ingredients :
mutton 1 kg
curd 1 cup
salt to taste
yellow food color 1 tsp
saffron pinch
milk 1 cup
ginger garlic paste 1.5 tbsp.
garam masala 1 tsp
red chilly powder 1 tbsp.
coriander powder 1 tsp
turmeric powder 1 tsp
cumin powder 1 tsp
papaya paste 2 tbsp.
fresh chopped coriander 1 cup
fresh chopped mint leaf 1 cup
fried onion 1 cup
onion chopped 3
green chilly paste 1 tsp
green chilies 3 chopped
cinnamon stick 1 inches
green cardamom 4
clarified butter / ghee /oil 1 cup
lemon juice 5 tbsp.
chopped tomato 3
for rice :
basmati rice 3 cups ( soaked in water for 20 minutes )
whole pepper corns 10
black cumin 1/2 tsp
bay leaf 2

method :
preparation :
- boil one cup of milk in a pan and place it in a small bowl add saffron strands and set aside .
- in a heavy bottom pan take bay leaf ,whole pepper corns ,green cardamom salt , and black cumin ,soaked rice add 5 cup of water and cook for 3 to 4 minutes . remove 1/3 of rice in a bowl and set aside(ie 20% cooked rice ) . let the left rice cook till 70% done drain excess water and set aside .
for mutton gravy :
- in a mixing bowl take mutton pieces add ginger garlic paste , red chilly powder , coriander powder , turmeric powder , cumin powder , 1/2 cup , 2 tbsp. butter (ghee),green chilly paste , garam mala powder , mix well and set in fried for 2 hours to marinate , chopped coriander .
assembling :
- now melt 1/2 cup of clarified butter / oil in a pan .fry the chopped onion then add marinated mutton and stir well so that mutton get mixed with onion and oil . .
- then place chopped tomatoes over it , followed by fried potato's , sprinkle coriander leaf , mint leaf .
- after that place 20% cooked rice over it .then layer of 70 % cooked rice .
- on that sprinkle food color ,pour saffron dissolved milk , 2 tbsp. ghee, pour lemon juice cover and cook on high flame for about7 to 8 minutes . then on very slow flame for 20 -30 minutes.
- remove in a serving platter and garnish with left of fried onions . serve with raita . or with any salad .
