spiced button idlis




preparation time : 5 minutes 
cooking time : 20 minutes 







ingredients :


semolina                               1 cup
curd                                      1 cup
water                                     1/2 cup
oil                                             1 tbsp
mustard seed                       1/2 tsp
curry leaf                               5 to 7 
onion                                           1 tbsp     ( finely chopped )
green capsicum                     1 tbsp    ( finely chopped )

tomato                                           1 tbsp   ( finely chopped )
salt                                               1/2 tsp
black pepper powder              1/4 tsp
green chilly                                2 (finely chopped )
chilly flakes                              1/4 tsp 
tomato ketchup                      2 tsp 

to boil :

water                                  4 cup


method :



  • prepare batter by mixing semolina , curd and 1/2 cup water in a bowl . mix well and keep aside for 5 minutes .

  • to make idlis boil 4 cup water in a pan .

  • grease idli moulds with oil and fill semolina batter in it .

  • place the filled moulds in the boiling water . cover the pan and steam and cook them for 10 minutes .


  • once done . unmould the idlis in a platter .

  • to fry idlis heat oil in a pan add mustard seeds , curry leaves , chopped onion , chopped tomato , chopped capsicum , salt black pepper powder , chopped green chillies , chilly flakes , tomato ketchup and button idlis mix every thing well and stir fry them on high flame for 3 to 4 minutes . 

  • serve in a platter.

cream of tomato



preparation time : nil 
cooking time :      20 to 30 minutes 











ingredients :


tomato                                6 
water                                      3 cup

bay leaf                               1
black pepper corn               5 
onion                                   1 chopped 
garlic                                    2 clove 
salt                                      1 tsp
white pepper powder           1/4 tsp
butter                                   1 tbsp
refined flour                        3 tsp
cold milk                             1/2 cup 


to garnish :

cream                              2 tsp
parsley leave                   few 



method :


  • in a pan take 3 cup of water add tomatoes bay leaf ,onion , garlic clove cover the pan and cook for 10 minutes on slow heat .after that allow them to come on room temperature .

  • sieve tomato stock in a bowl and set aside .

  • to make tomato puree grind the boiled tomatoes and onion make fine paste .
  • sieve the tomato puree in a bowl and mix it with prepared stock and cook again .

  • add salt white pepper powder and cook for 4 to 5 minutes more .

     
  • to prepare white sauce heat butter in a pan add refined flour and sauté for 1/2 minute . take it off to gas and add chilled milk and again cook until sauce get little thicken.

  • mix little tomato mixture into white sauce and mix well now pour all the white sauce mixture into tomato puree and again cook for 5 minutes .

  • remove in a serving bowl and garnish it with fresh cream and parsley leave .

  • serve hot .


Tangy chicken salad


preparation time : 15 minutes 
cooking time : 15 minutes 









ingredients :



chicken breast              2
salt                                1/2 tsp
pepper powder              1/2 tsp
lemon juice                    4 tsp
soya sauce                      2 tsp
garlic grated                   1 tsp
fish sauce                        1 tsp
corn flour                        1 tsp
brown sugar                     1/2 tsp
green capsicum                 1/2 cup finely chopped 
green onion / onion            1 cup finely chopped 
mint leaf                              1 tsp
lemon leaf                            1 tsp
olive oil                          1 tbsp
coconut milk                     1 cup 

to garnish :

lettuce leave                  4
lemon leaf / mint leaf      3


method :


  • to marinate the chicken apply salt ,black pepper powder , soya sauce , lemon juice and grated garlic on chicken pieces and set aside for 1 hour .

  •  heat olive in a pan and fry marinated chicken in it for 3 to 4 minutes , take it off the gas .


  • roughly chopped the fried chicken into pieces and stir fry again on high flame for 3 to 4 minutes .
  • to prepare sauce take 1 cup coconut milk in a pan , add 1 tsp fish sauce , pepper powder , brown sugar and , and 1/2 tsp corn flour mix well and stir continuously   3 to 4 minutes until sauce get thicken .
  • now to to prepare salad add prepared sauce in a bowl add stir fried chicken pieces ,chopped green capsicum , chopped onion , mint leaves , lemon leave , lemon juice , chopped green chilly and toss together unless it get mix well .
  • serve in a platter and garnish it with lemon leave and lettuce leave .


AaLoo chana chaat salad ( potato chick pea salad )


preparation time : 15 minutes 
cooking time :  20 minutes 













ingredients :


potato                              1 cup boiled 
grams                             1 cup boiled 
tamarind sauce                   2 tbsp
salt                                1/4 tsp
chaat masala                   1/2 tsp
roasted cumin seeds      1/2 tsp
black pepper powder     1/4 tsp
lemon juice                    1 tbsp
coriander leaf                1 tbsp
mint leaves                     6 to 7 
green capsicum               1/2 cup finely chopped 
pomegranate                    1/2 cup  
onion                                  2 tbsp chopped 



to garnish :

tomato peel                   1 


method :


  • to prepare dressing for salad in a bowl take lemon juice , tamarind sauce , add chaat masala , salt and black pepper powder mix well . 

  • now add green chilly chopped , chopped coriander leaf, &mint leave and again mix well .

  • add boiled potato , boiled chick pea ( gram ) , pomegranate , chopped onion and , chopped green capsicum . toss them together .

  • remove in a serving platter and garnish with tomato peel .

Yakhni murg shorba (spicy chicken soup )


preparation time : nil 
cooking time : 15 minutes 











ingredients :

chicken pieces                   2
oil                                         1 tsp
curd                                        1/2 cup
corn flour                             1 tsp
water                                      3 cups

cinnamon stick               2 (1 inches each      )
black peppercorn                 4
clove                                          2
green cardamom                    2
fennel seed                            1 tsp
garlic                                        2 chopped
green chilly chopped              2
milk                                           2 tbsp
fennel powder                        1/2 tsp
salt                                               1/2 tsp
coriander leaves                      1 tbs



to garnish :

coriander leaves                  1/2 tsp
green chilly                            2 sliced






method :



  • to prepare yakhni murg shorba ( spice chicken soup) heat up 1 tsp oil in a pan add chicken pieces and stir fry it on high flame for 2 to 3 minutes .


  • take curd in small bowl add corn flour and mix well & make smooth paste . pour this paste into chicken being cooked stir well till mixture get boil .

  • add cinnamon stick , clove , green cardamom ,  chopped garlic , fennel seeds , chopped green chilly , and chopped onion cover and cook for 8 to 10 minute more .


  • sieve prepared stock into bowl and again cook it in pan for 5 more minutes . add milk , fennel powder , and coriander leaf at the end .

  • take shredded chicken into a  serving bowl pour prepared yakhni murg shorba ( chicken stock ) garnish it with slices chilly and coriander leaf . 



  • serve hot .

bean and corn salad



preparation time : 15 minutes

ingredients :

corn                                  1 cup (boiled )
red kidney beans              1 cup boiled 
olive oil                           3 tsp
red chilly sauce                   3 tsp
sugar                                   1/4 tsp
black pepper powder          1/24 tsp
lemon juice                         1 tbsp
cottage cheese                   1/2 cup chopped 
green capsicum                 1/2 cup chopped 
green onion chopped         12/ cup
garlic                                 1 tsp grated 


to garnish :

cabbage leaves                           3
parsley leaves                             few 




method :

to prepare dressing :


  • in a small bowl take olive oil , red chilly sauce , salt , black pepper powder and lemon juice mix well and set aside .





  • to prepare bean and corn salad take boiled kidney beans , corn , chopped cottage cheese , green onion , green capsicum and grated garlic and mix well .




  • pour prepared dressing into it and again toss it well  so that dressing get finely coat with beans and all vegetables . remove in a sering plate and garnish it with cabbage leaf and parsley .

chicken steak with pepper sauce




preparation time : 10 minutes

ingredients :


chicken breast             2
salt                                         1/2 tsp
black pepper powder   1/4 tsp
ginger garlic paste         1 tsp
oil                                            3 tsp
paprika powder             1/2 tsp
refined flour                     1 tsp
lemon juice                       2 tsp



for pepper sauce :

butter                            1/2 tbsp
refined flour                      1 tsp
water                                   1/2 cup
black pepper powder     1/4 tsp
paprika powder          1/4 tsp
oregano                           1/2 tsp
tomato ketchup                1 tsp
salt pinch 


method :



  • to prepare chicken steak with pepper sauce in a bowl take chicken pieces , add salt paprika powder , salt , refined flour , ginger garlic paste,  black pepper powder , lemon juice mix well and  marinate it for 1 hour .
  • there after brush oil in a pan and fry the marinated chicken pieces on it .

for pepper sauce :


  • heat butter in a pan add refined flour salt and sauté for 1 minutes now  water , black pepper powder ,paprika powder , oregano , and tomato ketchup .


  • place chicken pieces on serving plate and garnish it with pepper sauce .


Healthy sandwich


preparation time : 10 minutes 
cooking time : nil 










ingredients :



multi grain bread     6 to 8 slices 
cucumber                    1 sliced 
tomato                         2 sliced
tofu ( bean curd )         100 grams
pickled onion                 4
green chillies               2 chopped 
sun-dried tomato            6
hung yogurt                 1/2 cup
salt to taste 
ice-burg lettuce                4



method :

  • grind tofu , pickled onion , sun-dried tomatoes hung yogurt and salt into paste .
  • spread this paste over bread slices . flowed by lettuce leaves ,tomato slices , cucumber slices  cover with other slices
     
    . sprinkle salt and press lightly .
  • cut and serve .




spinach toast



preparation time : 15 minutes 
cooking time : 10 minutes 














ingredients :



spinach            350 gram chopped 
olive oil           1 tbsp
garlic                1/2 tsp    grated 
onion                 1 tbsp finely chopped 
salt to taste 
soft cheese         1/2 cup crumbled 
cheese                 3 tbsp grated 
black pepper powder    1/4 tsp
red pepper sauce            1/4 tsp
oregano                           1 pinch 
red chilly flakes               1/2 tsp


method :



  • heat up olive oil in a pan and add grated garlic and chopped onion and stir fry for a while .
  • add spinach and stir while cooking for 7 - 8 minutes . on slow flame 
  • add salt and mix well . now take this out into a bowl .
  • add crumbled cheese and grated cheese , black pepper powder , red chilly sauce and mix all the ingredients very well .
to assembling :


  • brush olive oil on bread slices .top it with the prepared spinach mixture then grate some cheese on it sprinkle chilly flakes and oregano .
  • place the spinach toast on wire rack and grill in the oven at 180 degree for 10 minutes .
  • cut the toast diagonally and serve with any sauce .

Bruschetta


preparation time : 15 minutes

ingredients :


garlic flavor bread                  1
tomato                                        2 finely chopped 
basil leaf                                    2 tsp
salt to taste 
black pepper powder                  1/4 tsp
olive oil                                       2 tbsp
cheese grated                                2 tbsp


to Garnish :

chilly flakes                           1/4 tsp
black olive                              2 tbsp chopped 

method :





  • marinate the tomato with basil , black pepper powder and salt .

  • cut garlic flavored bread  and brush olive oil on both the side .

  • put marinated tomatoes on the slices and sprinkle drops of olive oil and grated cheese .

  • garnish it with chilly flakes and black olives .

  • place the bread slices on wire rack and grill in the oven for 7 to 8 minutes . serve hot 









Lasagna



preparation time : 20 minutes 
cooking time : 30 -40 minutes













ingredients :


lasagna sheet               3
butter                           2 tbsp
refined flour                 5 tsp
cold milk                       2 cup
salt                                 1 tsp
olive oil                         2 tbsp
garlic                              1 tsp grated 
onion                                1 finely chopped 
tomato                             3 chopped 
tomato puree                    1/2 cup
red chilly paste                 1 tsp
mixed vegetable                 1 cup chopped 
chicken                               1 cup stir fried 
oregano                                1 tsp
basil leaf                              1/2 tsp
grated cheese                       2 tbsp 


to garnish :

oregano            1 tsp
chilly flacks      1/2 tsp
black olive          2 tbsp chopped 
cheese                  2 tbsp 


method :



  • to prepare white sauce heat butter in a pan add refined flour and stir continuously .
  • remove pan from flame and add chilled milk and again place the pan on heat and keep stirring till the mixture get thicken .
  • remove from heat add salt in the end and set aside 
to make lasagna fillings :




  • to make filling for lasagna heat olive oil in other pan add grated garlic , add chopped onion , chopped tomato , tomato puree , salt and stir well .
  • add red chilly paste , chicken , and vegetables and stir fry on high flame.
  • add oregano and basil leaf at the end .

assembling :



  • to assemble lasagna  grease a oven proof dish with butter . and spread white sauce  in it .
  • there after place boiled lasagna sheet over sauce . place lasagna  sheet followed by white sauce and prepared mixture .

  • put oregano and grated cheese on it and repeat till filling  ends .
  • garnish with grated cheese black olive , red chilly flakes  , and oregano . 






  • and bake it in oven at 200 degree for 30 minutes and serve hot .
