how to make gol gappe at home (paani puri )

paani puri is a kind of street  fast food( a chaaat ) popularly famous in metropolitan city of india specially in mumbai delhi ,kolkata , and in some areas of pakistan .however its originated from varansi  famous with different different name with different variations and taste . in mumbai it is famous as paani puri chaaat and in delhi its known as gol gappe . 


 cooking time : 20 minutes
 preparation time : 15 minutes
 serve: 10-20



 ingredients :

puri /gappe                  20to 30
tamarind chutney       
dates chutney              1  cup              
khatta paani(flavoured water )                as required 
sev                         as required 1/2 cup (optional )
curd                       1/2 cup (optional)
boiled chick pea / boil yellow pea          2 cups
boiled potato                      2 roughly chopped 
turmeric                     1 tsp 
chopped tomato          1 finely chopped 
chopped onion         1 finely chopped 
chaat masala                pinch (optional )
fresh coriander leaf        to garnish 
salt to taste 



method :

  •  boil chick pea / yellow pea with enough water , 1 tsp turmeric and salt . dry up water if left after boiling . 
assembling :
  • place puri in serving platter . put boiled chick pea/yellow pea followed by boiled potato , sweet chutney , chilly chutney , curd , onion tomato, and garnish with sev and fresh coriander leafs  . 
  • serve with prepared khatta paani .

nuts stuffed sweet pancake




cooking time : 20 minutes
preparation time : 15 minutes
serve: 6-10  





ingredients :


rice flour             1 cup 
refined flour        1 cup 
instant yeast               1 tbsp
oil                        2 tbsp
salt                          1/2 tsp
nigella seed          1 tsp
sugar              3 tbsp
oil to fry 



for filling :


pistachio chopped      1/4 cup
cashew chopped         1/4 cup
almonds chopped              1/4 cup
raisins                                1/4 cup
walnuts                              1/4 cup
grated mawa                      1/2 cup
brown sugar                          1/2 cup
cinnamon powder                 1/2 tsp




method :  



for filling :

  • in a mixing bowl take pistachio , almonds, cashew , walnuts, cinnamon powder , brown sugar raisins ,  , mawa , and mix well . set aside . 


for dough :

  • in 1/2 cup of warm water add 1 tbs instant yeast and cover for 10 minutes set aside . 

  • in a large mixing bowl take refined flour , rice flour , sugar , salt , oil 2 tbsp , nigella seed,  and mix . add activated east and add water make fine dough by kneading . 


  • cover it with plastic wrap and set aside at room temperature for 1 hour , 
  • when dough get double in size again knead it for 2 to 4 minutes . 

  • make balls out of the dough . and fill the prepared filling . again cover it and roll it gently with kitchen roller . 
  • heat oil in a pan and deep fry till golden color . 
  • serve as snacks at tea time .

how to make pakode /bhajiya

cooking time : 10 minutes  
preparation time : 15 minutes
serve: 5-8


ingredients :


roughly grated potato    1 cup
chopped onion             1 cup
gram flour                    3 tbsp
chopped green chilly        5
white cumin                  1/2 tsp
crushed red chilly          1/2 tsp
turmeric powder           1 tsp
baking soda               1/2 tsp
green coriander leaf          2 tbsp
oil to fry 
salt to taste 


method :  

  • in a large mixing bowl take roughly grated potato , chopped onion , gram flour , crushed white cumin , crushed chilly flakes , turmeric powder , baking powder , green coriander leaf , and season it with salt . mix well for at-least 5 to 8 minutes . or until all vegetables get soggy . 
  • heat oil in pan .
  • and put 1 tbsp batter in oil . like pan cake . deep fry it until golden crisp. 
  • remove in a platter and serve . with ketchup .

how to make imli fries at home

cooking time : 20 minutes
preparation time : 15 minutes
serve: 5  













ingredients :


potato                      2
tamarind pulp           1/2 cup
salt                     1/2 tsp
pepper powder         1 tsp
red chilly flakes           1 tsp
onion                           1 chopped ( optional)

capsicum                      1 chopped seed removed  ( optional)
tomato                             1 chopped ( optional)
cucumber                          1 chopped ( optional)
roasted crushed cumin           1 tsp
corn flour                             1/2 cup
sugar                             1 tsp
green chopped chillies          4
green fresh coriander           1 tbsp
lemon juice                        2 tbsp if you like .
oil to deep fry



method :

  • cut the potato Julian like fries shape . now sprinkle corn flour , pinch of salt , crushed black pepper . mix well . and deep fry in oil over medium slow heat .

  • in another sauce pan take tamarind pulp add crushed roasted cumin , chilly flakes , and salt . allow it to get a boil . set aside . 


assembling :

  • put fries in a serving bowl glass or platter then put tomato , onion , cucumber and capsicum finely chopped over it . 
  • now pour 1 tsp prepared tamarind pulp followed by chopped fresh coriander and green chillies chopped . immediately serve . 


( pour tamarind pulp over sauce only when you want to serve it , other wise fries will get soggy . )

aaloo ke samose

cooking time : 10 minutes
preparation time : 15 minutes
serve: 5 



ingredients :



for filling :
mashed and boiled potato        1/2 kg
crushed red chilly                       1 tbsp
ginger garlic paste                    1 tsp
chopped onion                        1
garam masala powder              1 tsp
carom seeds ( ajwain )           1/2 tsp crushed
crushed coriander seed              1 tsp
freshly chopped coriander leaf           4 tbsp
chopped green chillies               6
feenel seeds                            1 tsp 
salt                                   1/2 tsp
oil                            to deep fry
green peas              1/4 cup 








method :

to make wrap ( samose ki patti ke liye ) 
  • in a large mixing bowl take refined flour add salt , 2 tbsp clarified butter and 1 tsp whole cumin seeds and make fine dough with enough warm water . knead gently . set aside for 15 minutes . 
  • make balls of dough and roll it with kitchen rolling pin . cut it from middle and make cone shape shown in picture . 



to make filling :


  • in a mixing bowl take mashed potato add Chinese salt , chopped green chilly, red chilly crushed , green coriander leaf , carom seeds , crushed coriander seeds , crushed fennel seeds , mix well and set aside . 


  • heat 1 tbsp oil in frying pan and add ginger garlic paste , and add green peas and stir for 3 minutes . then add potato mixture . and sauté . 


  • put this dough in cone mixture . then at the edge of cone put flour paste and  stick it . 

  • deep fry it in oil and serve  with any sauce .

healthy sandwich

ingredients :
brown bread slices                   5
egg white                                     2 hard boiled and chopped
cottage cheese                    300 grams
cucumber                     1 chopped
tomato                          1 chopped
black pepper                1/2 tsp
olive oil                    2 tbsp
salt                   1/2 tsp
lettuce leafs             few





method :
  • in a large mixing bowl take chopped hard boiled egg whites , chopped tomato , chopped cucumber , and 300 grams and crushed cottage cheese . toss all the ingredients well . 

  • add olive oil , salt and pepper to taste and filling is ready . 

  • now take brown bread slices and place salad leafs over it . put the prepared vegetables mixture over it and cover it with other brown bread slice . 

  • grill it over griller and serve in breakfast . 
this recipe is too good for the people who want to loose some weight and following strict diet schedule  or who are seeking the recipe or food which has low calorie and low fat as well healthy . enjoy the sandwich with a glass of juice .

how to make pizza (vegetarian)

cooking time : nil
baking time : 10-14 minutes
preparation time : 15 minutes

ingredients :

green capsicum                       1 
yellow and red bell peppers      1 cups Juliann chopped seeds removed 
boiled potato                       1 peeled sliced 
onion sliced                           few
mushrooms                          a cup boiled
black /green olives chopped 1/2 cup
baby corns sliced                  1/2 cups
chopped tomato                     1 
chilly flakes                1/2 tsp
oregano                       1/2 tsp 
mozzarella cheese            2 cups
pizza sauce                          1 cup
pizza dough                          as required 

method :  
  • spread 1 tsp flour over a baking tray and place pizza dough over it then flatten . 
  • put pizza sauce over it and flatten nicely 
  • now put mushrooms , potato , tomato ,capsicum , carrot , baby corns , olives over it . 
  • then sprinkle oregano and chilly flakes over it . 
  • then put a layer of mozzarella cheese over it and bake it in oven at 200 degree for 10-14 minutes . serve . 

you can use corns , chopped carrot , all kinds of bell peppers , cabbage grated for topping . if you don't have some of written above vegetables simply skip it and make it with your own types of vegetables . that will be delicious too am sure . have a try . for eggetarian you can place a layer of hard  boiled egg slices too

laddu pethian

cooking time : 20 minutes
preparation time : 15 minutes
serve: 10  

ingredients :
soaked gram lentil                    2 cup
carom seeds                           1/2 tsp
baking soda                           1/2 tsp
oil to fry

for green chutney :


green chillies                7
green coriander           1/2 bunch
garlic cloves                 2-3
mint leaf                        1/2 bunch
salt to taste
cumin seeds             1/2 tsp
tamarind pulp             1 cup

for plum sauce :
soaked plums        250 grams
roasted cumin seed        1 tsp
jaggery               2 tbsp
salt                 1/2 tsp

for serving :
onion sliced finely             1 cup
fresh coriander leaf         1 cup
potato boiled and roughly chopped     3

method :

for fritters / pakode

  • in a grinder jar take gram lentil, soda , carom seeds and blend well .make bowl shape and deep fry it in oil until golden color . set aside . 
for plum chutney :
  • boil soaked plum in water remove the seeds . then grind the plums in mixture jar . 
  • now put again this paste in pan and cook it add jaggery , salt , and roasted cumin cook for 3 to 5 more minutes . pour it in bowl and set aside . 
for green chutney :

  • in a blender jar take green coriander , 7 green chillies , mint leaf , garlic cloves , cumin seeds and tamarind pulp and 1/2 tsp salt make fine paste . pour this in separate bowl its ready to use . 
assembling :
  • take 2 laddu pethain ( fritters ) in a bowl add roughly chopped potato over it . 
  • then pour 1 tbsp plum chutney . and 1 tbsp green chutney . 
  • in the end sprinkle onion slices and coriander leaf .

kashmiri chay /kashmiri tea

cooking time : 20 minutes
preparation time : 15 minutes








ingredients :

green tea   (kashmiri tea leaves )                    1 tbsp
salt                                                1/2 tsp
sugar                                                 3 tbsp
soda bi carb (meetha soda)                 1/2 tsp
milk                                                  1 liter 
water                                               6 cups
green cardamom                                 4 pods crushed 
cashew &pistachio                         1 tbsp 


method :
  • in a sauce pan add 4 cup of water and boil it for 5 minutes .add 1 tbsp green tea&1/2 tsp of soda bi carb and cook on medium flame .till water get 2 cup .

  • slow down flame add 1 cup of water again and 1/2 tsp of salt and cook .while cooking take large spoon fill it with tea being cooking and pour it in same pan from some hight . (about 1/2 fit hight ). do the same until it get nice color .

  • after 10 minutes strain the tea in jar and set aside .


  • in another heat fresh 1 liter milk add 4 pods of green cardamom & 3 tbsp of sugar and cook . 
for serving :
  • pour the 1/2 cup hot tea mixture and add boiled milk till the cup  tea get nice pink color .
  • sprinkle nuts over it serve immediately .

boat clubs cheese toast/ cheesy toast


cooking time : 10 minutes preparation time : 10 minutes 








ingredients :

eggs                                     2
salt                                       1/2 tsp
pepper powder                      1/2 tsp
red chilly powder                    1/2 tsp
white vinegar                          2 tbsp
baking powder                       5 tbsp
red chilly powder                 1/2 tsp
mustard powder                       1/2 tsp
cheddar cheese grated              1/2 cup
water if required                      few spoons 
oil to fry
bread slices                             4

method :
  • break 2 egg , salt , pepper powder , mustard powder , 2 tbsp white vinegar vinegar ,red chilly powder , 5 tbsp refined flour 

  • add cheddar cheese and again beat , add water if required .
  • add 1 tbsp baking powder and whisk again with electronic beater . 

  • with the help of spoon place this batter over one side of bread slices. 

  • then deep fry it in oil . when it starts getting light golden color . 

  • remove and cut into pieces . then again re- fry it in oil and remove in a serving platter and serve immediately .

spicy caramel potato / aloo chaat .


cooking time : 15 minutes preparation time : 10 minutes 










ingredients :


baby potatoes              15 
honey                           1 tbsp
salt to taste 
oil to deep fry 
chilly flakes                 1 tsp
brown sugar                    2 tbsp
crushed roasted white cumin seeds        1 tsp
black pepper crushed                              1 tsp
lemon juice                                 4 tbsp
fresh coriander leaf  to garnish 

method :


  • boil the baby potato with 1/2 tsp salt and 1 cup of water . 
  • after that deep fry them in oil for 2 minutes only and set aside . 
  • in a sauce pan heat 1 tbsp of oil add boiled and fried potatoes, chilly flaked brown sugar , crushed cumin , crushed black pepper toss them together . in the end close the flame and add honey , fresh coriander leaf and lemon juice again toss it and remove in bowl serve immediately

spicy potato bread roll



cooking time : 10 minutes
preparation time : 15 minutes








ingredients :


potato boiled &peeled           3-4 
bread slices                            4 to 5 
green coriander chopped        1/2 cup
green chilly finely chopped          2 -3 
black pepper powder                  1/2 tsp
bread crumbs                          1 cup
red chilly powder                      1/2 tsp
rice flour                                2 tbsp
soya sauce                                2 tbsp
egg whites                                    2 
oil to deep fry 
salt to taste 





preparation :


  • cut the bread corners and remove . dip the bread slices in little water then gently remove the water from it and put this into a large mixing bowl . 
  • ad boiled peeled , and roughly mashed potato in in .. add green chopped chillies , fresh chopped coriander , black pepper powder , soya sauce , salt , rice flour , red chilly powder , and mix well . 
  • make small roll shape out of this potato mixture  and set aside . 
  • now dip the each potato rolls into beaten egg then coat it with bread  crumbs . make each rolls like that . 
  • heat up enough oil in a pan and fry it till it get nice golden color . 
  • remove in a serving platter and serve with simply ketchup or any dip you like . 
  • a delicious snack is ready to serve with tea or coffee .

samose

cooking time : 15 minutes

ingredients :


for dough :

refined flour                1 cup
salt                              1/2 tsp 
carom seeds               1/4 tsp
ghee                            1 tbsp
water                           1/4 cup

for filling :
ginger garlic paste             1 tsp
cumin seeds                   1/4 tsp
coriander seeds              1/4 tsp
cashew and raisins             1 tbsp
coriander powder             1/4 tsp
red chilly powder              1/4 tsp
cumin powder                      1/4 tsp
potato boil                             2 
green chilly chopped            2 
coriander leaf chopped           1 tbsp

to serve with :


tamarinds sauce / green chutney        1 cup 




method :



to make dough :
  • take refined flour in a bowl add carom seeds , pinch of salt , ghee ,add water and kneed and make dough . set aside .

to prepare filling :
  • to prepare filling for samosa  heat oil in a pan add ginger garlic paste coriander seeds , cumin seeds , cashew , red chilly powder , coriander powder , cumin powder salt , boiled potato , green chilly, raisins , cashew and mix well .remove in a bowl . 
  •  take small round shape ball out of prepared dough and flatten it with the help of rolling pin . 
  • cut this rolled dough and make conical shape . as shown in pic . 
  • put the prepared filling into cone and seal it properly by pressing it . 
  • heat oil in a pan and deep fry it till it get nice golden color . 
  • remove in a serving platter and serve immediately with any sauce .

dahi k kabab (stuffed curd kebabs )

 cooking time : 10 to 15 minutes 
preparation time : 15-20 minutes 










ingredients :


hung curd                        1 cup 
salt                          1/2 tsp
fresh parsley                1 tbsp
chopped chilly                    1 tsp
garlic grated                     1 tsp
gram flour                              3 tbsp
oil       to fry 
bread crumbs               1 cup


for filling :

cashew chopped                             1 tbsp roasted
almonds chopped                              1 tbsp roasted
pistachio  chopped                                1 tbsp roasted
hung curd                                                1 tbsp 


method: 
  • in a mixing bowl take hung curd add chopped parsley , chopped chillies , grated garlic and 3 tbsp gram flour and mix well and make fine dough . make fine balls out of the dough . and set aside . 

  • now in a small bowl take roasted chopped cashews almonds , and pistachio and mix . add 1 tbsp of hung curd and mix with them . 


  • now take each ball and make fine place by using your finger then place nuts filling and again make smooth round shape and slightly press with palm . then roll it in bread crumbs . 

  • make each balls like that .


  •  melt some butter / oil and fry each kebabs on slow flame until golden brown . 




  • serve with any sauce , preferably with ketchup .

hara bhara kkabab ( spinach kebabs )



cooking time : 10 minutes 

preparation time : 20 minutes 






















ingredients :



refined oil                     2 tbsp
chopped spinach              2 cups
yellow gram boiled         1/2 cups
bread crumbs                     1/2 cup
corn flour                              2 tsp
coriander powder                   1/2 tsp 
green cardamom powder         1/4 tsp
salt to taste 
red chilly powder                      1/2 tsp
chaat masala                                 1/2 tsp
black pepper powder                      1/4 tsp
cumin powder                                1/2 tsp
green chilly chopped                       2 
ginger garlic paste                      1 tsp
fenugreek leafs                                1/4 tsp
fresh coriander leaf/ parsley              2 tbsp chopped 

to garnish :
chaat masala                       1/2 tsp
fenugreek leafs                     pinch .









method :





  • to make hara bhara kabab ( spinach kebabs ) heat oil in a pan add chopped spinach and stir 2 to 3 minutes .



  • at the same time in another pan heat yellow gram and stir till it get little dry .remove in a mixing bowl .





  • in the same bowl add spinach , bread crumbs , corn flour , coriander powder , red chilly powder , cumin powder , chopped chilly , chaat masala , black pepper powder , fenugreek leafs , salt , ginger garlic paste ,
  • coriander leafs , cumin powder , chopped green chillies and mix well . make  a ball slightly press it by using your palm . 





  • in a pan heat 1 tbsp oil and place prepared kebabs and stir fry on both the side . 

  • remove in a serving platter and serve as snack

  • , or with any meal .
  • garnish with chaat masala , and fenugreek leafs
