stew mutton biryani


cooking time : 30 minutes
preparation time : 15 minutes 



ingredients :

boil mutton                       1 kg 
salt to taste 
fried onion                   1 cup
oil                                  1 cup
clarified butter                  2 tbsp
pepper corn                    10
grated ginger                       1 tbsp
grated garlic                           1 tbsp

whole black cardamom                        2 
whole green cardamom               3
cinnamon stick                              1 
bay leaf                                        1 
whole red chilly                                5 -8
whole green chilly                               5 -8
whole cumin                                      1 tsp
kewra water                                        2 tbsp
yellow food color                            pinch 
basmati rice                                       2 cups ( cooked 80 %)
curd                                                1 cup



preparations :
  1. preparation :boil rice with cinnamon stick , whole pepper , 1 tsp vinegar ,and white cumin . cook till rice get cooked 80%. drain excess water and set aside .
  2. in kewra water add yellow food color mix well .
  3. in oil fry 4 onion till golden brown . 
  4. in a pressure cook boil mutton with water and pinch of salt . 
method :
  • in oil add grated ginger grated garlic add 6 to 9 red chillies , add onion brown  ,add white cumin ,cinnamon stick , green and black cardamom , add boiled mutton add 1 cup curd , add 5 to 8 green chillies . sauté for 3 minutes . 
assembling :
  • spread cooked rice over it . like a layer . then spread fried onion . 
  • after that add kewra water and food color . and 2 tbsp clarified butter . cover and cook on low flame for 10 minutes . 
  • remove and serve .
