chicken quesadilla


cooking time: 15 minutes 
preparation time: 10 minutes 






ingredients:



left over chicken                  1 cup shredded 
tortillas                                  2 
cheddar cheese                   1 cup grated 
onion                                     1 finely chopped 
red bell peppers                         1 finely chopped 
cilantro /green coriander             1 tbsp finely chopped
salsa                                              2 tbsp
olive oil / vegetable oil                   2 tbsp


for toping / garnishing:

sour cream                        1/2 cup
hot sauce                           2 tbsp 
cilantro                             1 tsp 
grated cheese                    1 tbsp(optional)


preparation:



  • cut onion , fresh cilantro , red bell-pepper, and set aside .
  • cut left over chicken into small pieces .or you can cook the chicken too for that recipe here .
method:

  • heat up a 1 tbsp olive oil in a frying pan place tortilla on it .flame must be slow . place chopped onion and chopped bell-pepper over it evenly .spread salsa.
  • then spread cilantro , and cheddar cheese , or any grated cheese you like .and chicken pieces .cook it 2 to 3 minutes .

  • cover it with other tortilla. cook for 2 to 3 minutes  then flip  it with the help of two spatula carefully .

  • and cook other side for 2 minutes more .
  • remove in a platter . and cut it with sharp knife or with pizza cutter . 
  • spread sauce . 
  • and serve immediately 

for sauce:
  • in a medium size mixing bowl take 4 to 5 tbsp of sour cream add any hot sauce 2 tbsp and mix well .
