gol gappe ka paani(khatta /meetha paani )

cooking time : 2 minutes
 preparation time : 15 minutes
 serve:6-8


 ingredients :

mint leaf                 1 bunch  stem removed
coriander leaf            1 bunch stem removed
black salt                   1/2 tsp
jagery /sugar                       1 big jaggry / 1 tbsp sugar
tamarind paste                3 tbsp
green chilly                 2 
paani puri masala        1 tbsp
chilled water                      3 cup 
roasted cumin                    1/2 tsp
roasted fennel seed            1/2 tsp
dry roast carom seed                            1/4 tsp 





 method :

  • in a mixer jar  take mint leaf , coriander leaf , black salt tamarind paste , green chilly , and 1/2 cup water grind well make fine paste . 
  • in a pan dry roast fennel seed , cumin seed , and carom seed altogether for 30 seconds , when nice aroma comes out from it grind it too . add this to mint water . mix well . 
  • add  jaggery , paani puri masala and 2 cups of water . mix well . 
  • with the help of tea strainer . drain water in a big jar . taste it . add sugar or black salt if needed .
  • serve chilled with paani puri .

how to make gol gappe at home (paani puri )

paani puri is a kind of street  fast food( a chaaat ) popularly famous in metropolitan city of india specially in mumbai delhi ,kolkata , and in some areas of pakistan .however its originated from varansi  famous with different different name with different variations and taste . in mumbai it is famous as paani puri chaaat and in delhi its known as gol gappe . 


 cooking time : 20 minutes
 preparation time : 15 minutes
 serve: 10-20



 ingredients :

puri /gappe                  20to 30
tamarind chutney       
dates chutney              1  cup              
khatta paani(flavoured water )                as required 
sev                         as required 1/2 cup (optional )
curd                       1/2 cup (optional)
boiled chick pea / boil yellow pea          2 cups
boiled potato                      2 roughly chopped 
turmeric                     1 tsp 
chopped tomato          1 finely chopped 
chopped onion         1 finely chopped 
chaat masala                pinch (optional )
fresh coriander leaf        to garnish 
salt to taste 



method :

  •  boil chick pea / yellow pea with enough water , 1 tsp turmeric and salt . dry up water if left after boiling . 
assembling :
  • place puri in serving platter . put boiled chick pea/yellow pea followed by boiled potato , sweet chutney , chilly chutney , curd , onion tomato, and garnish with sev and fresh coriander leafs  . 
  • serve with prepared khatta paani .

how to make fruit chaat

cooking time : 10 minutes
preparation time : 15 minutes
serve: 8














ingredients :

pineapple                      2 cups chopped 
apple                     1 chopped in small cubes seed removed 
banana                 1 chopped 
mango                   1 cup chopped 
black grapes /grapes             1 cup
condense milk                 1/2 tin 
milk                                 1 cup
cream                         1 cup
pineapple jelly                    1 cup 
mango jelly                      1 cup
sugar                                  2 tbsp
corn flour                1 tbsp


                     


method :  

  • chopped all the fruits and set aside . 
  • in a sauce pan take milk , sugar and add corn flour .stir till corn flour dissolve . place this on flame and continue stir till it get thicken . remove from flame set aside to get on normal temperature . 

  • after that add condense milk , cream and mix well . now add all fruits and jelly . .place this in fridge to get chilled .

  • remove in a serving glass and serve chilled . 

you can use any fruits like pomegranate , green grapes banana , according to your taste and preference , similarly you can use any jelly you like . its up to you .

how to make mint chutney . ( khatti meethi pudina chutney )

cooking time :  nil
preparation time : 10 minutes
serve:  as required









ingredients :

mint leaf             1 bunch
garlic clove           8
cumin crushed roasted         1 tsp
tamarind paste                 4 tbsp
jaggery                           2 tbsp
salt to taste
green chillies                    4

method :
  • put all the ingredients( mint leaf , garlic cloves , cumin crushed , jaggery , green chillies , , and tamarind paste ) in mixture jar and run it . make fine paste.  
  • and serve with kabab pav .bun kebabs ,tandoori chicken ,pani puri , sev puri , laddu pethi .and with salads etc   . 
note: if you dont have jaggery you can use sugar . or brown sugar to sweeten the chutney . you can use 1/4 cup of water while grinding

how to make imli fries at home

cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  













ingredients :


potato                      2
tamarind pulp           1/2 cup
salt                     1/2 tsp
pepper powder         1 tsp
red chilly flakes           1 tsp
onion                           1 chopped ( optional)

capsicum                      1 chopped seed removed  ( optional)
tomato                             1 chopped ( optional)
cucumber                          1 chopped ( optional)
roasted crushed cumin           1 tsp
corn flour                             1/2 cup
sugar                             1 tsp
green chopped chillies          4
green fresh coriander           1 tbsp
lemon juice                        2 tbsp if you like .
oil to deep fry



method :

  • cut the potato Julian like fries shape . now sprinkle corn flour , pinch of salt , crushed black pepper . mix well . and deep fry in oil over medium slow heat .

  • in another sauce pan take tamarind pulp add crushed roasted cumin , chilly flakes , and salt . allow it to get a boil . set aside . 


assembling :

  • put fries in a serving bowl glass or platter then put tomato , onion , cucumber and capsicum finely chopped over it . 
  • now pour 1 tsp prepared tamarind pulp followed by chopped fresh coriander and green chillies chopped . immediately serve . 


( pour tamarind pulp over sauce only when you want to serve it , other wise fries will get soggy . )

fruit chaat ( fruit salad )

to beat the summer heat try this refreshing chilled fruit salad / fruit chaat , too common in India as a street food . 

cooking time : nil   
preparation time : 15 minutes
serve: 6  


ingredients :

chopped banana                  1 
chopped apple                   1 
chopped mango                    1 
chopped grapes                1 cup
chopped kiwi                   1 cup
pineapple                     1 cup chopped 

for dressing :


black salt  / sea salt             1/2 tsp
honey                     1 tbsp
roasted cumin powder         1/2 tsp
pepper powder                     1/4 tsp
lemon juice                           2 tbsp

method :  

  • take all the fruits( banana, apple mango , kiwi , grapes etc ) in a large mixing bowl toss all them together . 
  • in a separate small mini bowl take lemon juice , add honey mix well , then add pepper powder crushed roasted cumin and sea salt or black salt mix well . 
  • pour this over fruits and toss again . serve .

laddu pethian

cooking time : 20 minutes
preparation time : 15 minutes
serve: 10  

ingredients :
soaked gram lentil                    2 cup
carom seeds                           1/2 tsp
baking soda                           1/2 tsp
oil to fry

for green chutney :


green chillies                7
green coriander           1/2 bunch
garlic cloves                 2-3
mint leaf                        1/2 bunch
salt to taste
cumin seeds             1/2 tsp
tamarind pulp             1 cup

for plum sauce :
soaked plums        250 grams
roasted cumin seed        1 tsp
jaggery               2 tbsp
salt                 1/2 tsp

for serving :
onion sliced finely             1 cup
fresh coriander leaf         1 cup
potato boiled and roughly chopped     3

method :

for fritters / pakode

  • in a grinder jar take gram lentil, soda , carom seeds and blend well .make bowl shape and deep fry it in oil until golden color . set aside . 
for plum chutney :
  • boil soaked plum in water remove the seeds . then grind the plums in mixture jar . 
  • now put again this paste in pan and cook it add jaggery , salt , and roasted cumin cook for 3 to 5 more minutes . pour it in bowl and set aside . 
for green chutney :

  • in a blender jar take green coriander , 7 green chillies , mint leaf , garlic cloves , cumin seeds and tamarind pulp and 1/2 tsp salt make fine paste . pour this in separate bowl its ready to use . 
assembling :
  • take 2 laddu pethain ( fritters ) in a bowl add roughly chopped potato over it . 
  • then pour 1 tbsp plum chutney . and 1 tbsp green chutney . 
  • in the end sprinkle onion slices and coriander leaf .

stuffed chilly ( mirchi pakoda)

preparation time : 10 minutes 

cooking time : 10 minutes









ingredients :



chilly                 5 to 8
gram flour          2 tbsp
salt                     1/2 tsp
red chilly powder    1/2 tsp
cumin powder           1/2 tsp

turmeric powder             1/2 tsp
cooking soda               1/ 4 tsp
ginger garlic paste        1/4 tsp



for stuffing :


boiled potato ( mashed )             1 cup
cumin seeds                            1/2 tsp
oil                                        1 tsp
onion                                      1 finely chopped 
asafotida                                1/8 tsp 
garam masala powder             1/4 tsp 
green coriander leaf                1 tbsp
red chilly powder                   1/2 tsp
chopped green chilly                1 /2 tsp
turmeric powder                      1/4 tsp



to garnish :

tamarind sauce                            1 tbsp
whipped curd                              1 tbsp 


method :

  • in a medium size mixing bowl take chick pea /  gram flour . add salt , cooking soda, ginger garlic paste , red chilly powder , cumin powder ,mix well now add 1 cup of water and make thick paste .set aside .


  • now to make filling heat up little oil in a pan add cumin seeds, turmeric powder, asafoetida when it splutter  add onion and saute for 1 minutes add mashed potato green chilly chopped coriander leaf , red chilly powder ,salt, garam masala powder  and saute till all the ingredients get mixed well .close the heat .

  • now take big green chillies make cut length wise . now fill prepared potato mixture in cuts . and dip it into prepared batter and fry it in oil .on medium flame.


  • remove in a serving plate make pieces and spread 1 tbsp whipped curd on it and 1 tsp tamarind sauce .

chana batata ( spicy chick pea with potato salad )



preparation time : 10 minutes
cooking time : 30 minutes 








ingredients :


chicken pea     black               1 cup soaked water over night 
potato                                       2 medium size 
salt                                             2 tsp
chaat masala                                  1 tsp
lemon juice                                   1 tbsp
green coriander leaf                           1 tbsp
roasted cumin powder                        1/2 tsp



for tempering 

mustard seed                                 1 tsp
oil                                                      1 tbsp
salt                                                     1 pinch 
green chilly                                          4 finely chopped 
curry leafs                                        2
ginger garlic paste                            1/2 tsp




method :
  • in a pressure cooker take  2 cups of water add soaked drained chick pea (kala chana) add potato and salt .allow it to get boiled .
  • drain excess water from it and set aside .
  • remove potatoes too and roughly chop it .
  • now for tempering heat 1 tbsp oil in a tempering pan add ginger garlic paste and curry leaf , mustard seed and green fresh chilly , and cook it for 1 minute . when mustard seed starts cracking pour this mixture into boiled chick pea and potato mixture .
  • sprinkle,  roasted cumin powder & chaat masala over it .
  • add lemon juice and sprinkle fresh coriander leaf mix well .
  • serve .

sonth ki chatney (date,and taramind sauce)


preparation time : 10 minutes 
cooking time : 5  minutes 












ingredients :

dates                       6 to 8 (seeds removed soaked in warm water for 1/2 hour)
jaggery                    2 tbsp
salt                          1 tsp
tamarind                   1/2 cup soaked in warm water   for 30 minutes
chaat masala             1 tsp
black salt                   1 tsp
sonth powder (dried turmeric powder )
orange food color       pinch .
roasted cumin powder        1/2 tsp
red chilly powder               1/2 tsp



method :


  • take soaked tamarind and dates (seed removed )into mixture jar  add  1/4 cup of water  .and blend it and make fine paste .  with the help of tea strainer strain the soft part.    
  • put this mixture into a pan and boil it . now add black salt ,salt, sonth(dried turmeric powder ) powder ,roasted cumin powder , red chilly powder ,chaat masala ,and mix well .

  • now add jaggery and continue stir. remove in a bowl and ready to use .

chocolate pudding

preparation time : 10 minutes 
cooking time : 10 minutes 














ingredients :

biscuits                         6 
cocoa powder                  1 tbsp
sugar                                2 tbsp
milk                                  2 cup
cream                                3 tbsp
Vanilla essence                  1 tsp
seasonal fruit any               chopped         1 cup


for garnish :

kiwi                          1 chopped 
chocolate sauce         2 tbsp
strawberry                           10 -12


method :


  • take biscuits in a grinder , add milk sugar , cocoa powder and run
    it .
  • take 2 cup of milk and add it with the prepared mixture .
  • heat up a pan and pour this mixture into pan and stir while cooking .stir till it thickens .
  • remove in a bowl and let it be cool down for 10 minutes 
  • add cream , vanilla essence ,and chopped fruit and mix well .
  • serve in a  plate and and garnish it with chopped kiwi , chocolate sauce , and strawberry .

pani puri / golgappa
















ingredients :


for spicy water :

coriander leaves                            1 cup roughly chopped 
mint leaves                                     1/2 cup
green chilly                                     8 to 10
lemon juice                                       1 
dry mango powder                            1/2 tsp
pepper powder                                 1/4 tsp
red chilly powder                               1/4 tsp
ice cubes                                           10 to 20 
roasted cumin powder                         1/4  tsp



for sweet water :

jaggery   /sugar                         1 tbsp
tamarind                            3 tbsp
black salt                          1/4 tsp
dates                                 6 to 6 seed removed 
ice cubes                           10



for filling :

puri                                             10 - 15
yellow peas ( mutter )        1 cup       soaked in water over night 
salt to taste 
turmeric powder                   1 tsp


for spicy water :
  • take a mixture jar add coriander leaves , mint leaves ,green chilly , and lemon juice and blend well in mixture jar .
  • remove this into a bowl .
  • add black salt , dry mango powder . roasted cumin powder , salt pepper powder /and red chilly powder and mix well .and add ice cubes and water . and taste it 
sweet water :


  • take jaggery , tamarind ,dates and black salt into a mixture jar and run it . 
  • remove in a bowl and taste it .
  • add water and ice cubes , 

for filling :

take yellow peas , salt , and  turmeric powder in a pressure cooker ,add 1 glass water into it and boil it .
remove in a bowl and ready to use .
fill this into puri and dip into prepared water and serve immediately.

palak ki chaat /spinach chaat















ingredients :

spinach leaves                     10 to 12
gram flour                            2 tbsp
rice flour / corn flour             1 tbsp
red chilly powder                  1/2 tsp
onion seeds                           1/4 tsp
ajwain /carom seed                                 1/4 tsp
salt to taste 
oil to fry 

for chaat :

curd                            1 cup
sugar                           1/2 tsp
ginger powder sauce  
(sonth ki chatney )                1 tbsp
green sauce    
( hari chatney )              1 tbsp
nylon sev                        1/2 cup
chaat masala                1/2 tsp



method :




  • take gram flour in a bowl add rice flour , salt , ajwain , black seed ,and red chilly powder .
  • add water and make fine batter . 
  • now take spinach leafs and add into the batter mix well and deep fry in oil .
  • remove in a plate and set aside ,








assembling :

  • now place the spinach leaves into serving platter . add pour two table spoon curd over it . 
  • then pour two tbsp ginger powder sauce , then pour green sauce over it .
  • sprinkle nylon sev over it .
  • and sprinkle chaat masala on top and serve .

Bhel puri



Preparation time : 15 minutes
Cooking time :   Nil 



ingredients :



kurmura                               2 cup
thick sev (nylon sev  )               1 /2 cup
onion                      1/2 cup finely chopped
papdi                     6 to 8 crushed
green sauce               1 tsp
tamarind sauce          1 tsp
garlic sauce                    1/2 tsp
black salt              1/6 tsp
lemon                      1
raw mango           1/2 finely chopped
chopped cilantro       1 tbsp
potato                       1 boiled and roughly chopped








method :



  • take all the ingredients into a large ball and toss in such a way that all get mix well .


  • squeeze 1/2 lemon on that and again toss .mix well


  • remove in serving glass . or paper cone.garnish with chopped raw mango piece  . serve immediately
