carrot pudding :



cooking time : 20 minutes 
preparation time : 10 minutes




ingredients :


carrot                              4 medium size finely grated .
sugar                                4 tbsp
ghee                                  4 tbsp
milk                                   2 cup
vanilla custard powder        2 tbsp
water                                   2 tbsp
green cardamom powder        1/2 tsp
chopped mixed nuts               1 tbsp.



method :

  • to prepare  custard boil 2 cups of milk in a sauce pan keep stirring , add 1 tbsp sugar and keep cooking of slow flame .
  • take 1/2 cup of water in a mini bowl , add vanilla custard powder and stir it till it finely dissolved . make sure there must not be any lump , now pour this slowly into boiling milk and continue stir  milk while you adding dissolved custard into milk .
  • keep stirring till milk get little thicken .close the flame and allow it to come on room temperature , then set it into fridge for 1 hour to get chilled .( u may use it even room temperature too ).
  • now in other sauce pan heat up 4 tbsp of ghee , and add grated carrot and keep sauté for 4 to 5 minutes on medium-slow flame .
  • now add sugar and sauté till sugar get melt and carrot get cooked fully . and ghee comes out . 


assembling :


  • now take fancy glass / serving glass place 1/2 of carrot mixture into it . then place a layer of custard milk and then again place left of carrot mixture followed by custard milk .
  • garnish it with roughly chopped nuts .
