ingredients :
for mutton skewer :
mutton boneless 1 kg
roasted cumin powder 2 tsp
salt 1 tsp
ginger garlic paste 2 tsp
red chilly powder 2 tsp
lemon juice 1 tbsp
vinegar 2 tbsp
papaya paste 4 tbsp
sate stick 8-10 (soaked in water for 15 minutes before use )
oil 2 tbsp
for masala :
rice boiled (90% cooked )
potato 6-8 chopped in large slices .
onion 3 finely sliced
ginger garlic paste 1 tbsp
salt to taste
chopped tomato 8
whole green chillies 8 -12 (sliced )
yogurt 2 cups
dried plum 8-12 (soaked in hot water for 15 minutes )
milk 1 cup
saffron few strands
lemon juice 1 tbsp
fried onion 1 tbsp
red chilly powder 3 tsp
coriander powder 2 tsp
turmeric powder 1 tsp
clarified butter / oil 1 cup
coriander leaf 1 cup finely chopped
mint leaf 1 cup finely chopped
garam masala powder 2 tsp
bay leaf 2
black pepper corn 6
cinnamon stick 1
orange food color 1/2 tsp
biryani essence/ kewra essence 3 to 4 drops

kewra water 3 tbsp
method :
preparation :
- heat up milk in a pan add saffron strand and set aside .
to prepare tikka :
- take mutton , roasted cumin powder ginger garlic paste 2 tsp red chilly powder ,2 tbsp vinegar , salt , lemon juice , and papaya paste mix all the ingredients very well . cover and set in fridge for at least 6 hours to marinade .
- place all the pieces of mutton or beef on screwer .
- after that heat 2 tbsp oil in pan and place mutton screwer over it . cover and cook for 10 to 15 minutes . rotate screwer after 3 to 4 minutes so that mutton get cooked from all the sides evenly . or till mutton get cooked .
- remove and set aside .
- heat 1/2 cup of clarified butter ( ghee ) in a heavy bottom pan add bay leaf , whole peppercorn , cloves , cinnamon stick , ginger garlic paste and sauté for a while .
- add finely sliced onion and potato and saute till onion get nice golden color .
- add curd , red chilly powder , turmeric powder , coriander powder , garam masala powder , salt and cover and cook for 3 minutes then saute for 3 minutes . then add chopped tomatoes , chopped mint leaf , slices green chillies , soaked plums , and stir for a while.
- add layer of cooked rice over it .
- then put orange food color .then place cooked tikka mutton(mutton kebabs) over it .
- pour saffron soaked milk , and spread fried onion , pour drops of kewra water or essence/ biryani essence .
- cover and cook on slow flame for 10 minutes more .
- remove in a platter and serve with any salad , raita
