cooking time : 30 minutes preparation time : 20 minutes
ingredients :
nihari masala 4 tbsp
shank meat white leg
(boiled ) 1 kg
roasted flour 3 tbsp
water 1 cup
mutton stock 4 cup
ginger garlic paste 2 tbsp
oil 1 cup
salt to taste
for tempering :
onion 1 finely chopped
oil 1/2 cup
for making stock :
shank meat white leg 1 kg
salt 1 tsp
onion 1
ginger 1 inches
garlic 6 cloves crushed
water 6 cup
preparation :
- take mutton shank meat salt 6 cups of water , ginger , crushed garlic , and finely chopped onion in a cooker and cook it until mutton get cooked .
- drain the stock and leaf mutton and stock separately aside . remove ginger pieces .
- dry roast flour on pan continue sir while roasting on slow flame . remove it in a bowl and add 1 cup of water and make fine paste . remove all the lumps .and set aside .
method :
- heat up 1/2 cup of oil in a heavy bottom pan add 2 tbsp ginger garlic paste and saute for 1 minutes . add nihari masala , and boiled mutton piece nihari.and saute for 2 to 4 minutes.add 4 cup (mutton stock )yakhni , and prepared flour mixture stir for a while & cover and cook for 20 minutes on slow flame.
- remove in a serving platter .
- heat up left of oil add chopped onion and cook until onion turns golden color close the flame and add left of nihari masala and immediately pour the mixture over nihari platter .
- serve with naan .
