Buffalo Chicken Bites

cooking time : 10 minutes preparation time : 10 minutes 










ingredients :


skin less chicken breast                      1/2 kg (cut it in 2 inches cubes )
refined flour                            1 cup 
white pepper  powder                           1 tsp
salt                                             1/2 tsp
baking powder                          1 tsp
corn flour                            1 tbsp
oil                                    1 tbsp
chilly powder                    1/2 tsp
chilled water                     as required 

for sauce :

chilly sauce                     2 tbsp
garlic crushed                 2 tsp
oil                                       1 tbsp
honey                                 1 tbsp



method :


  • in a bowl take chicken cubes , 1 tsp pepper powder , salt and mix well allow it to get marinade for 30 minutes . 
  • to make batter in a separate bowl take corn flour , 1/2 cup of refined flour , pinch of salt , 1 tsp baking powder , egg , 1 tsp red chilly powder , mix all the ingredients well . add water and make thick batter . 
  • now in a separate platter take left of refined flour  and add pinch of pepper powder , and pinch of salt . 
  • now take each chicken cubes first dust in refined flour then dip it into prepared batter and deep fry it oil till it get nice golden color . on medium slow flame . this gonna take about 5 to 6 minutes . 
  • remove in a platter and set aside . 


to prepare sauce :
  • in a pan heat up 1 tbsp oil add garlic and chilly sauce and sauté . 
  • now add fried chicken cubes in this and stir well till the chicken get well coated with sauce . 
  • remove in a serving platter and serve with creamy garlic sauce . 




iced tea (lemon mint iced tea)


cooking time : 10 minutes 

preparation time : 15 minutes 












ingredients :



tea bag                        1 
sugar                             2 tbsp
water                              1 cup 
lemon juice                       5 tbsp
mint leaf                         10-15
ice cubes               10 - 16

to garnish :

lemon slice            1 
mint leaf              2 




method :
  • in a tea pan take 1 cup of water and place tea bag in it and cook on slow flame for 5 minutes or till water get colored .
  • strain the water with the help of tea strainer and place this prepared tea water in a freezer for 20 minutes . allow it to get chilled .
  • place this chilled tea water in mixture jar add , lemon juice ,ice cubes , mint leaf ,sugar and grind it . 
  • remove in a serving glass garnish with mint leaf and lemon slice and serve immediately . 


Murgh musallam (spicy whole chicken )


cooking time : 30-40 minutes

preparation time : 15 minutes 










ingredients : 


1st marination :

skin removed whole chicken washed            1 to 1.5 kg 
lemon juice                                                     1 tbsp 
green chilly paste                                             1 tsp
ginger garlic paste                                              1 tbsp 

2nd marination :

curd                                                   1/2 cup
red chilly powder                             1 tbsp
fried onion                                           1/2 cup
coriander powder                                    2 tbsp 
cumin powder                                         2 tbsp
pepper powder                                      1 tsp
clove powder                                        1/2 tsp
cinnamon powder                                      1/2 tsp
ground star anise                                        1/2 tsp
salt                                                             1.5 tsp
ginger garlic paste                                       1 tbsp
tandoori masala                                           2 tsp
tandoori color / red food color              pinch 


others :

bay leaf                                              2
cinnamon stick                                    2  ( 1 inches each )
nutmeg powder                                      1/4 tsp
mace powder                                         1/4 tsp
green coriander powder                            1/4 tsp 
fennel seeds                                                 1 tsp
oil / ghee                                                             2 tbsp 


method :



1st marination :



  • make cuts on chicken tight , breast . 
  • take chicken in large mixing bowl and apply ginger garlic paste , green chilly paste , and lemon juice and mix well . set aside for 30 minutes to marinate . 

2nd marination :
  • take curd , red chilly powder , salt , ginger garlic paste , tandoosri masala , tandoori color , star anise powder , cinnamon powder , clove powder , coriander powder , cumin powder , pepper powder , fried onion , red chilly powder and mix well . 
  • pour this mixture over marinated chicken and rub this mixture too over the chicken , cover the bowl with plastic wrap and set it into refrigerator for at-least  5 to 6 hour or over night . 


roasting :



  • heat up 2 tbsp oil / ghee in a deep pan and add bay leaf , cinnamon stick and marinated chicken . cook the chicken on high flame for 3 to 4 minutes each side till chicken changes color . 
  • then pour the left over marination from bowl add nutmeg powder , mace powder , and green coriander powder and cover the pan and cook for 15 minutes. the flip the chicken and cook another side for more 15 minutes . on very slow flame . 
  • serve with naan , garlic naan , or simply with roti . or with steam rice . 
  • a royal dish is ready .

crispy cheese burger


 cooking time : 15 minutes

ingredients :


burger buns                2 
mayonnaise                  2 tbsp
chicken breast             2 
corn starch                  2 tbsp
refined flour                 3 tbsp
salt                            1 tsp
red chilly powder        1 tsp
vinegar                          1 tbsp
bread crumbs               1 cup 
tomato                            2 chopped in slices 
onion                              1 sliced 
cucumber                        1 sliced 
ketchup                            1 tbsp
crushed pepper                 1 tsp
cheese  slices              2 to 4
lettuce leave                             3 to 4
mustard paste                         1 tbsp 
oil to fry 

dip :

cheese mayo            1 cup




method :


  • in a bowl take refined flour , corn flour , salt , red chilly powder and vinegar mix well . add little water and make tick batter .  
  • take chicken breast and flatten it by using hammer / or kitchen roller . and put some salt and pepper on it and set aside . 
  • now dip each chicken breast in batter and deep fry it on medium flame until chicken get nice crispy golden color . remove in a platter and set aside . 


assembling :
  • cut burger bun length wise . and roast it for 1 minute . 
  • now spread mayonnaise on 1 side  and place lettuce leaf over it . followed by chicken pieces , cheese slice ,cucumber slice , onion slice , tomato slice and mustard paste &ketchup . 
  • cover it with other bun slice and serve with mayo sauce . 



chicken cheese rolls


cooking time : 15 minutes 
preparation time : 20 minutes 









ingredients :


chicken breast                3
grated mozzarella cheese         1 cup 
chopped green chillies          2 
salt                                     1/2 tsp
black pepper powder          1/2 tsp
bread crumbs                        1 cup
refined flour                           1 cup 
egg                                         1 
tooth pick                                   3 


preparation :







  • cut the chicken breast length wise and place it in a plastic bag . flatten it with the help of hemmer.  
  • now sprinkle some crushed black black pepper and salt on it and set a side . 
  • in a medium mixing bowl take grated mozzarella cheese add green chopped chillies . and mix well . 

  • now on each flatten chicken breast place chicken mixture and gently fold it . then seal it by using tooth pick . 
  • now dust each roll on flour mixture then dip  in egg mixture followed by bread crumbs . 

  • repeat the process with each chicken breast . 
  • heat up oil and deep fry it in oil on medium flame . 
  • remove in a serving platter and serve hot with honey mustard sauce . or with any dip

ingredients :


mayonnaise                 1/2 cup 
honey                             3 tbsp
mustard powder              1 tbsp
lemon juice                     2 tbsp 



method :

  • in a small mixing bowl take all the ingredients as above written quantity and mix well . 
  • serve it with any starter  as a dip .

spicy potato bread roll



cooking time : 10 minutes
preparation time : 15 minutes








ingredients :


potato boiled &peeled           3-4 
bread slices                            4 to 5 
green coriander chopped        1/2 cup
green chilly finely chopped          2 -3 
black pepper powder                  1/2 tsp
bread crumbs                          1 cup
red chilly powder                      1/2 tsp
rice flour                                2 tbsp
soya sauce                                2 tbsp
egg whites                                    2 
oil to deep fry 
salt to taste 





preparation :


  • cut the bread corners and remove . dip the bread slices in little water then gently remove the water from it and put this into a large mixing bowl . 
  • ad boiled peeled , and roughly mashed potato in in .. add green chopped chillies , fresh chopped coriander , black pepper powder , soya sauce , salt , rice flour , red chilly powder , and mix well . 
  • make small roll shape out of this potato mixture  and set aside . 
  • now dip the each potato rolls into beaten egg then coat it with bread  crumbs . make each rolls like that . 
  • heat up enough oil in a pan and fry it till it get nice golden color . 
  • remove in a serving platter and serve with simply ketchup or any dip you like . 
  • a delicious snack is ready to serve with tea or coffee .

tara garam masala

method :


  • grind all the ingredients all together and tara garam maala is ready to use 

spicy crispy chicken broast


cooking time : 20 minutes 

preparation time : 15 minutes 








ingredients :

white vinegar                                   2 tbsp
white pepper powder                        1 tsp
red chilly flakes                              1 tsp
mustard powder                             1 tsp
baking powder                              1/2 tsp
sugar                                                1 tsp
refined flour                                 1/2 cup 
rice flour                                        1/2 cup
garlic powder                                   1 tsp
onion powder                                     1 tsp
corn flour                                      1/2 cup
corn flakes  crushed                         1 cup
salt to taste                      
egg white                                           2 
oil to deep fry 


preparation:


  • in a pan take chicken pieces add white vinegar , and salt and  cover and cook it on very slow flame avoid burning . cook it till chicken get 80 % cooked .

  • in a platter take crushed corn flakes and set aside . 

  • in a platter take refined flour , corn flour , rice flour , salt to taste , mustard powder , chilly flakes , white pepper powder , garlic powder , salt to taste , sugar ,baking powder , onion powder and mix well .
  • in other bowl whisk egg white and set aside . 



method :
  • take chicken piece first coat it with flour mixture very well then dip it into egg mixture . the coat it with corn flacks crush .

  • heat up oil in a pan and deep fry the chicken on medium flame till it get nice golden color remove in a serving platter and serve immediately with  ketchup or with any sauce .

samose

cooking time : 15 minutes 

preparation time : 15 minutes 











ingredients :


for dough :

refined flour                1 cup
salt                              1/2 tsp 
carom seeds               1/4 tsp
ghee                            1 tbsp
water                           1/4 cup

for filling :
ginger garlic paste             1 tsp
cumin seeds                   1/4 tsp
coriander seeds              1/4 tsp
cashew and raisins             1 tbsp
coriander powder             1/4 tsp
red chilly powder              1/4 tsp
cumin powder                      1/4 tsp
potato boil                             2 
green chilly chopped            2 
coriander leaf chopped           1 tbsp

to serve with :


tamarinds sauce / green chutney        1 cup 




method :



to make dough :
  • take refined flour in a bowl add carom seeds , pinch of salt , ghee ,add water and kneed and make dough . set aside .

to prepare filling :
  • to prepare filling for samosa  heat oil in a pan add ginger garlic paste coriander seeds , cumin seeds , cashew , red chilly powder , coriander powder , cumin powder salt , boiled potato , green chilly, raisins , cashew and mix well .remove in a bowl . 
  •  take small round shape ball out of prepared dough and flatten it with the help of rolling pin . 
  • cut this rolled dough and make conical shape . as shown in pic . 
  • put the prepared filling into cone and seal it properly by pressing it . 
  • heat oil in a pan and deep fry it till it get nice golden color . 
  • remove in a serving platter and serve immediately with any sauce . 



golden rice with vegetable salad



cooking time : 20 minutes 

preparation time : 15 minutes











ingredients :

boiled rice                  2 cup ( about 80% cooked rice )
pineapple pieces         1 cup
carrot                          1 chopped
capsicum                       1 chopped seeds removed
lettuce leave                      1 cups chopped bite size pieces
onion                           1 chopped
cucumber                        1 chopped
oil                                     3 tbsp
fried almonds              1 tbsp 
raisins                          15-18


for salad dressing :

olive oil                       2 tbsp
vinegar                        1 tbsp
lemon juice                1 tbsp
salt                             1/2 tsp
black pepper                 1/2 tsp
garlic chopped                 1 tsp


to garnish :
roasted almonds         2 tbsp chopped 





method :
  • in a pan heat up 2 tbsp oil and add 1 finely sliced onion allow it to get dark brown color . remove the oil from it and add 1/2 cup of water in it . add 80 % cooked rice . stir well and cover and cook on very slow flame for 3 to 5 minutes . or till the rice get fully cooked .

  • in a large mixing bowl take 1 cup pineapple chunks , 1/2 cup of steamed and chopped carrot ,1/2 cup of stir fried green capsicum , 1 cup salad leafs (chopped in bite size pieces .)2 tbsp raisins and 1 cup chopped cucumber .mix gently and set aside . 


for dressing :
  • in a small bowl take 2 tbsp olive oil , 1 tbsp white vinegar , 1 tbsp lemon juice , 1/2 tsp salt , 1/2 tsp crushed pepper powder and 1 tsp finely chopped ginger and mix all the ingredients well . 
  •  pour this mixture over prepared rice mixture and mix gently . 
  • remove in a serving platter and garnish with roasted copped  almonds .
