mutton rogan josh



preparation time :Nil
cooking time   :30 minutes 
















ingredients :

mutton                   1 kg
onion                     1 kg finely sliced
bay leaf                  2
black cardamom    4
cinnamon stick        2 one inch each
ginger paste            1 tbsp
garlic paste              1 tbsp
cloves                      5 to 6
cooking oil                  3 tbsp
mustard oil                   2 tbsp
curd                          1 cup
ginger powder              1/2 tsp
red Kashmiri chilly powder    2 tbsp
fennel powder             1/2 tsp
fresh green coriander      1/2 cup to garnish



method :


  • in a deep pan heat up oil and cloves , bay leaf , black cardamom , cinnamon stick , and and add finely chopped onion sauté for 5 to 6 minutes till onion get nice golden brown color , avoid burning .


  • add ginger garlic paste and stir for one more minute.


  • add mutton pieces and keep sauté .

  • add 2 cup water and cook till the mutton cooked 1/3 .



  • and then take a small bowl add 2 tbsp red chilly powder and add 4 tbsp of water and make paste .


  • put this paste in mutton bowl . and add fennel powder , ginger powder  too


  • finely whisk the curd and add in mutton . cook for 10 more minutes to mutton get fully cooked .


  • remove in serving bowl garnish with cream and coriander leafs and enjoy it with naan and steam rice.
