aaloo baigan (potato bringle dish)


Preparation time : 10 minutes
Cooking time :  20 minutes 







ingredients :


brinjal                         3 cut-ed in cubes
potato                          2 pealed and chopped in one inch cubes
tomato                          2 finely  chopped
cumin powder                1/2 tsp
green chilly                        4
ginger garlic paste              1 tsp
onion                               1 chopped in cubes
oil                                     2 tbsp
salt to taste
black pepper powder           1/2 tsp
fresh coriander                      1/2 cup






method :





  • heat up pan . add ginger garlic paste and sauté for 30 sec .
  • add chopped onion . and soon as onion turning light brown add potato and sauté for 2 minutes
  • add brinjal and sauté for minute .
  • add salt green chilly and cumin powder tomato and  half cup water . cover the pan and cook for 10 minutes on very slow flame .
  • open the pan and sauté , check vegetable if cooked add fresh coriander and remove in serving plate .
  • ready to serve .
