chicken Rajputana

cooking time : 20 minutes 
preparation time : Nil 













ingredients :

chicken                                                   1 kg
asafoetida powder                                 pinch 
fennel seed dry roast  powder                   1/2 tsp          
cumin seed dry roasted                              1/2 tsp
whole dried chilly powder (roasted )          1 tsp
whole coriander seed powder ( roasted )
red chilly powder                             1 tsp
salt to taste
sesame seeds                                    1 tsp
turmeric powder                                 1/2 tsp
cream                                               1 tbsp
garam masala powder                      1/2 tsp      
khatayee / amchoor(mango) powder        1/2 tsp
oil                                                        1/2 cup


for garnishing :

green coriander               1 tbsp chopped
green chilly slices            2
cream                              1 tsp


method :


  • heat up 1/2 cup of oil in a pan .add chicken pieces and sauté for 5 to 6 minutes and remove in a bowl and set aside. 
  • in a same oil add pinch asafoetida powder , and turmeric powder and stir .
  • add immediately fried chicken and sauté it for about 2 minutes on high flame . 
  • add crushed cumin seed powder , red chilly powder ,turmeric powder, roasted onion ,fennel seed powder, curd, salt  ginger garlic paste,mango powder, crushed red chilly powder , and sauté for 3 to 4 minutes more .
  • add 1/2 cup of water and cover the pan and cook for 6 to 7 minutes on slow flame .or till chicken get cooked fully .add cream and garam masala powder at last .
  • remove in a serving plate and garnish with cream , green chilly and coriander leaf .
