chicken stock /chicken soup


 cooking time : 20 minutes
preparation time : 15 minutes
serve: 4  








ingredients :

chicken with bone               1/2 kg 
water                                 5 cups
turmeric                            1/2 tsp
salt to taste 
roasted cumin seeds              1 tsp
whole black pepper              10-12
chopped onion                        1 
boiled potato                              1 mashed roughly 
chopped tomato                       1 
ginger                                    1 piece 
garlic                              8 clove
pepper powder              1/2 tsp
chopped green coriander leaf         2 tbsp
vermicelli                                         1 tbsp
clarified butter                             1 tbsp

method :  
  • wash chicken gently and seat aside . 
  • put chicken pieces with bone in a heavy bottom pan add water salt , whole pepper , roasted crushed cumin , chopped onion chopped tomato , crushed garlic and ginger piece salt and add 6 glasses of water and cover and cook on medium flame till water get evaporate to 4 to 5 glasses only . this may take 15 minutes .
  • now gently remove the chicken pieces from mixture . and set aide . 
  • with the help of strainer strain the left of mixture and set aside . (chicken stock is ready , if you want only chicken stock then quit the process here only but if you want to make chicken soup then continue with the process ) .
  • now take the stock in a pan and add vermicelli , fresh coriander ,mashed potato,  pepper powder ,and shredded  chicken  cook again 5 to 8 minutes .
  • remove in a bowl and serve hot . 


here you can add chicken cubes , and some vegetable according to your choice like cabbage , and chopped carrot etc enjoy the winter with healthy soups .

vegetable stuffed cheesy tortilla

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4

ingredients :

for dough :
wheat flor                     2 cups 
baking powder                1 tsp
salt                               1/2 tsp
clarified butter               1/2 cup 
yeast                            1 tbsp
milk                            as required 

for filling :

boiled and roughly mashed potato         3 
finely chopped onion                              1 
chopped green chilly              2
garlic clove chopped                      1 tsp
mint leaf                                   few
coriander leaf                          1 tbsp
cumin seeds                            1 tsp
red chilly crushed                             1 tbsp
pomegranate seeds                            4 tbsp
butter                                       5 tbsp
boiled green peas                    1/2 cup
cheese slice grated                    1 cup



method :  


to prepare dough :
  • in a large mixing bowl take refined flour , add 1/2 tsp salt , 1 tbsp yeast , 1 tsp baking powder , 1/2 cup of clarified butter and add water and make fine dough . knead it with the help of your palm and set aside  for 1 hour .
to prepare filling :
  • in a large mixing bowl take potato , finely chopped onion , peas , grated garlic , salt , mint coriander leaf ,roasted cumin seeds , red chilly crushed , pomegranate seeds and mix all well . 
to prepare kulcha/tortilla. 

  • now take the small amount of prepared dough and roll it with kitchen rolling pin and fill the prepared filing in it add piece of cheese  . and cover it . like we cover samosa , etc . 
  • put some flour and roll it with rolling pin and place it over pan .put some butter on top . and flip it . cook both the side until golden crisp . put both the side butter an remove in a platter and serve hot . 
  • you can give it in tiff-in box with sauce/ ketchup . 




chicken broast

cooking time : 20 minutes
preparation time : 15 minutes
serve: 3  









ingredients :

chicken leg pieces           1 kg 
crushed chilly flakes          2 tbsp
salt to taste 
tara garam masala          1 tsp
grated garlic                      1 tbsp
refined flour                        1 cup
black pepper                      1 tsp
baking powder                        1 tsp
butter milk                         1 cup
oil to deep fry 

method :  

  • in a bowl take chicken leg pieces , red chilly flakes , tara garam masala , and grated garlic mix well . 
  • in a separate platter take refined flour and season it with salt and pepper . 
  • in another bowl take butter milk add 1/2 tsp tara garam masala and 1/2 tsp red chilly powder and mix well . 
  • add the marinated chicken in it and mix well . and leave it as it is in butter milk for 30 minutes . 
  • after that coat chicken pieces in flour mixture and set aside leave it as it is for 5 to 10 minutes . 
  • then again dip the coated chicken in butter milk mixture and coat it with flour mixture 
  • deep fry it in oil for 10 minutes until nice crispy golden color .
  • kfc platter is ready to serve .  

chicken stew

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4

ingredients :

skin less chicken               1 kg 
lemon juice                           1 lemon 
salt to taste 
tomato                                5 to 6
garlic                                12
onion                            2 finely chopped 
oil                                   1 cup
bay leaf                              2 
red chilly powder           1 tsp
turmeric powder             1 tsp
whole black pepper          10-12
cloves                        4
fresh coriander leaf             1 cup 
green chilly sliced                      4


method :

  • in a grinder jar blend 6 tomatoes and 10-12 garlic  cloves and run it . put this mixture over chicken pieces . add salt and lemon juice and too . mix all these well .and set aside for 30 minutes to marinate .

  • after that heat 1 cup of oil in a pan add bay leaf , and finely chopped onion and sauté till onion get nice golden color . add 1/2 cup of water and allow it to get a boil . 
  • add  5 cloves , 10 whole black pepper , 1 tsp red chilly powder 1 tsp turmeric powder , and salt to taste . sauté for 2 to 4 minutes then add marinated chicken cover and cook for 15 minutes . add green coriander and green chilly .

  • after that remove in a platter and serve with any rice . 

coconut and flour dessert

cooking time : 20 minutes
preparation time : 15 minutes
serve:5

ingredients :

refined flour                        250 grams OR 1 cup
clarified butter                     250 grams OR 1 cup
jaggery                                 1/2 kg
green cardamom               7 pods
grated coconut                        250 grams
dry ginger powder/sonth         1 tsp
nutmeg powder                     pinch
cinnamon powder                1 /s tsp
poppy seeds                        1/2 cup
coconut milk                       1 cup
almonds                 1 cup
                                     


method :  


  • in a pan take 250 grams clarified butter (ghee) and 250 grams refined flour . sauté it till flour get nice golden color .

  • add cardamom pods , and coconut milk and stir .cook on slow flame . stir occasionally while cooking .

  • in a different pan take 1/2 cup of water and add gaggry . and cook on slow flame . allow the jaggery to melt fully . now this mixture in flour mixture being cooking . and stir . add nutmeg powder , cinnamon powder , and cook on slow flame.


  • in a separate pan dry roast grated coconut and  chopped almonds and when coconut get nice golden color . put this too into flour and jaggery mixture and stir continuously .

  • remove in a platter and garnish it with nuts .

Kabsa (saudi kabsa)

Saudi kabsa
cooking time : 20 minutes
preparation time : 15 minutes
serve: 4

ingredients :

skinless chicken                    1 kg
grated garlic                             1 tsp
salt to taste 
oil                                   1 cup
onion                                 2 finely chopped
tomatoes                            2-3
tara garam masala                      2 tsp
pepper powder 
green cardamom powder               1/2 tsp
cinnamon powder                              1/2 tsp
mace and nutmeg powder             1/4 tsp
tomato paste                               2 tbsp
raisins                                            2 tbsp
lemon slices                    to garnish 
water                                     3 cups

method :  

  • in a pan heat up 1 cup oil add 2 chopped onion and sauté til it get light golden color .add chicken pieces  and sauté for 2 to 4 minutes till chicken changes color . 
  • add pepper powder ,1 tbsp tara garam masala ,green cardamom powder,1/4 tsp cinnamon powder ,1/4 tsp mace powder, 2 tbsp tomato paste , and grated garlic paste . salt and 1 cup of water .  add 2 chopped tomatoes and cover and cook till chicken get cooked about 90%. 

  • remove chicken pieces in a separate bowl and set aside .




  • place the chicken pieces over griller and grill it so that chicken chicken get nice patches over it . brush some oil over chicken too .

  • in the same gravy add soaked rice in it . and enough water so that rice get cooked cover and cook on slow flame for 10-15 minutes . or till rice get fully cooked .

  • place cooked chicken over the top layer of rice being cook and again and cook for 5 minutes on very slow flame.
  • remove in a platter and serve with any salad .

egg with chicken curry(murgh anda shorba)

a friend of mine on face book ask many time to write any recipe which protect us from cold ,(due to winter season all around the world all people want to eat healthy foods . which give them energy to protect from cold and cough ) . now finally i decided to write this post specially for you Lusi  .i tried my best to give you authentic recipe to make egg with chicken . go though the recipe . i made the recipe with whole chicken but you can make pieces . if you want .i advice all peoples who live in extreme cold weather please eat eggs , fish and non vegetarian foods.

cooking time : 20 minutes
preparation time : 15 minutes

ingredients :

skinless whole chicken                     1 kg
egg boiled                                          6
ginger garlic paste                                1.5 tbsp

salt to taste
red chilly powder                              1 tbsp
cumin powder                              1 tsp
salt to taste 
onion                                             2 fried
finely chopped tomatoes               2
turmeric powder                            1 tsp
yogurt                                             1/2 cup
oil                                              1 cup
bay leaf                                    1 
green cardamom                            2 
black pepper crushed                     1 tsp
whole spice powder/garam masala         1 tsp
green  chillies   sliced                           6
dried plums                          1 cup (50 grams)
chopped fresh coriander leaf              1 cup
lemon juice                                         1 lemon juice 

to garnish :
fried onion                2 tbsp
fresh green chopped coriander        2 tbsp

preparation :
  • soak the plum in warm water and after 30 minutes remove he seeds from plum  drain water set aside . 
  • boil the eggs in water and peel it . fry it in 2 tbsp oil so that eggs get patches over it  .remove in a platter and set aside .
  • in a blender jar take fried onion , 1 tsp ginger garlic paste , 2 chopped tomatoes ,6 green chillies , salt , 1 tbsp red chilly powder , 1 tsp cumin powder and run it . make fine paste and set aside.
  • take whole chicken in a bowl and squeeze 1 lemon juice over it . and rub 1 tbsp ginger garlic paste on it too and allow it to get marinate for 30 minutes .
method :  
  • heat up oil in heavy bottom pan add bay leaf and prepared mixture of tomato and onion and sauté for 2 to 3 minutes . and cover and cook till oils comes out from it . 
  • after that add marinated chicken in this mixture and sauté gently chicken chicken changes the color , this may take 5 to 8 minutes . add salt ,plums, 2 cups of water and cover and cook fr 20 minutes . (you should cover the pan tightly so that steam do not go out from pan ).
  • after that add garam masala powder , chopped coriander leaf , pepper powder and boiled egg . again cover and cook for 5  minutes or till oil comes out . 
  • remove in a platter and serve with rice . 

BBQ chicken biryani

cooking time : 20 minutes
preparation time : 15 minutes

ingredients :
for chicken kebabs :

skin less boneless chicken          1 kg 
salt to taste 
ginger garlic paste              1  tbsp
chilly powder                      1 tsp
hung curd                          2 tbsp

turmeric powder                 1/2 tsp
all spice powder /garam masala             1 tsp
tandoosri color                           1/2 tsp
tandoori masala                             1  tsp
sate stick                                    10 (soaked in chilled water )
coal                                          2

for rice platter :

basmati rice cooked                          3 cups
chopped onion                                  1 
fried onion                                         1 cup
chopped tomatoes                                 3 
chopped fresh coriander leaf               1 cup
chopped fresh mint leaf                       1/4 cup
yogurt                                               1/2  cup
green chillies                 5
chilly powder                 1 tsp
salt to taste 
ginger garlic paste              1 tbsp
oil                                           1/2 cup
kewra water                                  2 tbsp
milk                                         1/2 cup

method :  

to prepare kebabs :
  • in a large mixing bowl take chopped chicken breast ,salt , ginger garlic paste , chilly powder , food color , salt , tandoori masala , garam, masala , turmeric powder , hung curd  and mix well .set aside for 1 hours in fridge to get marinate .
  • after that  place the chicken over sate stick , or wooden screwer and grill it on griller . brush 3 tbsp oil over it . rotate screwer while cooking . if it get cooked remove in a platter and set aside . 
  • after that place a hot coal around it and pour 1/2 tsp clarified butter .cover it tightly (smoke do not go out ).
to prepare rice platter .
  • heat 1/2 cup oil in a pan add chopped onion and sauté till it get nice golden color , then add  ginger garlic paste , chopped tomato , chilly powder , curd and give it a gentle stir , cover and cook for 3 minutes on slow flame .add chopped green chilly and fresh chopped coriander leaf and mint leaf . 
  • after that place a layer of cooked rice over it and .then pour milk and 1 tbsp clarified butter . 
  • put grilled chicken over the rice then cover and cook on high flame for 7 minutes then on slow flame 6 minutes . 
  • remove in a platter and serve . 

pan spicy mince with lemon ( tawa keema )

cooking time : 15 minutes
preparation time : 5 minutes

ingredients :

chicken mince                         1/2 kg 
oil                                               5 tbsp
onion                                             1 finely chopped 
ginger garlic paste                      1 tbsp
finely chopped tomatoes                4
turmeric powder                        1 tsp
roasted crushed coriander          1 tsp
roasted crushed  cumin               1 tsp
chilly flakes                                 1 tbsp
lemon juice                                     4 tbsp
garam masala powder                     1 tsp
fresh chopped coriander leaf           1 cup
lemon sliced seeds remove                   1

method :

  • in a  large pan or tawa heat up 5 tbsp oil and add chopped onion and sauté till it get golden color add ginger garlic paste and stir for 1 minutes then add finely chopped tomatoes and give it a stir . cover and cook for 1 minutes .

  • add chicken mince , red chilly flakes , turmeric powder , roasted and crushed coriander seeds , roasted and crushed cumin , salt and stir . and again cover and cook for 6 minutes . 

  • add garam masala powder , fresh chopped coriander leaf , green chill slices , and 34 tbsp lemon juice and slices of lemon ( seeds removed ).give it a stir and remove in a platter .

colorful colselaw salad

ingredients :

white cabbage                       1 cup chopped Julian
purple cabbage                      1 chopped Julian 
mayonnaise                                  2 tbsp
cream                                       4 tbsp
salt                                              pinch 
black pepper                       1/2 tsp
raisins                                  20-30
roasted almonds                  1 tbsp
walnuts                                  2 tbsp 
pineapple chopped                1 cup
apple chopped                       1 cup 


method :  
  • take white cabbage , purple cabbage , raisins, pineapple , apple , and toss all them together so that they get mix finely . 


  • add mayonnaise , pepper pinch of salt , walnuts , and roasted almonds . again toss .


  • cover this with plastic wrap and put it in fridge for 30 minutes . 
  • serve chilled .

hot chocolate mix

ingredients :

coca powder               1 cup
sugar                                5 tbsp
salt                      1/4 tsp
boil milk              at the time of serving 
marshmallow              2-10

method :
  • in a large mixing bowl take 1 cup cocoa powder , 5 tbsp sugar , pinch of salt and mix well .put this into a bottle and use it when you like to make hot chocolate . 

  • at the time of serving put 2 tbsp of this mixture in a serving cup and pour hot milk . 

  • garnish it with marshmallows .

turmeric milk (haldi doodh)

cooking time : 6 minutes  
preparation time : 15 minutes

ingredients :

turmeric powder                     1 tsp
milk                                    1/2 liter 
jaggery                                 1 tbsp
cinnamon powder                           1/2 tsp
grated ginger                              1 tbsp
water                                  1 cup
saffron                  pinch 



method :  
  • in a  sauce pan take 1 cup of water put grated ginger and turmeric powder when it starts boiling add milk and 1/2 cover and cook for 6 to 7 minutes . 

  • add jaggry , cinnamon powder and again cook . 
  • strain it with the help of stainer . and serve immediately .

ginger                      2 inches peeled and chopped 
honey                           1 cup
lemon                           2 chopped seeds removed 

method :
  • peel the ginger and chop it in small pieces . set aside . chop the lemon remove all seeds . and make small pieces .
  • take a bottle put chopped ginger  , chopped lemon in it . 
  • pour the honey in the bottle . and cover it . set this in fridge.
  • take two tbsp at the bad time to beat soar throat .and common cold .
  • enjoy winter .

  • please please do not use this remedy for CHILDREN'S BELOW ONE YEAR of age .
  • do not drink immediately water after that .
  • honey ginger both are natural antiseptic medicine .

Sindhi Biryani (kachche gosht ki biryani)

cooking time : 30-50 minutes
preparation time : 15 minutes

ingredients :
 

meat                        1 kg
rice boiled                     2 cup
salt to taste 
ginger garlic paste               2 tbsp
potatoes peeled                          cut into 3 pieces 
onion chopped                     2
onion fried                          1 cup

yogurt                                  250 grams
red chilly powder              1 tbsp
coriander powder              1 tbsp
cumin powder                     1 tbsp
garam masala powder               1 tsp
bay leaf                                       2 
whole black cardamom                   2 
cinnamon stick                          1 
dried plum                                 8
green chilly                           8
fresh chopped coriander             1 cup
fresh chopped mint leaf                 1/2 cup
yellow food color                        1/2 tsp
milk                                       1 cup
clarified butter                       6 tbsp

preparation :
  • wash the plums gently and soak it in water for 30 minutes . when plum get soften remove the seeds and drain the water set aside . 


method :  
  • heat 6 tbsp butter in a pan add chopped poato and fry it  for 3 to 4 minutes . remove it and set aside . 
  • in the same pan add chopped onion , bay laf , cinnamon stick , whole black cardamom and stir till onion get golden color . 
  • add ginger garlic paste , coriander powder , cumin powder , garam masala powder , salt , red chilly powder stir fry for a while add mutton , curd , plums, tomato , and cover and cook till mutton get cooked . 
  • add potato , mint leaf , coriander leaf , and stir . 
  • add layer of cooked rice over it then pour 1 cup mil , spread fried onion , pinch of food color , green chilly , green coriander leaf , mint leaf and cover and cook on high flame for 10 minutes . then on slow flame for 10 minutes . 
  • remove in a platter and serve . 

potato dessert (aaloo ka halwa)


cooking time : 20 minutes
preparation time : 15 minutes
serve: 6 

ingredients :

boiled and peeled potato                6 
sugar                                        4 tbsp
green cardamom                          3
kewra water                                   1 tsp
chandi ka warak                          1 (optional)
clarified butter                        4 tbsp
mixed nuts                                  1 cup


method :  
  • mash boiled potato and set aside . 

  • heat 5 tbsp clarified butter ( ghee ) in a pan add green cardamom seeds stir for a while . add boiled and mashed potato . 
  • sauté for 5 to 6 minutes . 

  • add sugar kewra water and sauté till all the ingredients get mixed well . stir till potato mixture leave the pan . 

  • remove in a platter and garnish it with silver cover , add nuts . 

pumpkin dessert (kaddu ka halwa )

cooking time : 20 minutes
preparation time : 15 minutes

ingredients :

sweet pumpkin                 1 kg ( grated )
milk                                  1/2 liter  
khoya                            1 cup
sugar                              1 cup
green cardamom powder          1/2 tsp
pistachio                          1 tbsp ( chopped )
cashew                                1 tbsp (chopped )
almonds                              1 tbsp ( chopped )
clarified butter                     5 tbsp
silver warak ( chanadi ka warak )          1 
green food color                       pinch 


 method :  



  • take milk in a pan add grated sweet pumpkin and cook it till milk get dried and pumpkin soften . stir in between .

  • when milk get dried add khoya , clarified butter ,cardamom powder, green food color , and sugar and sauté till a layer of oil comes out from the mixture . 
  • add all the nuts  almonds ,cashew , raisins etc .

  • remove in a bowl and garnish it with sliver warak and serve .

3 seasoned kebabs

cooking time : 20 minutes
preparation time : 15 minutes
 serve: 5-6


ingredients :

 prawns                    250 grams 
mutton mince               250 gram
chicken mince               250 gram
onion                           3 chopped 
ginger garlic paste             1 tbsp
green chillies                  10-14
salt                                  1 tsp 
paprika                             1 tsp
oregano                            1 tsp
black pepper                    1/2 tsp
tomato ketchup                    1
egg                                  1
fresh green coriander        1 cup (chopped)
oil to fry 

to serve with :
capsicum             1 cup
onion                    1 chopped in cubes 
boiled potato                1 
pepper powder         pinch 

method :  

for kebabs :
  • take prawns , chicken mince , mutton mince ,1 tsp salt ,10 green chillies , ginger garlic pate and chopped onion in a blender jar and run it . remove in a bowl  .

  • break 1 egg , add oregano, black pepper powder , paprika , ketchup , fresh green coriander leaf and mix well. set this mixture in fridge for 30 minutes . 

  • after that rub 1 tsp oil in your palm and make kebabs shape . shallow fry it in oil on both the side . 

  • remove in a platter and set aside . 
vegetables :
  • heat 1 tbsp oil in a pan and stir fry  boil potato , green capsicum , cube onion and toss all together . add pinch of salt and seasons it with pepper powder  ,
  • add this into fried kebabs and serve .  

spicy baked drumsticks

baking time : 20 minutes  
preparation time : 15 minutes
serve: 6







ingredients :

skinless chicken leg pieces                     6 -10
salt to taste 
ginger garlic paste 
red chilly powder                              1 tbsp
hung curd                                 3 tbsp OR (125 grams)
fresh ginger garlic paste           2 tbsp
orange papaya paste              2 tbsp
sesame seeds                        2 tbsp
fresh cream                         5 tbsp
turmeric powder                   1 tsp
lemon juice                            1 tbsp
tomato paste                          2 tbsp  
fresh coriander leaf chopped         1 cup                              

 method :  
  • in a large mixing bowl take 2 tbsp ginger garlic paste , 2 tbsp papaya paste , and 2 tbsp tomato paste , mix well . now add 2 tbsp sesame seeds , and fresh cream and stir again . 

  • now add hung curd , red chilly powder , turmeric powder , hung curd, lemon juice , salt to taste, chopped coriander leaf  and mix well .

  • add drumstick(leg pieces ) and mix well so that spices  get fully coated with chicken .set this in fridge for 30 minutes to get marinate .

  • after that take a foil paper and place marinated chicken drumstick with 1 tbsp of its marinate and fold the foil paper so that chicken get fully covered . 

  • bake it at 200 degree in oven for 20 minutes .

roghni korma

yogurt                                     2 cup
fried onion                            1 cup
roasted crushed coriander seeds            2 tbsp
cumin crushed                                        2 tsp
nutmeg powder                           1/4 tsp
mace powder                               1/4 tsp
garam masala                           1/2 tsp
green cardamom powder                1/2 tsp
cloves                                     6
bay leaf                                 1
cinnamon stick                             1

method :

  • heat up clarified butter in a pan add cloves, bay leaf, cinnamon stick , and stir for a while . 
  • add ginger garlic paste and chicken . and sauté for 3 to 4 minutes . add yogurt and fried onion and sauté more 2 minutes .then add crushed roasted cumin , roasted crushed coriander seeds ,chilly powder and stir for a while and cover and cook for 5 minutes . 
  • in a  mixture jar take poppy seeds , almonds , grated coconut, cashew nuts and 1/2 cup of water and run it . 
  • add this mixture chicken being cooking add mace nutmeg and cover and cook till chicken tenders . 
  • remove in a bowl and serve .

parat wala paratha (crispy layered tortilla )

refined flour                 2 cups
salt                              1/2 tsp
sugar                             1 tsp
soda                            1 tsp
semolina                        2 tbsp
eggs                            2
milk powder                       3 tbsp
warm water                  as required


method :  

  • take refined flour , salt , semolina , soda , milk powder , sugar  in a large mixing bowl . mix well . 
  • break 2 eggs in it and again mix . 
  • now add water and knead by using palm . and make fine dough .
  • with the help of kitchen rolling pin make round shape tortilla . and brush 1 tsp melted clarified butter over  it and roll it .
  • now divide the roll in equal 3 to 4 pieces and make ball .
  • take each ball and with the help of rolling pin make tortilla . 
  • melt a cup of clarified butter in a pan and put the tortilla in it and shallow fry on medium heat . when it get light crispy golden color from one side flip it and cook another side . 
  • remove in a platter and serve with any roghni mutton .
