how to make Nizami roll

cooking time : 20 minutes
 preparation time : 15 minutes 
 serve:6-7









ingredients :


chicken mince            500 grams 
salt to taste 
red chilly powder     2 tsp 
ginger garlic paste        1 tbsp
cumin powder  1 tsp 

gram masala powder      1 tsp 
curd                           2  tbsp 
lemon juice          1 tbsp 
turmeric powder        1/2 tsp 
oil                         4 tbsp
charcoal               few pieces (to give smoky flavor to chicken )
foil paper                as required 

paratha :

refined flour                 2 cups 
salt                                1/2 tsp 
sugar                               1 tsp 
curd                                      1 tbsp 
milk                                     1  cup to make dough
baking powder                      1/2 tsp 
 clarified butter                      1 /2 cup 


others :
mint chutney            as required 
chopped onion rings       1 
chopped tomatoes              1 
chopped cucumber               1 
mint leaf                              as required 






 method :


  • take chicken mince salt, cumin powder , curd lemon juice , ginger garlic paste , cumin powder , red chilly powder , gram masala powder   , turmeric powder and salt to taste . mix well and marinate it for 30 minutes . 
  • heat oil and cover and cook chicken for 10 minutes on slow medium flame 
  • now heat charcoal and place it in a foil paper now put it over cooked chicken . 
  • now drop few  drops of oil and immediately cover tightly . and let it be like this for 10 minutes . 
to prapre dough .
  • take flour salt sugar , curd , baking powder in a bowl and add milk as required to make dough like chapati . 
  • cover it with plastic wrap and set aside for minutes . 
  • now make small balls out of the dough and roll it with kitchen roller . rub 1 tbsp clarified butter and again make roll . 
  • now fold it and make ball . again roll it with kitchen roller and make chapati . 
  • place it over hot pan and cook both the side . rub some clarified butter over it while cooking .
  • remove in a platter . do this with all balls . prepare few chapaties . 
assembling :
  • take chapati in a platter and now put prepared chicken ,chopped cucumber , mint leaf , mint chutney , tomato , onion ring and fold and make roll . 
  • serve in a lunch box . 



how to make chicken frankie / chicken roll

cooking time : 15 minutes
 preparation time : 15 minutes
 serve:6-8














ingredients :

chicken breast                3 chopped in strips
lemon juice                 1 tbsp
red chilly powder           1 tsp
turmeric powder               1/2 tsp
coriander powder               1 tsp
cumin powder                  1/2 tsp
green chilly chopped        2
green coriander                1 tbsp
ginger garlic paste              1 tbsp
salt to taste
onion                        1 chopped
oil                         3 tbsp

other :

onion            1 slices
tomato            1 sliced
beet                 chopped thin sliced
chutney                1 tbsp
egg                        5


Frankie dough :

refined flour             1 cup
flour                               1/2 cup
salt                              1 tsp
sugar                            1/2 tsp
baking powder               1 tsp
water                         as required




 method :

  • marinate chicken with lemon juice red chilly powder salt ginger garlic paste , coriander powder cumin powder for 30 minutes . 
  • heat 3 tbsp oil in a pan add chopped onion and saute for 1  minute , add marinated chicken and saute , cover and cook for 5 to 7 minutes . 
  •  set aside .


to prepare egg mixture :
  • in a bowl break all eggs add salt to taste and beat gently . set aside . 




to make chapati :
  • make fine dough with refined flour , salt sugar , baking powder , water , and flour . cover with wrap set aside for 15 minutes . 
  • make small balls out of the dough. and make chapati . 
  • rub 1 tsp onion on chapati and fold it . again roll it  
  • now place it on pan and cook one side . flip and cook another side too . 
  • pour 3  tbsp egg mixture and again  flip . 
  • remove in a platter . 
assembling :
  • now put prepared chicken , chopped tomato onion , chutney , beet rout ,corinder chopped , mint leaf,green chilly chopped and fold it . 
  • serve

gol gappe ka paani(khatta /meetha paani )

cooking time : 2 minutes
 preparation time : 15 minutes
 serve:6-8


 ingredients :

mint leaf                 1 bunch  stem removed
coriander leaf            1 bunch stem removed
black salt                   1/2 tsp
jagery /sugar                       1 big jaggry / 1 tbsp sugar
tamarind paste                3 tbsp
green chilly                 2 
paani puri masala        1 tbsp
chilled water                      3 cup 
roasted cumin                    1/2 tsp
roasted fennel seed            1/2 tsp
dry roast carom seed                            1/4 tsp 





 method :

  • in a mixer jar  take mint leaf , coriander leaf , black salt tamarind paste , green chilly , and 1/2 cup water grind well make fine paste . 
  • in a pan dry roast fennel seed , cumin seed , and carom seed altogether for 30 seconds , when nice aroma comes out from it grind it too . add this to mint water . mix well . 
  • add  jaggery , paani puri masala and 2 cups of water . mix well . 
  • with the help of tea strainer . drain water in a big jar . taste it . add sugar or black salt if needed .
  • serve chilled with paani puri .

how to make gol gappe at home (paani puri )

paani puri is a kind of street  fast food( a chaaat ) popularly famous in metropolitan city of india specially in mumbai delhi ,kolkata , and in some areas of pakistan .however its originated from varansi  famous with different different name with different variations and taste . in mumbai it is famous as paani puri chaaat and in delhi its known as gol gappe . 


 cooking time : 20 minutes
 preparation time : 15 minutes
 serve: 10-20



 ingredients :

puri /gappe                  20to 30
tamarind chutney       
dates chutney              1  cup              
khatta paani(flavoured water )                as required 
sev                         as required 1/2 cup (optional )
curd                       1/2 cup (optional)
boiled chick pea / boil yellow pea          2 cups
boiled potato                      2 roughly chopped 
turmeric                     1 tsp 
chopped tomato          1 finely chopped 
chopped onion         1 finely chopped 
chaat masala                pinch (optional )
fresh coriander leaf        to garnish 
salt to taste 



method :

  •  boil chick pea / yellow pea with enough water , 1 tsp turmeric and salt . dry up water if left after boiling . 
assembling :
  • place puri in serving platter . put boiled chick pea/yellow pea followed by boiled potato , sweet chutney , chilly chutney , curd , onion tomato, and garnish with sev and fresh coriander leafs  . 
  • serve with prepared khatta paani .

paratha chicken roll

cooking time : 20 minutes
 preparation time : 15 minutes 
 serve:5















ingredients :

to make paratha :

flour/ refined flour              1 cup 
oil                                      1/2 cup 
salt                               1/2 tsp 


to make chicken stuffing :

chicken mince                       1 cup 
butter                              2 tbsp 
garlic paste                      1 tbsp 
lemon juice                       2 tbsp
cumin powder                    1/2 tsp 
green chilly paste               1 tsp 
curd                                     4 tbsp
salt to taste 
turmeric powder               1/2 tsp 
chaat masala                       1 tsp

to serve with :

chilly garlic sauce                2 to 3 tbsp 
chopped sliced cucumber          few 
sliced onion rings                    1 
cheese grated                       optional (1/2 cup)
mint leafs                           few











 method :

to prepare paratha :


  • in a bowl take flour add salt and 1 tsp oil mix well . add water and make fine dough . cover the dough with plastic wrap and set aside for 20 minutes . 
  • after that remove plastic wrap and again knead . make small balls out of the dough and roll it on kitchen roller . 
  • place each over hot pan and flip occasionally . put some oil on both side . remove in a platter set aside . 




to prepare stuffing :

  • in a bowl take curd , garlic paste , salt , turmeric powder , cumin powder , chilly paste . mix well set aside for 20 minutes . 
  • heat some butter at pan and piut the marinated chicken over it . cover and cook for 10 minutes or until water dries and chicken get fully done . close the flame . 
  • add mint leaf , chaat masala , cheese(optional),lemon juice . give it a toss . 

assembling :
  • on paratha put prepared chicken and chilly garlic sauce followed by onions, cucumber and fold and make roll . cut it with sharp knife . 
  • serve immediately .

how to make fruit chaat

cooking time : 10 minutes
preparation time : 15 minutes
serve: 8














ingredients :

pineapple                      2 cups chopped 
apple                     1 chopped in small cubes seed removed 
banana                 1 chopped 
mango                   1 cup chopped 
black grapes /grapes             1 cup
condense milk                 1/2 tin 
milk                                 1 cup
cream                         1 cup
pineapple jelly                    1 cup 
mango jelly                      1 cup
sugar                                  2 tbsp
corn flour                1 tbsp


                     


method :  

  • chopped all the fruits and set aside . 
  • in a sauce pan take milk , sugar and add corn flour .stir till corn flour dissolve . place this on flame and continue stir till it get thicken . remove from flame set aside to get on normal temperature . 

  • after that add condense milk , cream and mix well . now add all fruits and jelly . .place this in fridge to get chilled .

  • remove in a serving glass and serve chilled . 

you can use any fruits like pomegranate , green grapes banana , according to your taste and preference , similarly you can use any jelly you like . its up to you .

how to make bihari kabab role

cooking time : 20 minutes
preparation time : 15 minutes
serve: 6-10









ingredients :




chicken/ beef / mutton           1/2 kg    boneless
hung curd                                   100 grams
salt to taste
ginger garlic paste            1 tbsp
crushed ground cumin               1 tsp
crushed pepper                           1 tbsp
garam masala powder              1  tsp
brown onion paste           1
turmeric powder              1/2 tsp
mustard oil                     2 tbsp
sticks                       as required
charcoal                       as required




method :
  • in a large mixing bowl take hung curd , mustard oil , salt , ginger garlic paste , chilly flakes , garam masala powder , turmeric powder , and fried ground onion and miix well . 
  • add mutton / beef/chicken strips in it and  mix well . cover with plastic wrap and set in fridge for 2 hours ( if you are using beef/ mutton add 1 tbsp papaya paste ) . 
  • place  trips over sticks and  place over BBQ .( or in oven or you can deep fry too )
  • remove in a platter and serve with any chutney . 
  • or you can serve with bihari paratha . 

bihari paratha role

cooking time : 10-15 minutes  
preparation time : 15 minutes
serve:8-10





ingredients :

for paratha 

refined flour                1 cup 
clarified butter               1 tbsp
salt                                  1/2 tsp
water                           as required 
bihari kebabs             as required 

salad :

cucumber              1 sliced lengthwise 
tomato                    1 sliced lengthwise 
onion                    1 sliced lengthwise 

chutney :

tamarind pulp               2 tbsp
mint leaf                   1 cup 
salt to taste 
green chilly                3 to 4 
salt to taste 
cumin powder           1/2 tsp



method :
  • make fine dough with refined flour salt , and clarified butter . set aside for 30 minutes .
  • again knead with palm ,and make small balls . then roll it with kitchen roller  .
  • place them over pan and when it get patches over it flip .
  • rub oil / clarified butter .
  • remove in a platter and serve with bihari kebabs .
for assembling :
  •  take a paratha place bihari chicken(stick removed) over it followed by cucumber , onion , tomato slices . 
  • puts some chutney over it and role it . 
  • cut it with sharp knife . and serve .

how to make pakode /bhajiya

cooking time : 10 minutes  
preparation time : 15 minutes
serve: 5-8


ingredients :


roughly grated potato    1 cup
chopped onion             1 cup
gram flour                    3 tbsp
chopped green chilly        5
white cumin                  1/2 tsp
crushed red chilly          1/2 tsp
turmeric powder           1 tsp
baking soda               1/2 tsp
green coriander leaf          2 tbsp
oil to fry 
salt to taste 


method :  

  • in a large mixing bowl take roughly grated potato , chopped onion , gram flour , crushed white cumin , crushed chilly flakes , turmeric powder , baking powder , green coriander leaf , and season it with salt . mix well for at-least 5 to 8 minutes . or until all vegetables get soggy . 
  • heat oil in pan .
  • and put 1 tbsp batter in oil . like pan cake . deep fry it until golden crisp. 
  • remove in a platter and serve . with ketchup .

how to make imli fries at home

cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  













ingredients :


potato                      2
tamarind pulp           1/2 cup
salt                     1/2 tsp
pepper powder         1 tsp
red chilly flakes           1 tsp
onion                           1 chopped ( optional)

capsicum                      1 chopped seed removed  ( optional)
tomato                             1 chopped ( optional)
cucumber                          1 chopped ( optional)
roasted crushed cumin           1 tsp
corn flour                             1/2 cup
sugar                             1 tsp
green chopped chillies          4
green fresh coriander           1 tbsp
lemon juice                        2 tbsp if you like .
oil to deep fry



method :

  • cut the potato Julian like fries shape . now sprinkle corn flour , pinch of salt , crushed black pepper . mix well . and deep fry in oil over medium slow heat .

  • in another sauce pan take tamarind pulp add crushed roasted cumin , chilly flakes , and salt . allow it to get a boil . set aside . 


assembling :

  • put fries in a serving bowl glass or platter then put tomato , onion , cucumber and capsicum finely chopped over it . 
  • now pour 1 tsp prepared tamarind pulp followed by chopped fresh coriander and green chillies chopped . immediately serve . 


( pour tamarind pulp over sauce only when you want to serve it , other wise fries will get soggy . )

how to make jalebi at home

cooking time : 15 minutes
preparation time : 15 minutes
serve: 20


ingredients :


to prepare dough :
refined flour                             500 grams
sugar                                           1 kg
food color  orange                 1/2 tsp
instant yeast                                    1 tbsp
saffron                              few strands
milk                                approx  1 cup ( warm )




method :

  • in a pan take 1 liter water along with 1 kg sugar boil it till it get nice little golden color , sugar syrup must not be too thick . add kewra essence few drops . 


  • in a large mixing bowl take refined flour add pinch of food color mix well . 

  • in another small bowl take 1 cup warm milk and add instant yeast . mix well now . set aside for 10 minutes let the yeast do its work now pout it in mixture along with rest of milk . mix well . 

  • batter must not be too thick nor too watery . cover the bowl with plastic wrap and set aside for 2 to 4 hours on room temperature . 

  • after that again whisk.  now put it in piping bag . and heat enough oil in a pan and make shapes you like deep fry  on medium slow flame until  crisp . flip it .mediately put it in hot sugar syrup let it be in it for 1 minutes . drain & remove . serve immediately  with malai ( milk upper  layer )

mutton mince              500 grams 
onion                       1 finely chopped 
ginger garlic paste         1 tbsp
cinnamon stick                1 
turmeric powder               1 tsp
chopped tomato                 4
green cardamom                     2
curry powder                      1 tsp
pepper powder              1 tsp
chilly flakes                1 tsp
potato                            1 
curry leaf                2 
oil                            3 tbsp
salt to taste 
bun                          4



method :  


  • heat 3 to 4 tbsp oil in a pan add chopped onion ,cinnamon stick , curry leaf ,green cardamom and sauté till onion get nice re-lucent color , add ginger garlic paste , and mutton mince sauté for for 3 minutes . 

  • add salt , curry powder , chopped tomato , chopped potato and cover and cook for 5 to 8 minutes . or till it get done . 

  • make fine hole in bun and put this mixture on it . 
  • serve immediately .

popular delicious and mouth watering street food among the youngsters , commonly in middle east countries like Dubai jaddah , Saudi Arab etc , now its common in India , as well as Pakistan . here we go .

preparation time : 15 minutes
serve: 6   


ingredients :

pita bread                6
chicken breast       500 grams
Juliann chopped onion       1 cup
chopped cucumber         1 cup
chopped tomato              1 cup
bite size chopped salad leaves     1 cup
garlic paste              1 tsp
white vinegar           2 tbsp
pepper powder        1/2 tsp
crushed chilly flakes    1 tsp
soya sauce                    1 tbsp
curd                          3 tbsp
chilly paste               3 tbsp
cinnamon powder       1/4 tsp
oil                                  3 tbsp
DP sauce                            2 tbsp
oil to fry               3 tbsp





for sauce 

salt to taste
garlic paste           1 tsp
white pepper             1 tsp
lemon juice                3 tbsp
hung curd                       1/2 cup
tahini                             3 tbsp

method :  



to prepare sauce :

  • in a mixing bowl take  hung curd , tahini sauce , 1/2 tsp pepper powder , lemon juice , 1 tsp garlic paste , and pinch of salt mix well set aside . 
  • now in a large mixing bowl take chicken breast pieces add , soya sauce , garlic paste , red chilly paste , chilly flakes , curd , oil , DP sauce , cinnamon powder , pepper powder , white vinegar , mix well and cover with plastic wrap set in fridge to get marinate at-least 30 minutes . 
  • after that heat 3 tbsp of oil in a pan and stir fry chicken . and cover and cook for 4 minutes , or till the chicken get cooked fully . 


assembling :

  • stir fry pita bread . now put 2 tbsp chicken pieces  followed by salad leaf , cucumber , tomato , and onion slices . 
  • then put 1 tbsp tahini sauce over it , and serve .if you dont have pita bread then use your buns .

fruit chaat ( fruit salad )

to beat the summer heat try this refreshing chilled fruit salad / fruit chaat , too common in India as a street food . 

cooking time : nil   
preparation time : 15 minutes
serve: 6  


ingredients :

chopped banana                  1 
chopped apple                   1 
chopped mango                    1 
chopped grapes                1 cup
chopped kiwi                   1 cup
pineapple                     1 cup chopped 

for dressing :


black salt  / sea salt             1/2 tsp
honey                     1 tbsp
roasted cumin powder         1/2 tsp
pepper powder                     1/4 tsp
lemon juice                           2 tbsp

method :  

  • take all the fruits( banana, apple mango , kiwi , grapes etc ) in a large mixing bowl toss all them together . 
  • in a separate small mini bowl take lemon juice , add honey mix well , then add pepper powder crushed roasted cumin and sea salt or black salt mix well . 
  • pour this over fruits and toss again . serve .

delhi roly poly chicken sandwich

cooking time :15 minutes  
preparation time : 15 minutes
serve: 4  









ingredients :

chicken boneless               250 grams 
chilly powder                    1 tsp
chilly flakes                          1 tsp
ginger garlic paste                  1 tsp
salt to taste 
roasted cumin powder      1 tsp
curry powder                        1 tsp
orange food color                  1/2 tsp
lemon juice                                1 tbsp
iceberg lettuces                           as required 
pickled beetroot                           as required 
chopped cucumber                              1 
capsicum thinly sliced                 1/2 cup ( optional )

sliced tomato                             1 cup
sweet mango chutney                    3 tbsp
cream cheese                               2 tbsp
mayonnaise                                 3 tbsp
tortilla                                         4 
oil                                       4 tbsp





method :



  • in a mixing bowl take boneless chicken pieces , chilly powder chilly flakes , ginger garlic paste , salt . roasted cumin powder , curry powder , and orange food color, mango juice  and mix well , marinate this mixture for 20 minutes . 
  • after that heat 4 tbsp oil in a pan and add marinated chicken and sauté for 2 minutes , cover and cook on slow flame for 10 minutes . 


assembling :
  • place tortilla in a plate  and put mayonnaise and cream cheese over it evenly , then put lettuce leaf , and pickled beet root , and sweet mango chutney . 

  • then put layer of chicken , cucumber and tomato , put 1 tsp mayonnaise again and roll it . and serve .

aaloo ke samose

cooking time : 10 minutes
preparation time : 15 minutes
serve: 5 



ingredients :



for filling :
mashed and boiled potato        1/2 kg
crushed red chilly                       1 tbsp
ginger garlic paste                    1 tsp
chopped onion                        1
garam masala powder              1 tsp
carom seeds ( ajwain )           1/2 tsp crushed
crushed coriander seed              1 tsp
freshly chopped coriander leaf           4 tbsp
chopped green chillies               6
feenel seeds                            1 tsp 
salt                                   1/2 tsp
oil                            to deep fry
green peas              1/4 cup 








method :

to make wrap ( samose ki patti ke liye ) 
  • in a large mixing bowl take refined flour add salt , 2 tbsp clarified butter and 1 tsp whole cumin seeds and make fine dough with enough warm water . knead gently . set aside for 15 minutes . 
  • make balls of dough and roll it with kitchen rolling pin . cut it from middle and make cone shape shown in picture . 



to make filling :


  • in a mixing bowl take mashed potato add Chinese salt , chopped green chilly, red chilly crushed , green coriander leaf , carom seeds , crushed coriander seeds , crushed fennel seeds , mix well and set aside . 


  • heat 1 tbsp oil in frying pan and add ginger garlic paste , and add green peas and stir for 3 minutes . then add potato mixture . and sauté . 


  • put this dough in cone mixture . then at the edge of cone put flour paste and  stick it . 

  • deep fry it in oil and serve  with any sauce .
