khaibari biryani


cooking time : 30-35 minutes preparation time : 10 minutes 









ingredients :


mutton                    1 kg 
salt to taste 
chillies powder              2 tbsp
ginger garlic paste       2 tsp
caraway seeds           1 tsp
coriander powder              2 tsp
garam masala                  1 tsp
green chilly paste               1 tsp
mace powder              1/4 tsp
nutmeg powder       1/4 tsp
curd                               1 cup
brown onion                      1/2 cups
saffron dissolved milk              1/4 cup
coriander leaf                         1/2 cup chopped 
mint leave                                 1/2 cup chopped 
raw papaya paste                      1/2 cup 
rice boiled ( 80%)                             2 cups
ghee /oil                                                  1 cup

method :
  • in a large mixing bowl take mutton , curd , chillies , ginger garlic paste , caraway seeds , garam masala , 1/2 brown onion , coriander powder , raw papaya paste and marinate it for 2 hours . 
  • now in heavy bottom pan pour 2 tbsp of ghee then place prepared marinated mutton and then spread mint leafs , left of fried onion , coriander leafs and mace and nutmeg powder , then place layer of rice . and pour saffron dissolved milk and left of ghee evenly . cover and cook on high flame for 5 minutes . then cook on slow flame for 20 minutes more . 
  • remove in a serving platter and enjoy with raita or with any salad
