriander leafs .. and serve it hot

chocolate walnut burfi


                                                            preparation time : 10 minutes 

                                                                        cooking time :30 minutes 








ingredients
  • two cup mawa also known as khoya 
  • 1/4 cup sugar  (u can reduce the quantity )
  • 1/3 cup milk 
  • 1/4 cup walnuts .shelled
  • 3 sheet gold paper ..(to garnish , optional)
  • 2 walnut slices
  • black salt powder ( a pinch )
  • 2 tsp oil 
  • 4 tsp cocoa powder 
preparation :


  • in a large fry pan heat crumbled mawa (khoya) ,fry the shelled walnuts (cut-ed into small pieces ) into it .
  • now add salt , cocoa powder and sugar into it .. and cook till mixture get think .
  • now-make ready baking tray ,, grease oil on it .. and pour than half of mixture (mawa mixture ) on it and spread gently .
  • now in the remaining mixture of mawa add the left cocoa powder and the walnut pieces . spread it on the earlier layer .
  • shake the baking tray till the mixture spread on it evenly .
  • now spread the silver paper at the top layer of mixture .... when it cool down cut into diamond shape or in square shape .
  • and serve it on room temperature ..

chilly chicken


preparation time : 10 minutes 
cooking time : 10 minutes 






 ingredients :
 chicken breast       300 gram
chilly sauce              2 tbps
corn flour                 2 tbsp
tomato ketchup         2 tbsp          


soya sauce                1 tbsp
green capsicum cut ed in cubes 1/2 cup
green chilly                 2 to 3
fresh coriander leafs     to garnish
oil to fry
salt to taste
egg white         2 tbsp
white vinegar    2 tsp












marination :

300 gram chicken breast
1 tbsp egg white
salt
chilly sauce  2 tsp mi x well
add corn flour 3 tsp mix well


marinate for 1/2 hour
in a pan heat up oil for  deep frying chicken  for two minutes . and remove it in a plate







for sauce 




take a bowl  2 tbsp red chilly sauce .
1 tbsp  soya sauce
2 tbsp    tomato ketchup
2 tsp white vinegar
mix well  and set aside






preparation :

  • in a different pan heat up oil   1 tsp grate
  • d tsp  and 1/2 tsp garlic  
  • add 1 big size onion cut ed into cubes 
  • add 1/2 cup capsicum 
  • add 2 green chilly fry on high flame for 3 minutes only 
  • add prepared sauce 
  • add 1/4 cup water 
  • add fried chicken in it 
  • sprinkle fresh coriander 
  • remove in serving plate  serve hot . with steam rice . 

Zarda

ingredients :


nuts      1 cup (mixed)
milk and saffron        1 cup milk
suger                        2 cup
basmati rice               1 cup soaked in water
ghee or butter            4 tbsp
cheese                       for garnish 1 cup
green cardamom        3
clove                          1



preparation: 

  • add some water to the pan let it boil add food color .  add soaked rice .
 




  • let it boil cook it till half done . 
  • drain excess water from rice . and set aside .



  • now add butter/ ghee  in the different pan  add nuts , fry it , remove in the bowl .
  • in same pan add clove , green cardamom, and   sugar  stir on   low flame  add soak milk . and stir till sugar melt .
  • add drained rice and nuts  and stir it finely. 
  • cover the pan .cook for 15 minutes on very low flame .
  • remove in serving plate garnish with nuts , and roughly crushed  cheese .

simple sandwich














ingredients :

for 4 sandwiches :

bread slices                                               6 to 8

potato boiled and sliced                      1 potato 
cucumber sliced                               1
butter                                                   2 tbsp 
boiled egg                                           2 cover removed and sliced 
tomato ketchup                                 2 tbsp
green chilly sauce                                2 tbsp
cheese slices                                         4





method:



  • take bread slice ,finely rub butter  then green chilly sauce than tomato ketchup on one side .
  • put layer of cheese .
  • put tomato slice , potato slice , and then cucumber slices, and egg slice  respectively one by one .
  • cover it with other bread slice
  • cut horizontally ...


    u may grill it  . enjoy a healthy snack.

keema matar (Minced Meat and Peas)













ingredients :

keema( mutton mince)   300 gram
red chilly powder           1 tsp
coriander powder           1 tsp
ginger garlic paste           2 tbsp
turmeric powder              1 tsp
cumin powder                    1 tsp
onion                                      1 big size   finely chopped
tomato                                   2 chopped
salt                                          to taste
bay leaf                                  1
green peas                            1/2 cup
Cinnamon stick                       1/2 inch
black cardamom                    1
garam masala                           1 tsp
black paper                            4 to 5
green chilly                              2
fresh coriander leaf         to garnish 1 tbsp
oil                                               3 to 4 tbsp
lemon juice                              2 tsp
mint leaf                                for garnish 2 tbsp






preparation :



in a pan heat up tbsp oil add keema(mutton mince) fry for 1 minute till col
for change , add 1/4 tsp red chilly powder , 1/4 tsp salt , 1/4 turmeric powder  fry for 3 more minutes  . remove it from flame


for gravy



  • in a different pan heat up 2 tbsp oil
  • add ginger garlic paste fry on slow flame for 1/2 minute .
  • add Cinnamon stick bay leaf  black pepper ,and finely chopped onion . fry it till onion change the color to light brown .
  • add tomato , 1 tsp coriander powder , 1 tsp cumin powder , 1/2 tsp  turmeric powder sauté for 3 to 4 minutes  .
  • add peas and keema (mutton mince) . and 1 cup water salt cover pan for 15 minutes . till oil comes out from keema(mutton mince) . 
  • add garam masala .
  • add 1 tsp lemon juice .
  • and garnish it with green fresh coriander and mint leafs and serve hot with naan / bread .

chicken sandwich with mayonnaise

ingredients



chicken breast skin removed     2
paprika powder                1 tsp
black pepper                     1 tsp
chilly powder                      1 tsp
coriander powder              1 tsp
turmeric powder                  1/2 tsp
oil  to grill chicken
salt to taste

green chilly paste 1 tsp
lettuce  leaves   4 to 5
cheese slices
mayonnaise    2 tbsp
chat masala     1 tsp
green cilantro   1 tbsp


preparation :



  • rub olive oil on the second side of bread 




  • take chicken breast and rub paprika  powder, black pepper , chilly powder , coriander powder , turmeric powder  and salt on it .
  • marinate the chicken for 10 minutes .
  • brush oil on griller and grill the chicken pieces for 5 minutes , cut it small pieces .
  • take  a bowl and mix the chicken and mayonnaise  ,chat masala , and cilantro mix well .
  • take bread slices  and butter one side .and rub green chilly paste too .
  • place salad leave on it and put the mixture of chicken and mayonnaise on it  and cover it with the other bread slice.
  • put the sandwich in griller grill it for 3 minutes .
