kashmiri pulao (mutton pulao)

cooking time : 20 minutes
preparation time : 15 minutes 









ingredients :


mutton                      1 kg 
basmati rice              1 kg     (  soaked in water for 30 minutes )
ginger garlic paste           1 tbsp
onion                                  2 fried 
chopped apple                 1 cup
salt to taste 
caraway seeds                  2 tbs
bay leaf                            1 
butter                              4 tbsp
crushed black pepper            1 tbsp
pineapple chopped                  1/2 cup
carrot                                        1/4 cup chopped 
oil                                           1/2 cup
salt to taste 
walnuts                                1/2 cup
grapes                                 1/2 cup sliced
almonds cashew and raisins              1/2 cup
saffron                                       few strands 


method :
  • heat 1/2 cup of oil in a pan add fried onion and sauté then add ginger garlic paste and sauté for 1 minute.
  • add mutton pieces and sauté on high flame for 5 minutes . add caraway seeds bay leaf ,salt ,, green cardamom , and sauté . 
  • add 2 glass on water and cover and cook till mutton get fully cooked . add fried carrots and rice .cover and cook till rice get 90% done . 
  • add grapes walnuts, butter , crushed black pepper,saffron  , pineapple chunks, chopped apple , almonds cashew , raisins , mix and cover and cook for 7 minutes on very slow flame . remove in a platter and serve .
