how to make bihari kabab role

cooking time : 20 minutes
preparation time : 15 minutes
serve: 6-10









ingredients :




chicken/ beef / mutton           1/2 kg    boneless
hung curd                                   100 grams
salt to taste
ginger garlic paste            1 tbsp
crushed ground cumin               1 tsp
crushed pepper                           1 tbsp
garam masala powder              1  tsp
brown onion paste           1
turmeric powder              1/2 tsp
mustard oil                     2 tbsp
sticks                       as required
charcoal                       as required




method :
  • in a large mixing bowl take hung curd , mustard oil , salt , ginger garlic paste , chilly flakes , garam masala powder , turmeric powder , and fried ground onion and miix well . 
  • add mutton / beef/chicken strips in it and  mix well . cover with plastic wrap and set in fridge for 2 hours ( if you are using beef/ mutton add 1 tbsp papaya paste ) . 
  • place  trips over sticks and  place over BBQ .( or in oven or you can deep fry too )
  • remove in a platter and serve with any chutney . 
  • or you can serve with bihari paratha . 

bihari paratha role

cooking time : 10-15 minutes  
preparation time : 15 minutes
serve:8-10





ingredients :

for paratha 

refined flour                1 cup 
clarified butter               1 tbsp
salt                                  1/2 tsp
water                           as required 
bihari kebabs             as required 

salad :

cucumber              1 sliced lengthwise 
tomato                    1 sliced lengthwise 
onion                    1 sliced lengthwise 

chutney :

tamarind pulp               2 tbsp
mint leaf                   1 cup 
salt to taste 
green chilly                3 to 4 
salt to taste 
cumin powder           1/2 tsp



method :
  • make fine dough with refined flour salt , and clarified butter . set aside for 30 minutes .
  • again knead with palm ,and make small balls . then roll it with kitchen roller  .
  • place them over pan and when it get patches over it flip .
  • rub oil / clarified butter .
  • remove in a platter and serve with bihari kebabs .
for assembling :
  •  take a paratha place bihari chicken(stick removed) over it followed by cucumber , onion , tomato slices . 
  • puts some chutney over it and role it . 
  • cut it with sharp knife . and serve .

how to make tikka boti ( salli boti )

cooking time : 15 minutes
preparation time : 15 minutes
serve:5

 


ingredients :

beef / mutton boneless               1/2 kg ( long in size ) 

ginger garlic paste                     1 tbsp
papaya paste                                1 tbsp 
green chilly paste                     1 tbsp
mint paste                           8 mint leaf 
garam masala powder         1/4 tsp
green coriander paste             1 tbsp
cream                                         1/2 cup 
egg                                           1 
refined flour                        1 /2 cup 
sate stick/ screwer's                  as required 
salt to taste 
oil to deep fry 

preparation :
  • marinate mutton / beef pieces , 
  • grind , mint , coriander leaf and green chillies together and make thick paste . 
  • break egg in a plate and add 3 to 4 drops of water and pinch of salt whisk . set aside . 
  • take refined flour in a platter and set aside . 


method :  
  •  take mutton pieces in a bowl add ginger garlic paste , mint , coriander , green chilly paste salt, garam masala powder  . and mix well marinate for 1 hour . 
  • later add 1/2 cup of cream and again mix well and marinate for 1 more hour . 
  • place the  marinated pieces over stick, coat each mutton/ beef stick in flour  and dip in egg mixture deep fry in hot oil on medium flame . flip when it get nice golden color . 
  • serve with any chutney .

khada masala gosht


cooking time : 20 minutes
preparation time : 15 minutes
serve:6  



ingredients :

mutton                  1 kg 
chopped onion                      4
yogurt                       1/2 cup 
tomato                          2 
bay leaf                           2
pepper whole                     10
dry whole red chilly              6
cloves                          3
green cardamom                2
black cardamom                 2
whole coriander crushed             1 tbsp
cumin powder                        1 tsp
gram masala powder             1 tsp
oil                              1 cup 
ginger garlic paste           1 tbsp
fresh coriander leaf          1 cup 
fresh mint leaf              10-12 leaf
green chillies                 7-10




method :


  • heat oil in pressure cooker add bay leaf , red chilly , cloves green cardamom , black cardamom , pepper , and coriander and sauté for 1  minutes . when nice aroma come out from mixture add ginger garlic pate and sauté for 1 minute more . 
  • add onion and sauté till onion get nice light golden color .
  • add mutton pieces with bone , green chilly paste , and sauté for 3  to 4 minutes , 
  • add tomato , salt , curd , garam masala powder and stir for a while . then cover and cook till mutton get fully done ( this may take 15 ,minutes )
  • now open the lid add fresh  green chillies , coriander and mint leaf , an sauté till oil comes out this may take 5 to 6 minutes . 
  • add a cup of water to make gravy . enjoy with rice or with naan .

bhuna keema paneer / spicy cottage chees with mutton mince

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4













ingredients :


beef or mutton mince             500 grams 
salt t taste 
ginger garlic paste                1 tbsp
lemon juice                     2 tbsp
green chilly chopped            4 
tomato chopped                2 
onion                             1 chopped 
fenugreek seeds             few 
sour powder              1 tsp
garam masala powder       1 tsp
oil                            1/2 cup 
cumin powder           1 tsp
cumin seeds             1 tsp
turmeric powder         1 tsp
cottage cheese  chopped         200 grams
red chilly powder                  1 tsp
green fresh coriander           1 cup chopped 






method :  

  • heat  1/2 cup oil in a pan add chopped onion cumin seeds , and sauté till it get nice golden color . 
  • add mutton mince and sauté for 2 to 5 minutes  or till the water evaporates . 
  • add salt , lemon juice , turmeric powder , sour powder ,chopped tomato  , garam masala powder , red chilly powder , chopped green chilly , cover and cook for 20 minutes .
  •  in the end add 1 cup crumble cottage cheese and cover and cook for 5 minutes , mix well . 
  • remove in a platter and serve with rice , naan , roti , garnish with green fresh coriander .

crispy mince swirls at home

cooking time : 20 minutes
preparation time : 15 minutes
serve: 10










ingredients :



samosa patti                 6 full size 

for filling :

mutton/beef mince       400 grams 
vinegar                       2 tbsp
ginger garlic paste        1 tbsp
onion                            1 large finely chopped
oil                             4 tbsp
cumin powder              1/2 tsp
salt to taste 
chilly paste             1 tsp

   

others :

fresh cream          1/2 cup 
egg                      2 
foil paper              1 large 
oil                      to deep fry 


preparation :

for stuffing :

  • heat oil in a sauce pan add chopped onion and sauté till it get re lucent in color . add ginger garlic paste and stir for a while . then add mutton/ beef mince and sauté for 4 to 5 minutes . 
  • add vinegar , cumin powder , chilly paste , salt , and 1/4 cup of water and cover and cook till it get fully done . 
  • after that sauté till water get dried away .set aside .


for egg paste . 

  • in a bowl break 2 egg and whisk little bit . then add cream and whisk again for a while set aside .  


method

  • place samosa patti over kitchen table and brush it with egg mixture then again put 1 layer of samosa patti over it , and brush egg mixture , then spread  prepared mutton/ beef mixture . over it . again put layer of samosa patti over it . brush egg mixture along with mutton/ beef mixture . repeat the processes till stuffing get over . 

  • after that cover the last layer of samosa wrap and fold it like role. 

  • now gently put this role over the foil paper and cover it . place it in freezer for 3 to 4 hours . 

  • after that unfold the foil paper and cut the chilled roll with sharp kitchen knife . 
  • now heat oil in a pan to deep fry . 
  • take each pieces of roll and first dip it in egg mixture then put it in hot oil . deep fry till it get nice light yellow color . 
  • remove in a platter and serve with any sauce

anjeer gosht ( spicy mutton with fig )




cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  




ingredients :



mutton with bone              1 kg 

fig                     250 grams
ginger garlic paste             2 tbsp
salt to taste 
chopped tomato              4 
onion                            2 chopped 
red chilly powder         2 tbsp
coriander powder     1 tsp
turmeric powder           1 tsp
crushed black pepper               1 tsp
oil                             1 cup
garam masala              1 tsp
green fresh coriander             2 tbsp chopped 



method :  

  • heat 1 cup oil in a pan add ginger garlic paste and stir for a minute. then add chopped onion sauté till it get nice golden color . 
  • now add mutton and sauté for 4 to 5 minutes on high flame . 
  • add tomatoes , crushed black pepper , turmeric powder , red chilly powder , coriander powder , garam masala  and fig and sauté for 3 to 4 minutes . 
  • add 1 cup of water and cover and cook till mutton get fully cooked . 
  • after that sauté for 5 to 8 minutes . till oil comes out . remove in a serving platter and garnish it with fresh chopped coriander . 
  • serve with roti  , naan

how to make mutton kebabs / keeme ke kabab

cooking time : 10 minutes
preparation time : 15 minutes
serve: 6-8













ingredients :


mutton mince           1 kilo grams 
bread slices             5 to 6
chopped onion             2 
white vinegar            1 tbsp
crushed chilly flakes     1 tsp
chopped green chillies     7
chopped green coriander    1 cup
mint leaf                                 few
salt to taste 
ginger garlic paste           1 tbsp
egg                                  1 
lemon slices                 1  to serve . 
oil to fry                      1 cup 





method :  

  • roughly chop the bread slices and put it in grinder jar run it . when it get crushed add mutton mince with ginger garlic paste , salt , white vinegar , crushed red chillies , and chopped onion and again run it . remove in a mixing bowl . 

  • now add chopped green chillies , chopped green coriander , break one egg in it and mix well . now make small shapes of kebabs and stir fry both the side in oil .

  • serve with  lemon slices and paratha or roti or with naan .

cinnamon stick                1 
turmeric powder               1 tsp
chopped tomato                 4
green cardamom                     2
curry powder                      1 tsp
pepper powder              1 tsp
chilly flakes                1 tsp
potato                            1 
curry leaf                2 
oil                            3 tbsp
salt to taste 
bun                          4



method :  


  • heat 3 to 4 tbsp oil in a pan add chopped onion ,cinnamon stick , curry leaf ,green cardamom and sauté till onion get nice re-lucent color , add ginger garlic paste , and mutton mince sauté for for 3 minutes . 

  • add salt , curry powder , chopped tomato , chopped potato and cover and cook for 5 to 8 minutes . or till it get done . 

  • make fine hole in bun and put this mixture on it . 
  • serve immediately .

ingredients :

to prepare kebabs :

mutton/beef mince                    1 kg 
salt to taste 
ginger garlic paste              1 tbsp
green chopped fresh coriander       2 tbsp
onion                                2
green chillies                      7 
cumin powder                          1 tbsp
egg                                1



for biryani :

boiled rice                 1/2 kg 
onion                        3
ghee                          1 tbsp
oil                          1 cup
ginger garlic paste         1 tbsp
red chilly powder         1 tbsp
cumin powder                  1 tsp
turmeric powder              1 tsp
tomatoes                3
mint leaf                     1 bunch 
coriander leaf              1 bunch 
green chillies              5
bay leaf                      1 

whole black pepper corn            6 
lemon                             2



method :  




  • take mutton mince salt , ginger garlic paste , 2 onion , 1 tbsp cumin  powder ,6-7 green chillies . fresh green chopped coriander leaf and mix well , break one egg in it and again mix , make balls out of the mixture . and set aside . 



  • heat oil in a pan add chopped onion and sauté till it golden brown color , add chopped tomatoes along with red chilly powder , bay leaf , pepper corns, cumin , and turmeric powder , salt , and sauté cover and cook for  5 minutes on slow flame 1 cup water . when oil comes out put kebabs ball on i gently and again cover the lid . and cook 5 minutes more .add chopped fresh coriander chopped fresh mint leaf green chillies and lemon juice .

  • add rice over it followed  by ghee / clarified butter and cover and cook on slow flame for 15 minutes . 
  • sere with any raita .

spicy meat balls ( kofta masala )

cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  


ingredients :

meat balls :

mutton/beef mince      500 grams 
salt to taste 
ginger garlic paste           1 tsp
thyme                                1/2 tsp
black pepper powder                1/2 tsp
green fresh cardamom chopped         2 tbsp
green chillies                                            5
tommato puree              1 tbsp
egg                                   1
chilly powder                                   1 tsp
refined flour                        2 tsp
onion                                1 tbsp
milk                             1/2 cup
bread  crumbs               1/2 cup 
oil                             1 cup

for sauce :

caned tomato        1 cup 
salt                       1/2 tsp
chopped onion       1 
garam masala powder        1/2 tsp
sugar                                  1/2 tsp
garlic paste                1 tsp
chilly powder            1 tsp




method :  

to make meat balls :
  • take mutton mince , salt , thyme pepper powder , red chilly powder soaked bread crumb in 1 cup of milk , egg , onion , refined flour , tomato puree, black pepper powder , and ginger garlic paste , green chillies , and fresh coriander . run it . 

  • when it get well blended and all the spices get mix with meat remove in a bowl , and make fine balls out of this mixture . 
  • deep fry the balls in oil . set aside . 



to make sauce :
  • heat 2 tbsp oil in a pan and add garlic paste and chopped onion , when onion get golden color add tomato pulp ( caned )chilly powder , sugar , and garam masala powder mix well . when it get a boil . add fried meat balls and cover and cook on slow flame for 5 minutes . 

  • remove in a platter and serve with garlic bread or with rumali roti .

roasted mutton ( bhuna gosht )

cooking time : 15  minutes
preparation time : 15 minutes
serve:   5


ingredients :

mutton boneless             500 grams 
black pepper                  1 tsp

salt to taste 
ginger garlic paste          1 tbsp
curd                                1/2 cup 
green chillies                  4 finely chopped 
white vinegar                    1/2 cup 
oil                                     1/2 cup 
lemon juice                     8 tbsp 


method :  

  • cut boneless mutton/ beef pieces into bite size pieces ,  put it in a large mixing bowl add sat , pepper , curd , along with ginger garlic paste , and white vinegar . mix well . and cover with plastic wrap and marinate it for 30 minutes . 

  • heat 1/2 cup oil in a pan and add marinated mutton in it along with chopped green chillies and lemon juice and cover and cook on slow flame for 10 minutes . 

  • open the pan and sauté till oil comes out . remove in a platter and serve with paratha or naan .

tomato mutton curry

cooking time : 20 minutes
preparation time : 15 minutes
serve: 6   


ingredients :

mutton with bone               1 kg 
ginger garlic paste             1 tbsp
salt to taste 
red chilly powder             1 tsp
cumin powder                 1/2 tsp
turmeric powder             1/2 tsp
garam masala powder          1/2 tsp
whole cumin seeds              1 tsp
oil                                    1/2 cup
fresh chopped coriander/ parsley    1 tbsp
green chilly                           4 
tomatoes                           4 finely chopped 



method :  
  • in a pan heat up 1/2 cup oil add 1 tsp cumin seeds when it starts cracking add 1 tbsp ginger garlic paste and sauté . then add  mutton and sauté for 4 to 6 minutes . 
  • add salt , 1/2 tsp cumin powder 1/2 tsp turmeric powder , 1 tsp red chilly powder an sauté and add 1/2 cup chopped tomato and stir . 
  • add 1 cup of water and cook till mutton get fully done . and oil comes out from gravy . 
  • in the end add fresh chopped parsley , 4 chopped green chillies and 1/2 tsp garam masala powder . and serve . 

spicy beef mince with spinach ( hara keema )

cooking time : 20 minutes
preparation time : 15 minutes
serve:  4  


ingredients :

beef mince               1/2 kg 
salt to taste 
ginger garlic paste        1 tsp
red chilly powder           1 tsp
green chilly chopped          2 
cumin powder                  1 tsp

garam masala powder       1/2 tsp
onion                                    2 finely chopped 
sugar                                 1/4 tsp 
fresh chopped coriander             1 tbsp 
egg boil                                       1 to garnish 
oil                                     1/2 cup 







method :  
  • take spinach leaf in a  sauce pan add 1/4 cup of water and 1/4 tsp of sugar and cover and cook on slow flame for 5 minutes . after that remove in a mixture jar and make fine paste . set aside . 

  • in a pan heat 1/2 cup of oil and add chopped onion . sauté till onion get nice golden color then add ginger garlic paste and mince . and sauté on high flame for 2 to 4 minutes . 


  • add cumin powder , salt , chopped green chillies , and red chilly powder and cover and cook for 3 5 to 7 minutes . 


  • add spinach mixture and cover and cook till oil comes out . in the end add garam masala powder and chopped fresh coriander . giver it a nice toss. and remove in serving platter . 


  • garnish with boil egg .

kheeri kaleji bhuna masala ( mutton liver with spicy curry )

cooking time : 15 minutes
preparation time : 15 minutes
serve: 5 

ingredients :
liver                           300 grams chopped in small cubes 
salt to taste 
ginger garlic paste          1 tbsp
turmeric powder               1 tsp
coriander powder              2 tbsp
red chilly powder           1 tsp
green chilly                        7
onion                                 2 finely chopped 
green coriander                     1 cup 
garam masala                          1 tsp 
cumin powder                         1.5 tsp 
oil                                          1/2 cup 

method :  
  • in a pan heat 1/2 cup of oil add onion and saute till it get nice golden color . remove onion in mixture jar  and set aside . 
  • take 6 green chilly with fried onion and 1/2 cup of water in mixture jar and run it make fine paste . 
  • in the same pan with left over oil add chopped liver and saute for 5 to 7 minutes . add ginger garlic paste, and chilly and onion paste  and saute  for 2 minutes . 
  • add cumin powder , red chilly powder , coriander powder , salt and saute .for 3 to 4 minutes . 
  • add 1/2 cup of water , and 1 tsp garam masala powder and cover and cook for 10 more minutes . 
  • in the end add fresh chopped coriander leaf and serve with roti .

mutton kebabs nest

cooking time : 20 minutes
preparation time : 15 minutes
serve: 4  

ingredients :

boneless mutton / beef          500 grams
salt                       1 tsp
white vinegar             1 tbsp
water                           1 cup
ginger garlic paste        1 tbsp
pepper powder             1 tbsp
green chilly paste             1 tbsp
green coriander            2 tbsp
green chilly                    6 finely chopped
onion                             2 tbsp chopped
potato boiled and mashed        1 cup ( about 4 potato )
vermicelli              1  cup 
egg                         1
oil                       to deep fry 



method :

step 1 : in a pressure cooker take 500 grams of mutton / beef  add 1 tsp salt , 1 tbsp white vinegar , 1 tbsp ginger garlic paste , 1 tbsp pepper powder , 1 tbsp green chilly paste , and a cup of water and pressure cook it till the mutton get fully cooked . there must not be water after boiling mutton .



step 2 :  take the mutton pieces in grinder jar and run it make . make it in mince type . then add fresh chopped coriander and mashed potato , chopped green  chilly , chopped onion and mix all . then make egg shape balls out of the mixture .

step 3

: break 1 egg in a small bowl and whisk it .


step 4 : dip each balls in egg mixture then coat it with vermicelli . do it with each balls .


step 5 : deep fry it in oil . and garnish  and serve in fancy platter .

step 6 : serve with lemon slices .

step 7 : this recipe is best to win any cooking competition. any how at place of mutton mince you can use chicken mince too

pipli kebabs (beef mince kebabs )

cooking time : 8 minutes  
preparation time : 15 minutes
serve: 6


ingredients :


beef mince            500 grams 
salt to taste 
ginger paste             1 tsp
garlic paste              1 tsp
red chilly powder    1 tsp
white cumin              1 tsp
green chillies           6 
all spice powder        1 tsp
black pepper powder          1/2 tsp
cinnamon powder           1/4 tsp
raw papaya paste               1 tbsp
fresh coriander leaf          1/4 bunch
gram flour                     3 tbsp
long pepper powder                  1/2 tsp 
black cardamom powder       1/4 tsp
clarified butter                            2 tbsp
oil to fry 




method :  

  • in a grinder jar take beef mince , salt , garlic paste , ginger paste , raw papaya paste , cardamom powder , long pepper ,red chilly powder ,green chilly , white cumin , fresh coriander leaf and run it . 

  • after that add clarified butter , all spice powder , pepper powder , cinnamon powder , and again run it . remove it in a bowl . 

  • rub your palm with 1 tsp oil and make fine shapes of kebabs you like .

  • heat up oil in a pan and shallow fry kebabs . turn wisely so that beef get cooked from all sides evenly . 

  • serve with lemon slice and salad leafs.
