Frozen coffee cubes

cooking time : 5 minutes
preparation time : 2 minutes  










ingredients :


coffee powder             3 tbsp
water                           2 cups

method :
  • in a sauce pan  boil the water add 3 tbsp coffee powder and allow it to get another boil so that coffee powder get fully dissolved in water . 
  • allow this to get on room temperature . 
  • then pour this into ice tray and place it in freezer . 
  • use it to make cold coffee , mocha frappé 

mocha frappé


cooking time : nil preparation time : 10 minutes 












ingredients :

vanilla ice-cream                1 cup ( 4 scoop)
ice-cubes                             5-8
sugar                                2 tbsp
milk                                1 cup
frozen coffee cubes              5-8
chocolate sauce                2 to 4 tbsp
whipped cream                  2 tbsp

method :
  • in a blender jar take frozen coffee cubes , ice cubes , vanilla ice cream , , sugar and milk . blend 
  • in a serving glass pour little bit of chocolate sauce , then pour the prepared mixture in it . 
  • after that add 1 tbsp whipped cream over it . then drizzle some chocolate sauce over it to garnish . 
  • serve immediately . 



spicy Qeema (dum ka keema ) BBQ mutton mince



cooking time : 20 minutes preparation time : 10 minutes 









ingredients :


mutton/beef mince                    500 grams 
ginger garlic paste                      1 tbsp
onion                                  2 finely chopped 
turmeric                                1 tsp
chopped green chilly                       4 
chopped red chilly/ button chilly               5
green coriander leaf                             2 tbsp
salt to taste 


oil                                                 1/2 cup
charcoal                                       1 (optional )


method :

  • in a pan take mince (keema ) and saute for 10 minutes till water starts drying add ginger garlic paste and oil , salt , and red chillies , green chillies and saute  for 10  to 15 minutes . 
  • in other pan heat 1 tbsp oil and sauté the onion and  when it get golden color add this into mutton being cooked . 
  • add 1/2 cup of water and cover and cook on slow flame for 10 minutes after cooking add lemon juice . 
  • remove in a serving bowl and serve with naan , bread , etc . 


BBQ method : 
if you want to BBQ it add hot charcoal in between the pan after cooking . drop 1 tsp of melted clarified butter over hot charcoal  then immediately cover the pan . (ie do not allow the smoke to go out ) 

spicy roasted chicken (murg musallam )

















cooking time : 20 -30 minutes
preparation time : 15 minutes 



ingredients :

green masala paste :
green coriander leaf               1/2 cup
ginger                                       1 inches
garlic                                    6 to 9 cloves 
green chillies                                 5 to 8 
lemon                                              1 


other :



skin less whole chicken                  1 
red chilly powder                       2 tsp
fried onion                                   1 cup
cashew (soaked in  warm water )              15
tomato                                         2 cups chopped 
garam masal powder                        1 tsp
coriander leaf                                2 tbsp
saffron                                    pinch 
green cardamom powder              1/2 tsp
salt to taste 
oil                                                      1/2 cup

method :
  • in a mixture jar take garlic cloves , ginger pieces , coriander leaf and green chilly , make fine paste , add few drops of water if required . add 1 lemon juice in the mixture . 
  • now take chicken in a large mixing bowl and rub the prepared mixture over the chicken . cover the bowl with plastic wrap and place it fridge for over night to get marinate .
  • now in a blender jar take fried onion , tomatoes, salt , red chilly powder , soaked cashews and blend well . do not over blend . 
  • heat up oil in a deep bottom pan and place the marinated chicken in it . fry it on both the side . till chicken changes color . this process may take 10 minutes . 
  • now add the tomato and cashew mixture in it . and sauté . and saute till the spices get cooked and oil comes out . for it for 10 minutes . 
  • now add , cardamom powder , saffron water , 1 cup water and cover and cook for 10 minutes on slow flame . 
  • remove in a serving platter and serve with naan . or with rice . 

papaya orange shake

cooking time : nil
preparation time : 10 minutes 











ingredients :


peeled and chopped papaya pieces              1 cup
orange juice                                 1 cup
lemon juice                                 3 tbsp
mint leaf                                   to garnish .
ice-cubes                                    6 to 8 cubes . 




method :
  • take orange cubes in a mixture jar and blend well . then add orange juice and lemon juice and blend . 

  • add ice cubes and again run the blender . 

  • remove in a serving platter and garnish with mint leaf . 
  • serve chilled .

method :
  • put all the ingredients in blender jar and make fine paste . 
  • remove in serving glass and garnish it with fancy straw &serve chilled . 

boat clubs cheese toast/ cheesy toast

method :
  • break 2 egg , salt , pepper powder , mustard powder , 2 tbsp white vinegar vinegar ,red chilly powder , 5 tbsp refined flour 

  • add cheddar cheese and again beat , add water if required .
  • add 1 tbsp baking powder and whisk again with electronic beater . 

  • with the help of spoon place this batter over one side of bread slices. 

  • then deep fry it in oil . when it starts getting light golden color . 

  • remove and cut into pieces . then again re- fry it in oil and remove in a serving platter and serve immediately .

spicy cashew chicken



cooking time : 20 minutes preparation time : 10 minutes 









ingredients :

skinless chicken                1 kg
red chilly powder           1 tsp
ginger garlic paste               1 tbsp
cashew paste                      1/2 cup
milk                                     1 cup
chopped chilly                                 3
cardamom                    5
salt to taste
cinnamon                               1 stick
ground star anise                       1 /2 tsp
yogurt                                 1 cup
chopped tomato                      2
ghee/ clarified butter                                       1 cup

method :

  • in a pan melt clarified butter , add chicken pieces and sauté til chicken changes the color , this gonna take about 5 to 8 minutes remove in a platter and set aside .
  • in a blender jar , 2 tsp green chilly tomato ,red chilly powder , ground star anise , yogurt , and cashew paste  blend all and make fine paste .
  • in the left over clarified butter in the same pan add cinnamon stick , green cardamom , and stir for a while then add prepared pate of tomato curd and cashew . 
  • add milk , green coriander , and cover and cook till oil comes out . 
  • remove in a platter and serve . 

kerala chicken curry


cooking time : 20-30 minutes
preparation time : 10 minutes 

ingredients :

skinless chicken pieces            1 kg
salt to taste 
coconut milk                      2 cups
chilly flakes                      1 tsp
fennel powder                    1 tsp
red chilly powder              1 tsp
whole black pepper             3 -7
garam masala powder          1/2 tsp
coriander powder                     1 tsp
grated ginger                             2 tbsp
chopped tomato                 4 -6
oil                                             1/2 cup
tamarind paste                            2 tbsp
green chillies                                 3




method :

  • in a bowl salt coconut milk ,chilly flakes , 1 tsp fennel powder ,1 tsp turmeric powder , add chicken mix well marinate all the ingredients well .

  • place on flame and cook the chicken in coconut milk . 



  • in another pan heat up oil add grated ginger . and sauté , ad blended tomato , red chilly powder , tamarind paste , coriander powder , whole black pepper , sauté .cook and sauté for 3 to 5 minutes . till oil comes out . 

  • add cooked chicken , garam masal powder , green chilly , coriander leaf and cover and cook for 5 to 7 minutes .

  • remove in serving platter and serve with plain rice , or with zeera rice .

method :
  • to prepare kesari shrikhand  whisk hung curd in a bowl add caster sugar , green cardamom , saffron water , cream and again whisk .
  • remove in a serving bowl and garnish it with saffron water , chopped pistachio , chopped roasted almonds .

chicken biryani (curd chicken biryani )

ingredients :

skin less chicken                         1 kg 
basmati rice                                       2 cups soaked in water for 30 minutes . 
gigar garlic paste                                       2 tbsp
curd                                              1 cup ( 375 grams)
tomato                                             2 chopped
fried onion                                    1 /2 cup
chopped onion                                 3 cups
chopped green coriander                    1 cup
mint leaf                                       1 cup
red chilly powder                        1 tsp
turmeric powder                           1 tsp
garam masala powder            1 tsp
cumin powder                          1 tsp
kewra water                           2 tbsp
food color                            pinch
salt to taste 
clarified butter                    1 cup
big cardamom                      2

ingredients :

preparation: 

  • in 4 cups of water add bay leaf , cloves , salt , and big cardamom and allow it to get a boil . 
  • add soaked rice cook it till it get 70 % cooked remove 1 cup rice then allow it to get 2 minutes more then drain the water from it .and set aside 
method :
  • in a pan heat up  1 cup clarified butter . add 3 onions slices and stir it till onion get nice golden color . remove it in a platter and set aside . 
  • in same pan with same clarified butter add ginger garlic paste and stir for a while after that add chicken pieces , and sauté for 5 to 8 minutes on high flame . add 1 tbsp lemon juice over it . 
  • slow down flame and add curd , chilly powder , 2 whole black cardamom , salt , green coriander , mint leaf , red chilly powder , 1 tbsp garam masala , chopped tomatoes , 1 tsp cumin powder , 1 tsp turmeric powder sauté for 10 minutes on slow flame . 
  • after that place a layer of fried onion .
  • then place 70 % cooked rice , followed by 80 % cooked rice . 
  • after that pour kewra essence( water ),food color  , 1 tbsp of clarified butter and fried onion on top layer .cover and cook for 5 minutes on high flame then slow down flame and cook  for 10 minutes .










honey mustard grilled chicken




cooking time : 10 minutes preparation time : 10 minutes










ingredients :


mustard paste                     2 tbsp 
chicken breast                 3 -4 
honey                              1/4  cup
mayonnaise                             2 tbsp

crushed pepper                         1 tbsp
lemon juice                                 1 tbsp
ginger garlic paste                          1 tbsp
Worcester  sauce                               1 tbsp
Hp sauce                                          1 tbsp
oil                                                   3 tbsp
salt to taste





method :
  • with the help of hemmer flatten the chicken breast . and set aside . 
  • in a large mixing bowl take mustard paste , honey , Worcester sauce , mayonnaise , brushed black pepper , lemon juice , ginger garlic paste , Hp sauce , cream and salt . mix all very well . then dip each chicken breast in it . 
  • add 2 tbsp oil in griller then place chicken . flip it after 3 to 4 minutes . do not over cook . ( cooking gonna take about 6 to 8 minutes only . )
  • serve hot .

method :
  • chicken breast 100 grams , season with salt , red chilly powder , 1 tsp tara garam masala, corn starch , refined flour , vinegar mix well .
  • now coat it with bread crumbs , set aside . 
  • heat up oil and deep fry the chicken breast for 3 to 5 minutes . 
assembling :
  • take burger buns cut it horizontally , spread mayonnaise, place lettuce leafs over it .  then put 1 tbsp cheese mayo over it . 

  • after that put fried chicken followed by cucumber slices , tomato slices onion slices , and ketchups, and cheese slices . then cover it with

  1. preparation :boil rice with cinnamon stick , whole pepper , 1 tsp vinegar ,and white cumin . cook till rice get cooked 80%. drain excess water and set aside .
  2. in kewra water add yellow food color mix well .
  3. in oil fry 4 onion till golden brown . 
  4. in a pressure cook boil mutton with water and pinch of salt . 
method :
  • in oil add grated ginger grated garlic add 6 to 9 red chillies , add onion brown  ,add white cumin ,cinnamon stick , green and black cardamom , add boiled mutton add 1 cup curd , add 5 to 8 green chillies . sauté for 3 minutes . 
assembling :
  • spread cooked rice over it . like a layer . then spread fried onion . 
  • after that add kewra water and food color . and 2 tbsp clarified butter . cover and cook on low flame for 10 minutes . 
  • remove and serve .

pink squirrel drink

lemon juice                          4 to 5 drops

method :
  • put orange juice , pineapple juice , lemon juice , and banana in a food processor and run it . 

  • add caster sugar , cream , ice-cubes , and food color  and run . remove in a serving glass and garnish with fancy straw . 


tadka Dal / daal fry



cooking time : 15 minutes preparation time : 10 minutes .










ingredients :


split yellow lentil ( ahrhar dal )              1 cup

  • in a cooker take 2 cups of water add yellow lentil (arhar daal ), turmeric powder , chopped green chilly , chopped tomatoes , salt to taste , cover and cook for 1 whistle . 
  • after that stir it well . so that all get mix well . 
  • in a different tempering pan heat oil add mustard seeds , garlic , curry leaf , and whole red chilly , when seeds start cracking pour this over cooked daal . 
  • serve .

peri peri chicken



cooking time : 15 minutes
preparation time : 10 minutes 












ingredients :

chicken legs skin removed                       4
vinegar                                                    2 tbsp
grated garlic                                         2 tsp
grated ginger                                           1 tsp
peri peri sauce                                        3 tbsp
salt                       to taste
red chilly flakes                                  2 tsp
oregano                                              1 tsp
oil                                                        2 tbsp


method :

  • make deep cuts over chicken pieces. 
  • take chicken legs , oregano , garlic grated , ginger , red chilly flakes , salt , vinegar , and peri peri sauce in a large mixing bowl . mix all together .
  • in a pan heat up 1 tbsp oil add chicken pieces and add few drops of water cover cook . 
  • flip it occasionally , grill it till chicken get nice golden color . 
  • remove in a platter and garnish it with peri peri sauce . and potato wedges .

vinegar                           2 tbsp
oil                                  2 tbsp
whole garlic cloves                    5 -8
oregano                         1/2 tsp
red chilly crushed                       1 tsp
mayonnaise/fresh cream                      1 cup 
peri peri chillies           5-6
salt to taste           

method :
  • in a pan heat up oil add whole garlic , add salt ,crushed red chillies , peri peri chilly add vinegar . mix well , add fresh fresh cream and allow it to get a boil . then close the flame and allow it to get on room temperature . 
  • remove the garlic clove and place the mixture in food processor and make fine paste . 
  • peri peri sauce is ready .
