spaghetti chicken / chicken scampi

cooking time : 20 minutes
preparation time : 10 minutes











ingredients :


dried pasta strips/spaghetti                         1 bunch 
boneless skinless chicken breast                  2 
all purpose flour                                           1/2 tbsp
salt                                                                 1/2 tsp
pepper powder                                              1/2 tsp
paprika powder                                                   1 tsp
grated ginger                                               1/2 tsp
grated garlic                                                  1 tsp
olive oil                                                           2 tbsp
green bell pepper                                          1/2 cup sliced lengthwise 
yellow bell pepper                                         1/2 cup sliced seed removed 
red bell pepper                                               1/2 cup sliced and seed removed 
onion                                                              1
garlic                                                            2 clove grated 
cheese                                                              2 tbsp grated ( mozzarella )
cream                                                             1/2 cup
onion powder                                               1 tsp
butter                                                              1 tbsp


to garnish : 


fresh parsley                                              1 tsp chopped 
grated cheese                                              1 tbsp




preparation :





  • in a heavy bottom cooking pan  boil plenty of water about 8 to 10 cup.add 1 tbsp salt an 1 tbsp oil and allow it to boil .when it starts boiling add dried spaghetti and cover the pan and cook for 10 minutes on medium heat . after that remove 1 cup of water from boiling pasta and drain excess water from pasta and immediately pour 2 cup of very chilled water on boiled spaghetti and drain again .now put i tsp oil on it and toss set the pasta aside in a bowl . ready to use .
  • in a bowl take chicken breast pieces add grated garlic ginger paste , pepper  powder , salt , paprika powder , .  cover the bowl with plastic wrap and set it inti fridge to marinade for 1 hour .
  • in a platter take all purpose flour add 1 tsp  onion powder , 1/2 tsp of salt , and 1/2 tsp pepper powder , mix well and set aside .
method :













  • grease a griller pan  with olive oil . dip the marinated chicken breast into prepared flour mixture . mix well . and fry it in olive oil about 4 to 6  minutes on both the sides .or until chicken get cooked .remove in a plate and set aside .

  • in other pan melt 1 tbsp of butter add grated garlic and sauté now add chopped onion and sauté till onion get nice light golden color .

  • add chopped red green and yellow bell pepper and stir . add 1 cup pastas left water and cover the pan and cook for 3 to 4 minutes till veggies get cooked .

  • pour 1/2 cup of cream grated cheese . and stir now add boiled pasta / spaghetti and mix well. add cheese and fresh   cream to have a boil and remove in a serving platter and spread grated cheese and parsley /coriander leaf  over it serve hot .
