ingredients :
oil 2 tbsp
mustard seeds 1/2 tsp
curry leafs 6
mix vegetables chopped 1/2 cup
semolina 1 cup
idli molds 3
curd 1 cup
water 1/2 cup
tomato sliced 3
cashew nuts fried 12-15
fruit salt 1 tsp
coriander leafs 1 tbsp
salt to taste .
method :
- to prepare idlies heat oil in a pan add mustard seeds , curry leafs , semolina , vegetables and stir for 2 to 3 minutes . remove in a bowl and allow it to cool down .
- to steam idlies heat water in a pan .
- mix water & curd in semolina mixture and convert it into smooth batter .
- Greece idli molds with oil and place fried cashew , and tomato slice .
- in batter add fruit salt and mix well .
- place molds into boiling water and cover and cook on steam for 15 minutes .
- allow it to come on room temperature . remove in a platter and serve with any chutney , sauce
