bhagare baigan /spicy brinjal




cooking time: 15 minutes 

preparation time: 10 minutes 













ingredients:

brinjals                                            6 to 8 washed
coriander seeds                                    2 tsp
white sesame seeds                              2 tsp
coconut powder                                        2 tsp
garam masala                                           1/2 tsp
ginger garlic paste                                   2 tsp
peanuts                                                    2 tbsp
jaggery                                                      1 tsp
coriander leaf                                                 2 tsp
salt to taste 
red chilly powder                                     1 tsp 
cumin powder                                         1/2 tsp
oil                                                     3 to 4 tbsp
water                                                    1/2 cup
onion                                                     1 finely chopped 
tomato puree                                           2 tbsp
fennel powder                                   1/4 tsp 
tamarind pulp                                       1 tbsp 
coriander leaf                                        1 tbsp


to garnish:
coriander leaf                                       1 tsp



preparations:

  • in a pan take 1 tsp coriander seed ,2 tsp sesame seeds , 2 tsp grated coconut  stir for 30 seconds and remove in blender jar . add 1/4 tsp garam masala /

    all  spice powder , 2 tsp ginger garlic paste , peanuts 2 tbsp , 1 tsp jaggery , 1 tbsp coriander leaf ,1/2 tsp  salt ,1/-4 tsp red chilly powder , 1/2 tsp
    cumin powder , and 2 tbsp water & make smooth paste . 


  • make criss cross cuts on brinjals . 
  • put prepared mixture into cuts . 
  • heat up 2 tbsp oil in a pan and place stuffed brinjals into it and cook gently . both the side . slow down heat and cover and cook for 3 to 4 minutes .

to prepare gravy:

  • heat 3 tbsp oil in a pan and add chopped onion and cook until onion get light golden color , add salt ,1/2  red chilly powder , garam masala, 2 tbsp water , and tomato puree , and 1/4 tsp  fennel powder  and stir .
  • add stuffed and cooked brinjals , and gently stir .cover and cook for 5 minutes .
  • add 1 tbsp tamarind pulp and mix well . 
  • in the end sprinkle coriander leaf /parsley . mix well
