oats utappam( semolina pancake )



preparation time: 10 minutes 
cooking time: 15 minutes 







ingredients:


semolina                                         1 cup
salt                                            1/2 tsp
oats                                                    1 cup ground
water                                                  1/2 cup
fruit salt                                               1/4 tsp
vegetables chopped
(green capsicum , onion , corn)        1 cup
curry leafs                                        5 to 8 chopped finely 
green chilly                                        2 chopped finely 





method:



  • in a large mixing bowl take semolina ,ground oats , salt  and mix well . add 1/-2 cup of water and make fine batter .

  • add 1/4 tsp fruit salt and again mix well .


  • heat 2 tbsp oil in a non stick pan and spread gently over it . now with the help of spoon put batter on pan  (u can make what size you want of your pancake ).cook it on slow heat . 


  • now put vegetable mixture on it followed by chopped curry leafs and green chilly . then flip it and press it with the help of spatula so that vegetable get stick with pancake .

  • cook 1 minute on other side and remove in a serving platter . and serve with any sauce .

mango custard pancake

 cooking time : 10 minutes 
preparation time : 15 minutes 










ingredients :


custard powder                  2 tbsp
multi-grain flour / refined flour            1 cup
mango puree                                  1 /2 cup
milk                                                  1 cup
sugar                                                      3 tbsp
butter (melted   )                                    1/2 cup
chocolate sauce / honey                             4 tbsp
vanilla essence                                           1/2 tsp


method :


  • in a large mixing bowl take multi grain flour add mango puree and blend well with the help of electronic blender .

  • add milk and make smooth batter .add sugar vanilla essence , 2 tbsp butter , and custard powder mix well . get fine paste .

  • heat up a non stick pan and pour 2 to 3 tbsp batter over it .spread finely and make fine round tortilla shape . pancake shouldn't be too thick . cook from both the sides .

  • remove in a platter and spread honey or chocolate sauce or any thing you like . and roll it , spread some chocolate sauce on top and serve hot .

Blueberry pie


                                                           preparation time : 30 -40 minutes
                                                                       cooking time : 20 minutes



ingredients :

fresh washed and drained blue berry                  1 cup
sugar                                                                1 cup
refined flour                                                         3 cup
salt                                                                    1/4 tsp
baking powder                                                       1/2 tsp
egg                                                                         2 beaten
cream ./ melted cheese                                           1/2 cup
vanilla extract                                                                 1/2 tsp


for dusting :

ground sugar                                            2 tbsp
refined flour                                            1/2 cup
butter                                                          1/4 cup



method :







  • place the washed and drained blue berry into a baking dish .

  • in a large mixing bowl take refined flour / all purpose flour , salt baking powder , sugar, beaten eggs ,vanilla extract and mix then all together and make smooth batter .


  • now pour this batter into blue berry baking dish .


  • now to prepare  topping in a bowl take butter , refined flour , and ground sugar mix all together . and with the berries baking dish.


  • bake it for 15 to 20 minutes in preheated oven at 180 degrees .

maalpua ( mal pura )



cooking time : 15 minutes 

preparation time : 10 to 15 minutes 











ingredients :



refined flour                1  cup
semolina                      1 tbsp
casting sugar                             2 tbsp
baking soda                          1/2 tsp
milk                                  1 cup 
green cardamom powder    1/4 tsp 
egg                                       2
yellow food color              pinch
vanilla extract                     1/2 tsp
walnuts and cashew             1/2 cup (roughly crushed )
rabri                                     for serving ( 1 tbsp)
ghee                                     to fry about 4 to 5 tbsp



method :



  • in a large mixing bowl take refined flour , semolina,add casting sugar , green cardamom powder .vanilla extract  , yellow food color mix well .
  • add walnuts , break eggs , milk , mix well .and beat well and marinate it  for 2 hours .
  • now add baking soda and again mix well . 
  • heat up ghee in a large fry pan and with the help of deep bottom spoon spread the mixture and make round shape as shown in pic .
  • cook both the side till light golden color . 
  • remove in a plate and serve it with rabdi .
  • serve hot . immediately .

Note : consistency  of the batter should neither be too thick nor too loss .

spiced button idlis




preparation time : 5 minutes 
cooking time : 20 minutes 







ingredients :


semolina                               1 cup
curd                                      1 cup
water                                     1/2 cup
oil                                             1 tbsp
mustard seed                       1/2 tsp
curry leaf                               5 to 7 
onion                                           1 tbsp     ( finely chopped )
green capsicum                     1 tbsp    ( finely chopped )

tomato                                           1 tbsp   ( finely chopped )
salt                                               1/2 tsp
black pepper powder              1/4 tsp
green chilly                                2 (finely chopped )
chilly flakes                              1/4 tsp 
tomato ketchup                      2 tsp 

to boil :

water                                  4 cup


method :



  • prepare batter by mixing semolina , curd and 1/2 cup water in a bowl . mix well and keep aside for 5 minutes .

  • to make idlis boil 4 cup water in a pan .

  • grease idli moulds with oil and fill semolina batter in it .

  • place the filled moulds in the boiling water . cover the pan and steam and cook them for 10 minutes .


  • once done . unmould the idlis in a platter .

  • to fry idlis heat oil in a pan add mustard seeds , curry leaves , chopped onion , chopped tomato , chopped capsicum , salt black pepper powder , chopped green chillies , chilly flakes , tomato ketchup and button idlis mix every thing well and stir fry them on high flame for 3 to 4 minutes . 

  • serve in a platter.
