hydrabadi mutton biryani


 preparation time : 30 minutes 
cooking time :30 minutes 












ingredients :


for mutton :

lamb meat / goat meat                  1 kg ( cut into pieces )
ginger paste                                     1 tbsp
garlic paste                                       1 tbsp
green chillies                                     2 finely chopped 
garam masala powder                     1 tsp
pepper powder                                 1 tsp
cumin powder                                    1 tsp
coriander powder                               1 tsp
turmeric powder                                 1/2 tsp
red chilly powder                                2 tsp
mint leaves                                          20 to 30
chopped cilantro                                  2 tbsp
fried onion                                           3 tbsp
yogurt                                                2 cup 
lime juice                                             2 tbsp
ghee/ butter                                        4 tbsp
salt to taste 


for rice : 

basmati rice                                         3 cup  soaked in water for 30 minutes 
caraway seeds ( shah zeera )            1/2 tsp
black cardamom                                  2
green cardamom                                  4 - 5
clove                                                      4 - 6
black peppercorn                                  10- 12
mace blade                                            1
star anise                                               1
cinnamon stick                                      1 inches 
bay leaf                                                   2
salt   to taste 
oil                                                          1 tbsp


for assembling :

mint leaves                                      2 tsp chopped 
cilantro                                             2 tbsp chopped 
fried onion                                        1 tbsp
saffron strands                                  1/2 tsp
garam masala                                    1 /2 tsp
milk                                                     1/2 cup
ghee / butter                                      2 tbsp
kevra water                                           1 tbsp
rose water                                             1 tsp
boiled eggs                                           2
foil paper                                           1



method :


marination :



  • take mutton pieces into a big bowl  add ginger paste , garlic paste , garam masala powder , green chillies , pepper powder, cumin powder , coriander powder , red chilly powder ,turmeric powder ,mint leafs , cilantro / coriander  leaves ,salt to taste ,fried onions mix well .

  • add yogurt , ghee ,and lemon juice and mix well .make sure all mutton pieces are well coated with spices .

  • cover it with plastic wrapper and set it into fridge for 2 hours to marinate.

preparation for rice :


  • take a muslin cloth ,put black cardamom , green cardamom , cloves , black peppercorn ,star anise ,mace blade ,and tie it like small pouch .
  • now boil 3 to 4 cup water in a pan pan when it start boiling add salt , caraway seed , bay leafs into boiling water .
  • now add drained soaked rice and cook on high flame . when rice cook about 40 %remove half of the rice . and set aside . cook the lest rice till it get 50 % cooked and now drain the water .and set aside .

assembling :


  • take warm milk and add saffron strands and mix well . and set aside 



  • take a big pan and now spread marinated mutton evenly on the bottom of the pan .spread fried onion on it now put 40% cooked rice evenly like a layer .on it again spread fried onion ,cilantro , mint leafs, and garam masala powder  .


  • now put 50 % cooked rice layer . and spread it evenly . now on it again spread fried onion , cilantro , garam masala powder , mint leafs , ghee and saffron milk , kevra water , rose water  .


  • now put a foil paper on it and then cover with lid .make sure steam is not coming out from any where ,and cook it on high flame for 8 minutes .


  • now put a pan on gas and then place this pan over it and cook for at least 40 to 45 minutes on very slow flame . biryani will cook with mutton with its own steam . 

  • remove in a platter and garnish with boiled egg ready to serve with any raita .




Alert : for making biryani you must use heavy bottom pan to cook .
