Sunshine salad

cooking time : 20 minutes
preparation time : 15 minutes
serve:4















ingredients :

pine apple jelly                                1 cup
canned pineapple chunks                 1  cup
grated carrot                                  1 tbsp
grapes                                           1/2 cup sliced 
baby corn                                   1/4 cup chopped 
cottage cheese                         1/2 cup chopped in small cubes 
capsicum                                  1 tbsp finely chopped (optional)
lemon juice                                1 tbsp
salt                                             1/2 tsp 
sugar                                          1 tsp
pepper powder                              1/4 tsp
walnuts                                          1/2 cup

method :  


  • in a sauce pan  take 1 cup of water and add pineapple jelly and 1 tsp sugar and sauté till jelly and sugar get completely dissolved close the flame . (Do not boil it ).set aside and let the jelly get cool down at room temperature .

  • in a large mixing bowl take baby corn , canned pineapple , sliced grapes , cottage cheese ,  chopped capsicum , and grated carrot .and 1/2 cup roughly chopped walnut , toss all the ingredients all together . 

  • add 1/4 tsp pepper powder , 1 to 2 tbsp lemon juice , and 1/2 tsp of salt and again give it a nice toss . 

  • put this into any jelly mold or any platter . 
  • pour the jelly mixture over it and set it in fridge for 1 hour to get set . 

  • after that heat 1 cup of water in a pan and rub the hot water to jelly mold so that jelly will easy remove . 
  • serve chilled . 

note :
  1. please do not use fresh pineapple .you have to use canned pineapple .because fresh pineapple and cottage cheese will never be together . if you use fresh pineapple the taste of cottage cheese will turn little bitter.
  2. use can try this recipe with any fruits you love  like other color capsicums , green peas boiled , etc 

this recipe loved by my best friend .so i like it too i am big fan of walnuts thats why i use it if you like you can skip it too and add raisins or simply skip the nuts  , ☺
