madrasi kadhi



cooking time : 15 minutes
 preparation time : 15 minutes
 serve:4


 












ingredients :


prom-fret                     2

grated fresh coconut          2 tbsp
lemon juice                 4 atbsp
salt to taste
vinegar                 1 tbsp
chopped ginger  garlic 1 tbsp
chopped tomato            300 grams
turmeric powder           1 tsp
poppy seeds                     1 tbsp
mustard seed                 1 tsp
curry leafs            1 tsp
onion paste 1 cup
coriander powder    1 tsp

red chilly powder       2 tsp
oil                             1/2 cup



 method :


  •  marinate fish with salt vinegar and 3 tbsp  for 20 minutes . 

  • in a blender jar take chopped tomato , grated coconut , chopped ginger garlic , poppy seeds and blend well . 

  • heat oil in a pan add curry leaf , red chilly powder , coriander powder , mustard seed, turmeric and chopped garlic . along with blended mixture . 
  • add fish and mix well . 
  • now add a cup of water . and cover and cook for 10 minutes . 
  • remove in a platter serve with rice .

schezwan fish

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4  


ingredients :


fish                       1
refined flour               1/2 cup
grated garlic             2 tbsp
schezwan sauce             4 tbsp
oil to deep fry
salt to taste
green onion to garnish


method :

  • take whole fish in a platter and rub 2 tbsp grated garlic over it , and salt , and marinate it for 2 hours in fridge .
  • in a platter take refined flour and season t with pinch of pepper and salt .
  • after that coat it with refined flour and and deep fry it in oil .
  • remove in a platter and cut into pieces . 
  • spread schezwan sauce over the fried


    fish , and garnish it with green onion .

fish curry

cooking time : 20 minutes
preparation time : 15 minutes
serve:6  


ingredients :

for fried fish :

surmai fish (king fish )                 1 kg 
ginger garlic paste                2 tsp
salt                        1/2 tsp
carom seeds powder        1/4 tsp
pepper powder                      1  tsp
oil                                     3 tbsp
rice flour                      4 tbsp 
red chilly flakes              1 tsp
lemon juice                     1 tbsp

for sauce :

curry leaf                        6 to 10
tomato paste                 1 cup
coriander powder             1 tsp 
turmeric powder                    1 tsp
finely chopped ginger               1 inch 
red chilly powder                       1 tsp
onion paste                             1/2 cup
lemon juice                            2 tbsp
oil                                     1/2 cup 
coriander leaf              1/2 cup chopped 


method :  

for fried fish :


  • in a large mixing bowl take fish pieces , ginger garlic paste , pepper powder , carom powder , salt 1/2 tsp , rice flour , lemon juice , red chilly flakes , 2 tbsp oil  and mix well , set aside for 30 -40 minutes to marinate . 

  • after that heat 2 cups of oil in a pan and deep fry it . until golden brown , remove in a platter and set aside . 





to make gravy :
  • to make gravy heat 1/2 cup of oil in a pan add curry leaf , and sauté for 30 seconds then add onion paste , red chilly powder , coriander powder and sauté  for 5 minutes . 

  • add tomato puree salt and cover and cook till oil comes out , and it simmer . 

  • add fried fish and give it a gentle stir , add lemon juice and fresh parsley / coriander leaf , and finely chopped ginger , close the flame . 

  • remove in a platter and serve  with plan white rice .

fried fish with bolognaise sauce

cooking time : 20 minutes
preparation time : 15 minutes
serve:3

ingredients :

fish                           1 kg boneless
chicken stock                1 cup

red chilly powder          1 tbsp
parsley                           1 tbsp
ginger garlic paste         1 tbsp
tomato puree                     1 cup
black pepper powder       1 tsp
salt to taste
tomato sauce                    1/2 cup
oregano                           1/2 tsp
basil leafs                          10-13
mushroom                        1 cup
corn flour                        4 tbsp
oil                           1/2 cup 





method :  
  • take boneless fish in large mixing bowl add corn flour , pepper powder , 1/2 tsp salt mix well set aside for 15 minutes . 

  • shallow fry it in 4 tbsp oil . both the side . and remove in a platter . 

  • in the same pan with same oil add ginger garlic paste and cook it till nice aroma comes out from ginger garlic paste . add tomato puree , chilly powder , 1/2 tsp salt , and oregano mix well and cover and cook for 3 to 5 minutes or till oil comes out from tomato puree . 

  • add 1/2 cup tomato sauce , and 1 cup chicken stock . and  cook it for 6 more minute . 
  • add fried fish , boiled mushrooms , and fresh chopped parsley . and close the flame . 
  • remove in a platter and garnish with parsley leaf . serve with rice .

Prawn fried rice

cooking time : 20 minutes
preparation time : 15 minutes
serve:  3




ingredients :

fresh garlic             6 cloves chopped 
prawns                     1 cup
oil                     3 tbsp
boiled rice           3 cups
green onion                1 cup chopped 
lemon juice                     2 tbsp
soya sauce                      4 tbsp

chilly sauce                     1 tbsp
Chinese salt               1 tsp
green chopped chillies       6
omelet                             to garnish 
brown sugar                1 tsp 




method :
  • heat up oil in a pan add chopped garlic add and stir for a while then add prawns and sauté for 2 minutes in oil then remove the prawns in a bowl and set aside . 

  • in the same pan add soya sauce , red chopped chillies , chilly sauce and stir for a while then add boiled rice Chinese salt , brown sugar , chilly paste 


    and give it a gentle toss . cover and cook on slow flame for 5 minutes . 
  • open the lid and add green onion , and add chopped eggs . serve immediately. 

you can try this recipe with shredded chicken too . choice is yours

sweet and sour fried fish

cooking time : 20 minutes
preparation time : 15 minutes  
serve :4

ingredients :
to marinate fish :

whole fish                  1 
salt to taste 
crushed black pepper         1 tsp
corn flour                           2 tbsp
garlic powder                 1 tsp
lemon juice                       4 tbsp
carom seed               1/2 tsp
oil to fry 

for sauce :
finely chopped ginger garlic          1 tbsp
brown sugar                                 1 tbsp
red chilly powder                        1 tbsp
salt to taste 
tomato puree                             2 cups
tomato ketchup                    5 tbsp
oil                                          3 tbsp
onion                                   1 finely chopped 
chopped capsicum                  1 cup 
ring onion to garnish 


method :  

to marinate fish :
  • gently wash fish then rub pepper powder and salt all  over the fish .and set aside for 30 minutes . 
  • after that add corn flour , lemon juice , carom seeds , and garlic powder .and rub well all over fish . 

  • grease a baking tray with oil and place the fish on it pour 1 tbsp oil on the top of the fish and bake it in oven at 200 degree for 15-20 minutes . (or you can fry it in pan too).
for sauce :
  • heat 3 tbsp oil in a pan add chopped ginger chopped garlic and stir for 1 minute . after that add tomato puree , red chilly powder , brown sugar , salt , ketchup and cook for 10 minutes .

  • after that add chopped onion and capsicum .and stir for a while and close the flame . 


assembling :

  • place the fish in a serving platter and pour sweet and sour sauce on the top . sprinkle green onion and serve with rice or with bread .
