lauki ka salan ( spicy gourd gravy )

cooking time : 20 minutes
preparation time : 15 minutes
serve: 5 


ingredients :



gourd                   1/2  kg peeled &chopped finely 
salt to taste 
tamarind pulp           1 tbsp
sugar                       1 tsp
turmeric powder         1 tsp
red chilly powder          1 tsp
coriander powder           1 tsp
mustard seed               1/2 tsp
oil                              4 tbsp
onion                          1 finely chopped 
chopped green chillies        2 
whole dried red chilly          2
cumin seeds                        1/4 tsp
fresh coriander leaf              2 tbsp



method :  

  • in a pressure cooker heat 1/4 cup of oil add chopped onion and sauté for 2 minutes . 

  • add chopped gourd ( lauki ) along with salt , turmeric powder , red chilly powder , sugar , coriander powder , and cover and cook till gourd get fully done . 

  • add chopped chilly , and tamarind paste and cover and cook 5 more minutes .

  • to prepare tempering for this in a pan heat 1 tbsp oil add cumin seeds , mustard seeds , and dry red chillies . when seed starts cracking down pour this over cooked gourd gravy  add chopped coriander leaf . and serve immediately with roti , or rice . 

how to make mint chutney . ( khatti meethi pudina chutney )

cooking time :  nil
preparation time : 10 minutes
serve:  as required









ingredients :

mint leaf             1 bunch
garlic clove           8
cumin crushed roasted         1 tsp
tamarind paste                 4 tbsp
jaggery                           2 tbsp
salt to taste
green chillies                    4

method :
  • put all the ingredients( mint leaf , garlic cloves , cumin crushed , jaggery , green chillies , , and tamarind paste ) in mixture jar and run it . make fine paste.  
  • and serve with kabab pav .bun kebabs ,tandoori chicken ,pani puri , sev puri , laddu pethi .and with salads etc   . 
note: if you dont have jaggery you can use sugar . or brown sugar to sweeten the chutney . you can use 1/4 cup of water while grinding

white chicken korma / chicken qorma


cooking time : 20 minutes

ingredients :


chicken skin less             1 kg chopped in large pieces 
salt to taste
green cardamom               4
bay leaf                          1
clove                      2
onion                        2
ginger                      1 tsp grated
garlic cloves              5
cumin powder           1 tsp
cinnamon stick             1
lemon                           1 
white pepper               1/2 tsp
yogurt                     250 grams
almond paste                3 tbsp
fresh mint leaf              1 tbsp
green chill paste           1 tsp
garam masala powder      1 tsp
mint leaf to garnish
oil                                1 cup
lemon slice        to garnish


method :  


  • take chicken pieces in a bowl add garlic cloves crushed and squeeze 1 lemon juice and mix well . add 1 cup yogurt and mix again . and marinate it for at-least 1 hours . 

  • now heat oil in a pan add cinnamon stick bay leaf , cloves , and chopped onion and sauté  till onion get nice golden color . 

  • add marinated chicken, salt and  sauté for 3 minutes on high flame . then a cover the pan on slow flame for 5 more minutes . 
  • add green chilly paste , cumin powder , white pepper powder, garam masala powder  and again mix well . cover and cook till chicken get cooked fully . 

  • add almond paste , and chopped mint leaf , and again cover and cook for 2 to 3 minutes on slow flame . when oils comes out remove in a serving bowl . 
  • garnish it with mint leaf and lemon slice . 

  • serve with naan . or with  rice . 












dhaba mix bhaji


this vegetarian recipe is too common at all dhabas ( small town restaurant ) . in other parts of country also known as bawli handi .

ingredients :


potato                3 
carrot                  3 chopped 
peas                    1 cup
tomatoes              2 chopped 
eggs                      boiled ( optional )
crumbled cottage cheese     1 cup
cumin                2 tsp
onion                2 
turmeric powder           1 tsp
chicken cubes                2
oil                              1/2 cup 
butter                             1 tbsp
cauliflower                 1 cup 
ginger garlic paste         1 tsp
coriander powder         1 tsp
red chilly powder           1 tsp
salt to taste 



method :  


  • heat oil in a pan add chopped potato , cauliflower , and sauté for 2 to 4 minutes . remove in a platter and set aside . 
  • in same oil  add chopped onion , and sauté till it get nice golden color , add 1 tsp ginger garlic paste and sauté , add chopped tomato , turmeric powder , red chilly powder , coriander powder , and chicken cubes , salt to taste and sauté  for 1 minutes . 
  • add fried vegetables. green peas , and 1/2 cup of water and cover and cook for 10 minutes . 
  • in the end add crumbles cottage cheese and fresh green chopped coriander chopped chilly . and mix well . 
  • remove in a platter and garnish it with butter , boiled eggs and crumbled cheese .

how to make chilly garlic sauce at home

cooking time : 10 minutes  
preparation time : 15 minutes
serve: as required   












ingredients :

dried kashmiri chilly whole         10
garlic cloves                            8
vinegar                                    1/2 cup
sugar                                         1/2 cup
salt to taste 
water                                       1/2 cup




method :



  • in a pan take white vinegar and kashmiri whole chillies and garlic clove .. boil it and after that grind it in mixture grinder .
  • in another pan boil 1/2 cup of water along with pinch of salt and 1/2 cup of sugar . when sugar syrup starts thickening add prepared chili paste and cook on slow flame for 3 to 4 minutes . 
  • your home made chilly garlic sauce is ready to use .
  • you can put this sauce on room temperature . and can use for more than 1 month .

nuts stuffed sweet pancake




cooking time : 20 minutes
preparation time : 15 minutes
serve: 6-10  





ingredients :


rice flour             1 cup 
refined flour        1 cup 
instant yeast               1 tbsp
oil                        2 tbsp
salt                          1/2 tsp
nigella seed          1 tsp
sugar              3 tbsp
oil to fry 



for filling :


pistachio chopped      1/4 cup
cashew chopped         1/4 cup
almonds chopped              1/4 cup
raisins                                1/4 cup
walnuts                              1/4 cup
grated mawa                      1/2 cup
brown sugar                          1/2 cup
cinnamon powder                 1/2 tsp




method :  



for filling :

  • in a mixing bowl take pistachio , almonds, cashew , walnuts, cinnamon powder , brown sugar raisins ,  , mawa , and mix well . set aside . 


for dough :

  • in 1/2 cup of warm water add 1 tbs instant yeast and cover for 10 minutes set aside . 

  • in a large mixing bowl take refined flour , rice flour , sugar , salt , oil 2 tbsp , nigella seed,  and mix . add activated east and add water make fine dough by kneading . 


  • cover it with plastic wrap and set aside at room temperature for 1 hour , 
  • when dough get double in size again knead it for 2 to 4 minutes . 

  • make balls out of the dough . and fill the prepared filling . again cover it and roll it gently with kitchen roller . 
  • heat oil in a pan and deep fry till golden color . 
  • serve as snacks at tea time .

how to make Hawaiian Haystack Or Chicken Sundae




cooking time : 20 minutes

ingredients :

skin less whole chicken        1 
lemon juice                        5 tbsp
garam masala powder              1 tsp
red chilly powder               1 tsp
clarified butter                     1/2 cup
grated onion                   2
ginger garlic paste            1 tbsp
crushed pepper                  1/2 tsp
egg                                     1
oil                                   1 tbsp



to serve with :



mixed salad                  1 cup 
lemon slice                    1 



method :  

  • in a large mixing bowl take lemon juice , , garam masala powder , salt to taste , ginger garlic paste , grated onion , crushed pepper , red chilly powder mix well .  add chicken and rub this paste over the chicken nicely . cover the bowl with plastic wrap and set in fridge for 2 hours to marinade . 
  • after that heat 1 tbsp oil in a pan and add marinated chicken with its whole marinade . and cover and cook chicken for 15 minutes . flip the chicken side after each 10 minutes . so that chicken get cooked evenly . 
  • add 1/2 cup of clarified butter in the chicken being cooked and sauté continues for 5 to 6 minutes . or till oil comes out and spices get coked . 
  • remove in a platter and serve with tandoori naan , and garlic bread .

bhuna keema paneer / spicy cottage chees with mutton mince

cooking time : 20 minutes
preparation time : 15 minutes

ingredients :


beef or mutton mince             500 grams 
salt t taste 
ginger garlic paste                1 tbsp
lemon juice                     2 tbsp
green chilly chopped            4 
tomato chopped                2 
onion                             1 chopped 
fenugreek seeds             few 
sour powder              1 tsp
garam masala powder       1 tsp
oil                            1/2 cup 
cumin powder           1 tsp
cumin seeds             1 tsp
turmeric powder         1 tsp
cottage cheese  chopped         200 grams
red chilly powder                  1 tsp
green fresh coriander           1 cup chopped 






method :  

  • heat  1/2 cup oil in a pan add chopped onion cumin seeds , and sauté till it get nice golden color . 
  • add mutton mince and sauté for 2 to 5 minutes  or till the water evaporates . 
  • add salt , lemon juice , turmeric powder , sour powder ,chopped tomato  , garam masala powder , red chilly powder , chopped green chilly , cover and cook for 20 minutes .
  •  in the end add 1 cup crumble cottage cheese and cover and cook for 5 minutes , mix well . 
  • remove in a platter and serve with rice , naan , roti , garnish with green fresh coriander .
