ingredients:
refined flour 1/2 cup
gram flour 1 tsp
corn starch 1 tsp
instant yeast 1 tsp
curd 1 tbsp
oil 1 tsp
yellow food color 1 /2 tsp
Luke warm water 1/3 cup
others :
oil to deep fry
rabri/ malayee 1/2 cup ( for serving optional)
sugar syrup (for sheera ):
sugar 1 cup
lemon juice 1 tbsp
water 1/2 cup
green cardamom powder 1/2 tsp
method :
- in a mixing bowl take refined flour , gram flour , corn starch , instant yeast , curd , 1 tsp oil yellow food color and mix well . now gently add water and mix well until you make fine batter set aside for 15 minutes .
- now in another pan take 1/2 cup of water add cardamom powder and lemon juice , then add sugar and make syrup .
- now in plastic wrap or in cotton cloth put the batter and make small hole on one side of the plastic wrap .
- heat up oil and make shapes of what you like of your jalebi in the hot oil and cook it on slow medium flame for 2 to 3 minutes .
- remove and immediately dip in sugar syrup flip it . then let it be in sugar syrup for 40 to 50 seconds then remove them in platter .
- serve with malayee .
tip :
- caution syrup must be neither too sticky nor to watery .
- syrup must be hot / warn when you add jalebi in it . end immediately remove after 40 to 45 minutes .
- batter must not be too watery .
