pooran puri ( how to make puran puri at home )



cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  












ingredients :

gram lentils                 1/2 kg 
turmeric powder            2 tsp
salt                                 1 tbsp
ginger garlic paste              1 tbsp
green chilly paste              1 tbsp ( according to taste )
chopped green coriander leaf     2 tbsp
cumin powder                       1 tbsp
garam masala powder            1 tsp
oil                                            1 cup 


to make dough :

flour                              3 cups
salt                          1 tsp
oil                        2 tbsp
water                    as required 
milk                                         1/4 cup 


method :  






  •  in a pressure cooker take grams lentils , turmeric powder , and 1 tbsp salt and 2 cups of water . boil it . make sure there should not be left water with lentils after boiling . 
  • grind the lentils in grinder .
  • add ginger garlic paste , chopped green coriander , chilly paste , cumin powder , garam masala powder . mix well . 

  • make nice dough with flour , salt , milk , oil and water . dough should not be to sticky . make dough like normal chapati or paratha .make small balls of dough like we do to make roti . 

  • roll it  with kitchen roller . put prepared mixture into it and again  make ball . make sure mixture get properly coast with the dough . 

  • again roll it . 
  • put it on fry pan . flip after 1 minutes . brush some oil over it on both the side when it get nice brown patches over it . 
  • serve immediately with mango.

how to make roghni naan /tandoori naan in oven /cheesy garlic naan

cooking time : 10 minutes  
preparation time : 15 minutes
serve: 5  











ingredients :

refined flour/ all purpose flour              2 cups 
instant yeast                      2 tbsp
sugar                             1 tsp
egg                               1
oil                            1/2 cup
baking powder             1 tsp
salt                            1/2 tsp
garlic chopped          4 to  5 cloves 
cheese grated                  1 cup
butter                            1 tbsp



method :  

  • in a  small ball take 1/2 cup of ( warm ) water add instant yeast  and 1 tsp sugar and mix well and set aside for 10 minutes . 

  • in a large mixing bowl  break one egg add baking powder , 1/2 tsp salt , oil 1/2 cup , and whisk . add yeast mixture and again whisk , now add refined flour and knead with palm . make fine dough by adding water . ( like pizza dough ) again set aside for 2 hours . 
  • after two hours again knead well . now make balls out of the dough ,roll it with kitchen roller . ( it must be thick ).

  • now put some cheese , and garlic over it .
  • bake it in pre



    heated oven at 200 degree for 10 minutes . 
  • remove and brush butter over it and again bake it for 2 to 3 minutes . remove in a platter and serve with malai chicken kadai , and any non vegetarian dish or with any chicken or mutton dish .  

some people prefer to have chilly flakes too if you too want little spicy than sprinkle 1/2 tsp chilly flakes at the time of putting garlic .

pudina paratha / mint flavoured tortilla

cooking time : 15 minutes  
preparation time : 15 minutes
serve: 5











ingredients :



mint leaf                        few 
clarified butter               1 cup
refined flour                   1 cup
garlic crushed                 1 tsp
salt                                  1/2 tsp
water                        as required to make dough 


method :  



  • in a mixing bowl take refined flour  1 tbsp clarified butter , 1/2 tsp salt and add water as required make dough , knead by using palm . cover with plastic wrap and set aside for at-least 30 minutes . 




  • after that roll the dough and flatten it by using kitchen rolling pin . great 1 tbsp clarified butter over it and all the mint leaf and 1 tsp garlic paste  then roll it . shown in picture . 






  • cut the rolled dough in equal size pieces and make fine balls . 




  • again roll each balls and flatten it make tortilla / roti shape .



  • put it on frying pan and cook it . when it get nice golden color on one side flip it . grease 1 tbsp clarified butter over it , cook both the sides . until golden crisp . remove in a platter and serve with any chicken qorma , or any bhaji .

aaloo ke parathe (stuffed potato tortilla )

cooking time : 10 minutes
preparation time : 15 minutes s
serve:4








ingredients :

flour                           2 cup
salt                             1/2 tsp
clarified butter               1 cup

for filling :

boiled potato                 3 medium size( mashed)
salt                              1/2 tsp
white cumin                 1 tsp
chopped green coriander leaf         2 tbsp
finely chopped green chillies           3
chilly flakes                             1 tsp
mint leaf                                    1 tbsp chopped
lemon juice                              1 tbsp
oil                                     1 cup

method :  




  • in a mixing bowl take flour add salt , 1 tsp ghee (clarified butter ) and add water and knead it with palm make fine dough . set aside for 15 minutes . 

  • to make filling in a mixing bowl take boiled potato , salt , roasted cumin , chopped green chillies mint leaf and coriander leaf , grated garlic and mix well . 


  • now take dough and make fine balls out of the dough . roll it with rolling pin (you can use dry flour here for rolling the dough  ).

  • now fill the enough potato mixture and again seal it . dip the ball in dry flour and again gently roll it with kitchen rolling pin . 

  • heat up pan and place the stuffed tortilla over it . pour 1 tbsp  oil/ clarified butter over it . flip it and again put 1 tbsp clarified butter on top . cook it until nice golden color on both the side . 
  • remove in a plater and serve with ketchup . perfect for vegetarian lunch box.

vegetable stuffed cheesy tortilla

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4

ingredients :

for dough :
wheat flor                     2 cups 
baking powder                1 tsp
salt                               1/2 tsp
clarified butter               1/2 cup 
yeast                            1 tbsp
milk                            as required 

for filling :

boiled and roughly mashed potato         3 
finely chopped onion                              1 
chopped green chilly              2
garlic clove chopped                      1 tsp
mint leaf                                   few
coriander leaf                          1 tbsp
cumin seeds                            1 tsp
red chilly crushed                             1 tbsp
pomegranate seeds                            4 tbsp
butter                                       5 tbsp
boiled green peas                    1/2 cup
cheese slice grated                    1 cup



method :  


to prepare dough :
  • in a large mixing bowl take refined flour , add 1/2 tsp salt , 1 tbsp yeast , 1 tsp baking powder , 1/2 cup of clarified butter and add water and make fine dough . knead it with the help of your palm and set aside  for 1 hour .
to prepare filling :
  • in a large mixing bowl take potato , finely chopped onion , peas , grated garlic , salt , mint coriander leaf ,roasted cumin seeds , red chilly crushed , pomegranate seeds and mix all well . 
to prepare kulcha/tortilla. 

  • now take the small amount of prepared dough and roll it with kitchen rolling pin and fill the prepared filing in it add piece of cheese  . and cover it . like we cover samosa , etc . 
  • put some flour and roll it with rolling pin and place it over pan .put some butter on top . and flip it . cook both the side until golden crisp . put both the side butter an remove in a platter and serve hot . 
  • you can give it in tiff-in box with sauce/ ketchup .

parat wala paratha (crispy layered tortilla )

cooking time : 20 minutes
preparation time : 15 minutes
serve:3







ingredients :

refined flour                 2 cups
salt                              1/2 tsp
sugar                             1 tsp
soda                            1 tsp
semolina                        2 tbsp
eggs                            2
milk powder                       3 tbsp
warm water                  as required


method :  

  • take refined flour , salt , semolina , soda , milk powder , sugar  in a large mixing bowl . mix well . 
  • break 2 eggs in it and again mix . 
  • now add water and knead by using palm . and make fine dough .
  • with the help of kitchen rolling pin make round shape tortilla . and brush 1 tsp melted clarified butter over  it and roll it .
  • now divide the roll in equal 3 to 4 pieces and make ball .
  • take each ball and with the help of rolling pin make tortilla . 
  • melt a cup of clarified butter in a pan and put the tortilla in it and shallow fry on medium heat . when it get light crispy golden color from one side flip it and cook another side . 
  • remove in a platter and serve with any roghni mutton .

murtabak / mutabak / keeme bhare parathe



cooking time : 20 minutes
preparation time : 20 minutes 






ingredients :

for dough

refined flour / wheat flour               3 cups
vegetable oil                                    2 tbsp
warm water                                    1 cup
salt                                                  1/2 tsp
egg                                                     1
oil/ butter                                              4 tbsp


for filling :
chopped onion                        1 
mutton/ beef / chicken  mince                            300 gram 
garlic grated                                                      2 tsp
salt                                                             1/4 tsp
tomato                                                          1 finely chopped 
coriander powder                                     1/2 tsp 
cumin powder                                              1/2 tsp
red chilly powder                                             1/2 tsp
fresh parsley                                                      1 tbsp
pepper powder 
chopped green onion                                             1 bunch about 1 cup
eggs                                                                      2 
olive oil    / butter                                              1 tbsp
grated cheese                                                      2 tbsp (optional)




method :

dough:


  • in a large mixing bowl take refined flour , salt oil , warm water , egg mix all and make fine dough by kneading with hands  . cover the dough with cotton cloth and set aside for 15 minutes . 
  • grease your hands with oil and divide dough into 4 to 6 equal parts and make smooth balls  set aside .


filling :


  • heat butter in frying pan add garlic and chopped onion and cook until onion get light golden golden color .
  • add meat mince/ keema , salt , pepper powder , red chilly powder , coriander powder , cumin powder and sauté till meat changes the color or 5 minutes 
  • add chopped tomato and cover and cook for 10 minutes or until meat get cooked fully . add fresh parsley and close the heat .
  • in a bowl break 2 eggs and add finely chograted cheese and mix well .
  • now add prepared mutton / chicken mixture and mix well .


assembling :

  • take ball of flour and by using your finger and palm enlarge its size as much as u can enlarge . 
  • put prepared mixture on middle of it and fold it from all the side . and make fine square shape .
  • place it in pre heated pan and grease some butter on it . flip it occasionally and cook it on very slow heat for 10 minutes / or until it get crisp light golden patches over it .
  • serve hot .

chicken stuffed paratha (stuffed chicken tortilla)


cooking time : 10-15 minutes

preparation time : 10 -15 minutes 










ingredients :





refined flour                                             2 cup
ghee/butter                                                     2 tbsp
salt                                                                   1/2 tsp
baking powder                                                   1/2 tsp
muslin cloth                                                    1 



for stuffing :

chicken mince (murg ka keema )                  250 gram 
onion                                                            1 finely chopped 
grated ginger                                             1/2 tsp
garlic    grated                                                       1/2 tsp
garam masala powder (all spice powder )              1/4 tsp
red chilly powder                                                    1/2 tsp
black pepper powder                                               1/2 tsp
roasted fennel powder                                           1/2 tsp
roasted cumin seed powder                                     1/2 tsp
green chilly                                                                1 finely chopped 
green coriander leaf (parsley chopped )                       2 tbsp
butter / oil                                                     


to garnish : 

any sauce or chutney                             1 cup



preparation :



  • in a mixing bowl take refined flour / wheat flour , add ghee, salt , baking powder , and hot milk and make dough .knead at-least 10 minutes and cover it with muslin cloth and set aside for 30 minutes.

  • n a pan heat oil / butter / ghee add chop grated garlic and sauté for 1 minutes . add chicken mince and stir for a while . add garam masala powder ,salt, chopped green chilly , red chilly powder , roasted cumin powder , roasted fennel powder , black pepper powder and cook on slow heat till chicken mince get cooked nicely .

  • add fresh chopped parsley .and mix well .


method :






  • take out dough from muslin cloth make 4 pieces . and make a fine ball  then roll it on kitchen roller and set aside 


  • now roll the 2nd ball same as previous . now put the prepared chicken stuffing on middle and grease corners of tortilla with water and place previous tortilla on it . and press tit finely that both get stick together .

  • now spread some powder flour over it and roll it gently . 

  • heat up a pan and place prepared chicken stuffed tortilla over it and cook on slow heat till it get nice golden color . spread ghee/ butter / oil over it and flip occasionally .


  • remove in a serving platter and serve with any sauce .

parat wala paratha/ layerd paratha / msemens


cooking time : 20 minutes
preparation time : 30 minutes















ingredients :

refined flour                 500 grams
semolina                     100 grams
yeast                                1/2 tsp
salt                                 1/2 tsp
butter/ghee/oil                  1 cup




method :








  • in a large mixing bowl take 500 grams of refined flour , 100 grams semolina , 1/2 tsp salt , 1/2 tsp yeast and mix well .

  • add little warm water and make fine dough .

  • knead the dough with your palm about 10 to 15 minutes . and set aside to rest for 10 minutes .

  • rub some butter over it . make sure dough is smooth and elastic . 
  • divide the dough in 5 to 6 equal parts .

  • in a bowl take 1 cup of melted ghee/ butter / or vegetable oil .
  • now dip the small balls into melted ghee / butter / oil and flatten it by using your fingers and palm as shown in picture .


  • continue flattening as much as thin you can do .


  • when your dough reach its thinnest 1/2 tsp of semolina over it . (that will help to keep the fold part separate ).


  • now fold it as shown in picture and make small square shape .(shown in picture .).and set aside .

  • now do the same with other ball and .after spreading  semolina .now place the pre made square into center of it and fold again .(shown in picture ). 


  • now flatten it with the help of your palm and finger .

  • heat up a non stick frying pan spread some ghee/ butter / oil over it and place this . and cook  and flip it occasionally till it get nice crisp golden color on both the side . this will take about 10 minutes on both the sides to cook . cook it on very slow flame .


  • remove in a platter and serve with soji ka  halwa or with any dessert you like.
